Recipe:
Burnt Ends
- Start with the point end of a brisket. Short ribs & chuck roast works as well
- Cover in a thin layer of oil and season heavily with a coarse steak rub or salt & pepper
- Smoke (or bake) between 225-275F for 4-6 hours until a dark crust forms. Spray with water if exterior gets too dry
- Pull and wrap in tin foil or butcher paper. Add a cup of braising liquid like beer, broth or water
- Continue smoking until internal temp of ~205F internal, probe should pass through like butter
- Rest for 30 mins, slice ~3 inch squares. Top with BBQ sauce, add to pan, bake for 30 min or until exterior becomes tacky
Candied Bacon
- Cook a pack of bacon on medium heat until it just starts to get crispy, pour out most of oil
- Add 1-3 tablespoons of maple syrup and 1-3 tablespoons of brown sugar depending on how sweet you like it
- Continue cooking another 3-5 minutes, mixing constantly to make sure sugars don’t burn
- Let cool and chop
The Immortal Hot Pocket
- Roll out puff pastry
- Layer an aged cheese like asiago, candied bacon, 1 burnt end, cheese, candied bacon
- Wrap with egg yolk to help seal and paint with more egg yolk
- Bake at 400F for 8-12 min until it starts to become golden brown. Remove, paint with more egg yolk, top with candied bacon, bake another 2-3 minutes
- Remove and enjoy!
