Dry aging drastically improves tenderness & flavor and today we really got creative with our experiments. Wine & Herb as well as the Sour Patch Kids Dry Age. I’d be lying if I said I wasn’t shocked by the results!
There’s one kid in my comment section who has asked me to make a sour patch kid dry aged steak almost every day for a year… This is proof that persistence pays off.

I've always heard people who dry age beef that they use the outer crust for burgers. Yet I've never seen anyone make a vid on it. I'd honestly love to see what's done with the leftovers as someone who wants to dry age but is on a budget

The sour patch kids actually probably helped to keep mold off. Sugar absorbs water really well and the citric acid may have helped by raising the ph so that stuff couldn’t take root as easily.

You should dry age a steak in chicken or beef stock.
Can I confess something? I haven't had a bite of red meat since I was maybe 3 years old (I'm 22) because I physically cant stand the texture, been working my way up to be able to eat some fish and now I can stomach hotdogs (do they even count, lol?) But I've been binging your videos after being basically vegan for most of my life (I'm allergic to milk 😭), thanks for posting and making me really jealous about what I'm missing out on!

Max, I know this is an old video but have you ever aged a steak with koji? I used to know someone that worked in the high end restaurant business in the Cleveland, Ohio area and Jeremy Umansky runs a deli and teaches classes on cooking and aging with koji. He's an absolute mad scientist genius of a guy, I recommend looking him up.
Koji speeds up the aging process on meats, to my knowledge you can finely age a koji steak in about 48 hrs. All of this really made me fascinated with mycology and have been studying it now for several years. Koji is an amazing aspect of it, all on its own.

I use the exact same avocado oil, it's very good and use it for everything that requires that type of oil
