  • If I see a good deal on steaks at the supermarket, I can’t help myself from making the purchase. The problem is that I’ve accumulated an absurd amount of meat and all the freezers at my house (and my parents house) are completely full…. After doing some digging in these freezers I came across the two steaks in this video, and it was time to put two year frozen steaks to the test. This was genuinely eye opening!

    As someone who hunts and freezes deer, I can tell you that the freezer works magic. I’ve had 5+ year frozen steaks and tenderloin that tastes perfect if frozen properly

    My dad when he was in the USSR army in mid 80’S told that they ate frozen meat that was dated from 50’s. No vacuume, no bags, only wrapped in cheese cloth. He said nothing was wrong, it tasted a bit off, but he is alive and well

      Yeah and my dad used to have to walk 10 miles to school barefoot with no shoes in 4 feet of snow every day and it was uphill going both ways to and from school. Busses were only for the nerds in his day.

    I really appreciated this video because I have a few meats that have been sitting in the freezer(poorly packed as well) and I'm a bit of a Nance when it comes to old stuff, but this gives me confidence. I mean I've definitely done it before but seeing someone make 2 year old steak and enjoy it is reaffirming. Damn smoke alarm

    When i was in university (2006), I ate meats that were frozen for more than 20 years with proper seal. The meats were stored in bunker freezer since the late 70s / early 80s and people sort of forgot about them.
    The beef and lamb were very pale and looked more like chicken. The colors were very pale pink (raw chicken meat color) to pretty much white (cooked chicken meat color).
    Surprisingly, they were still edible. So dont worry eating frozen meat. You will be fine.

    I just ate a steak from an Antelope backstrap I killed 2 years ago. It was vacuum sealed and very fresh when frozen. I sous vide at 135 for 2.5 hrs then quick seared it in a cast iron and it was absolutely delicious! Nothing wrong with freezing meat for an extended period of time but 2 years is about my limit and if I know I have too much game to eat within 2 years I give it to friends/family.

    I have had venison get freezer burned. In the past we just threw it out, but a couple of years ago a chef/butcher I got to know told me that when that happens, unwrap the meat and then put it in a sink of cold water and let it thaw in there. It works, the meat rehydrated by being in the cold water while it thawed. It tasted delicious, just like fresh frozen meat.

    As a person that hunts and fishes, I have several freezers with meat in them. And some can get forgotten about. It happens. Certain meats last longer and taste fine when frozen for extended periods. Birds and fish do not. Also learned a lot over the years. Even the cheapest of food sealers will help you extend the life of the meat. If the seal isn't broken, it'll be fine even 3 or 4 years later. Broken seal, eat it as soon as possible. Will it kill you? No. That's the meat you throw into soups and chilis. Noone will know the difference. Lol.

    i found an 6 year old tbone that i dry aged for 40 days a few years ago in my freezer. i defroozed it for a month in my walk in cooler, which is at 1 degress celsius for a month, just didnt have time to cook it. made it for new years eve 2019/20. nobody was the wiser, but i found it to be a bit drier and a bit less tasty then usual, but every other guest was non the wiser.

    butchers tip, after uve frozen ur meat spray it with mist water and freeze again to give it a water shell that helps prevent freezer burn for long term storage beyond 6 months. wrapping in butchers paper after will also significantly help as the water and paper creates a perfect barrier for the 6m-5Y storage mark. vacuum seal is only good for about 6m-2y and really is only useful for items ull be gently packing and not really moving ever.
    i recommend butchers paper over vacuum seal 9/10 times

      freezer burn is also just freeze drying something slowly so u can also use the water spray technique on already burned meat and refreeze it to reconstitute that spot before eventually thawing to eat.

    Great video. Just recently I have grilled a quality Angus porterhouse that had been frozen for couple years tightly sealed in cryovac bag.. The tenderloin part tasted delicious but the strip loin part had sort of an off flavor, perhaps freeze burn flavor. My guess is that water particles crystallized differently in each of the muscles that created that effect.

    What you pointed to was not freezer burn, Max, it was ice. Meat gets freezer burnt, not water. If the meat under that ice was damaged, that meat was freezer burnt, not the ice. Evidence of ice does not necessarily automatically mean freezer burn.

    The most important thing about frozen meat isn't about how long it was frozen, rather, how many times it was thawed and then re-frozen, as well as how fast the freezing process is. A meat frozen slowly has a much larger chance of developing internal ice crystals, which would ruin the flavour considerably, while a quickly frozen mean (think flash freezing) will be near-perfectly intact for decades to come. Similarly, incorrect thawing makes water seep into the meat itself, making it stale, so if you want to thaw frozen meat, especially if you want to re-freeze it again, use an air fryer set to low.

    I've only noticed freezer burn on roasts. Usually it results in a spot with a different texture, but taste wise it has never been off.

    I buy beef from a local farmer, usually 1/4 or 1/2 steer. I found a 3 year old roast in the back of my freezer. It had no freezer burn, and tasted perfectly delicious. I am shocked that the freezer burn didn't compromise the taste or texture, but the time frozen seems completely normal to me.

    I vacuum seal everything, keeps everything clean and fresh. I have a few steaks that I’ve forgotten about as well as some leftover cookouts that’s been sitting in the freezer, whenever I pull them out and sous vide them, it’s like they were made yesterday. Best investment I’ve made since I buy a lot in bulk.

    I am a food safety expert. In a deep freeze there is a tiny tiny bit of bacteria in meat that can survive, but it is pretty much harmless. They say that they put the 'year shelf life frozen' on turkeys and chickens because some of the tissue does break down and it loses alot of it's natural flavor. I would assume that the same would apply to beef, but it my training...and the curriculum in the class I teach does not address that specifically, so I don't know for sure. Now frozen and deep frozen are very different. You don't want to eat a 2 year old steak that has been in the regular freezer above your fridge. Now when it comes to bread that has already been cooked, there is a very specific parasite that incases itself in a protective shell and can actually thrive in an extended amount of time in a deep freeze. Just remember, rare chicken tastes best. Tastes like my favorite fishy icecream....salmon vanilla.

    The fat content of those steaks are definitely what saved them. I had some venison steaks in my freezer for about 2 years not vacuum sealed but packed pretty well still. And It didn't seem like they got freezer burn I had the packages they were in wrapped in several shopping bags. However when I Unwrapped them and took them out it was like I cut them after cooking without resting almost all of the juices cam out of the meat. They were still very edible I just had to cook them in heaps of butter but I do feel that they would have been much better fresh.

      In my experience leaner cuts always last way longer in the freezer. Fat is what goes "bad" (rancid tasting) first

    According to the usda you can freeze raw meats forever as long as it never gets above 0°F and is stored in a container. Freezer burn is fine however it will affect quality.

    Frozen or not Frozen doesn't matter because the meat is generally frozen before it ever reaches you (same with fish).
    Over time if not vacuum packed (Or heavily wrapped) then yes the quality of the meat will degrade because water will evaporate from the meat (that is what freezer burn is)

    Lifter meat is called "rib cap" here. We dry age it for 30 days and use it for burgers as it's 50-50 meat and fat.

    Drop the temp on it well, pat it dry if necessary, a decent dry age on it then trimmed helps. Vacuum pack it with the good stuff and a tight wrap you can probably keep one in a deep freezer for at least three years.

    Love your videos Max. Without ever trying this experiment, I’d hypothesize the thinner the meat, the less likely to have a desirable outcome the longer the steak is frozen. But with thick cuts like yours, even still I’m shocked by those results. Happy 2023 🎉

    yeah meat if sealed properly can basicly keep forever in the freezer. i have some bacon in the freezer dating back to the bush era. tastes just fine

    If your freezer has something like “anti icing technology” as a selling point that just means it lets the inside thaw out periodically, most of the time that’s how your stuff gets freezer burn

    In all fairness, other than being a little dry, and the surface tasting a little off, they should taste fine. You definately wouldn't notice with these meats for 3 reasons. One, they are extremely thick cuts, so all "funk" would be on the surface. Two, these are extremely high flavor cuts, so it would take allot to remove the flavor. Three, You didn't really eat the part that was worse. If you did it with a cheap cut, you would definately notice. All in all, I have eaten tons of freezer burnt meat. Sometimes you just have to drown the flavor .

    This gives me confidence to buy more meat at a time , I usualy only buy 1-2 whole loins and it lasts about a month and if they are frozen longer than 2 months I cook them and feed them to the dog.
    I will be freezing up to a year now with proper vacuum sealing

    Freezing is actually better for most cheaper steaks. I find they’re usually too thin to get a good crust without overcooking but freezing (maybe not completely) helps keep the inside juicy.

    Frozen may affect the quality of the meat, but only if it was thawed and re-freeze. Otherwise, it is still safe to eat, and evidently, still delicious.

    If the wagyu a5 was dry aged for 100 days, wouldn’t the pellicle need to be trimmed from the two faces of the steak? That’s probably why it was so intensely funky.

    As aguy who freezes stake for more than 6 months no problem a stake can be frozen up to 6 years you just need a good freezer doesn’t matter if or not vacuum sealed

    Being a single guy with a smaller appetite, I lean on my freezer. Food waste has dropped to almost nothing now. I've forgotten stuff in the bottom of my freezer for a few years and it usually cooks up pretty good.
