How to Make Easy Milk Bread Loaf

  • Milk Bread Loaf - Many of you probably already know how to bake your own bread. Just sharing during this lockdown period, well…not only this lockdown period but I bake this almost every week for my own weekly consumption. I prefer no egg in this bread loaf as I feel without bread the bread remain very soft for few days as compared to one with egg which gets dried very fast after a day. Hope you’re inspired to bake bread at home from now. Enjoy!
    Storage Tips: Make sure your bread is completely cooled, to avoid condensation, before storing it. Condensation will cause the cake to be mouldy. Keep it air tight container for the first 2 days, in dry area. Store in fridge after 2 days. You can either steam it or heat it on a pan to get back the original bread texture.

    Ingredients:
    loaf pan size: 9x5x3 inch
    375g (2 ½ cup) bread flour
    6g (2 tsp) yeast
    15g (1 tbsp) sugar
    1 tsp salt
    240ml (1 cup) whole milk, blood temperature
    20g (1 ½ tbsp) unsalted butter
    Instructions:
    1. In a mixer bowl, add all the dry ingredients. Give it a quick mix in low speed.
    2. Gradually add in the milk. Increase to medium speed to combined or until the dough pull away from the sides.
    3. Add in the butter. You can spread the butter all over the dough, or just dump in the butter and let the mixer works on the mixing. Increase to high speed and continue mixing for 3-4 min until the dough comes together. You can mix for another 1-2 min if you want to ensure a soft texture of the bread.
    4. Transfer the dough into a greased bowl. Shape the dough into a ball so that the surface looks smooth and not wrinkle later. Grease also the dough surface to prevent from sticking onto the bowl later. Cover the bowl with cling film or a tea towel. Let the dough sit for about 1 hour or until the size doubled.
    5. After 1 hour, place the dough on the work surface Roll out the dough twice, second time after rolling it into a log again. (refer to the video) This is to push out all the air pockets.
    6. Place the dough into a loaf pan. Press the dough hard onto the pan to further push out the air pockets.
    7. Cover the dough with a tea towel. Let the dough sit for about 45min - 1 hour or until size doubled.
    8. After about 45min - 1 hour, you’ll notice a dome. The dough has risen well, that’s good to go.
    9. Bake in preheated oven at at 180°C/355°F for 30 min.
    10. Remove bread loaf from the pan once it comes out from the oven. Do not keep the bread in the pan as it will cause condensation and that will cause bread to be mouldy.
    11. Let it cool completely on the rack before slicing.
    12. Bread is ready to slice and serve.

    1. Can I use all-purpose flour?
    Technically you can. However, please understand that bread flour has more gluten and as a result, you'll get softer and lighter bread texture. All-purpose flour has less gluten, as a result, you'll get heavier and denser bread texture. It will work too, just a matter of how soft you want your bread.

      My dough was too hard with the mentioned measurement of milk .. does it have to be soft or hard

      @@umarahtanweer1351 it's better to be soft, not hard. Even if it's a bit tacky to your hands it's fine, but not too sticky. Your room humidity can sometimes affect the dough to be too dry or too wet. The measurement I provided is minimum your need to use. If still dry, add warm milk one tablespoon at a time and continue mixing, give it a few second to see how the dough is working, if still dry add another tablespoons. That will do fine

      Gracious Treatz yeah I have tried your mocha cake too and the batter was quite thick too. I think it’s maybe because of city where I live is too dry.
      So that means I can add more milk until the dough gets soft.

    I just wanted to let you know, I made this absolutely amazing bread. But I have to admit, I goofed I forgot to add the butter when I was supposed to. So I entered it after the fact, and mixed it in . And I have to say it looks like I did ok... Plus I had doubled the bread recipe. It is the softness Dough, I have ever put my hands on.

      @@gracioustreatz7231 I have beautiful memories of my beloved grandmother baking bread. She made large round loaves and she would get us as children to 'knock the dough back' after its first rising. The bread baking filled her house with that delicious yeasty aroma, and that first slice of buttered crust is perhaps my first memory of food excellence. She passed away in 1974 yet my siblings and I remember her love and wisdom every day.

    What size tin are you using? I’ve bought several different sizes and they’re either too narrow or not deep enough, and it does make a difference with the recipe you use.

    I'm so glad you have made this correction. As I was so confused. When your applying the butter to the mixer hook, I thought to myself. There is no way that is 1 1/2 cups of butter 🤔. The second time I made this milk bread recipe I noticed that 20 grams. So I wieghed the butter . Perfect!
    This has become our go to bread, which I make 3-4s

    Hi Fiona. You must have read my mind. I was wishing you to make bread, and here it is. Oh if only i could make bread like that, i would be in heaven. My cakes usually turn out ok, but bread i absolutely cannot do. I've tried so many recipes over the years and i always end up throwing it out for the birds. I'm no quitter but i just know it won't turn out right. My mum was an excellent bread maker. She always made by hand, i have a kitchenaid so makes it easy. I will try your recipe which looks wonderful as always. But i need to get some bread flour which is impossible here right now. Soon as i get some i will give it a go and let you know.
