    Having dry aged a brisket, the trimmings are amazing when stewed into chili. With the buffalo sauce, it could only be better.

      Years! I did a frozen steak video recently and after 2 years I didn't notice any difference. Key is making sure the seal is intact.

    During the taste test you should have your sister and that guy who stole the meat with the tongs over there sitting beside you to do taste test and impressions with you. Always nice to get more opinions and confirmations 👍

    You should make a video on cheap vs expensive whiskey dry aging. A blantons or weller may make a difference compared to a makers mark. (maybe fireball lmao)

    Can you try to dry age a rib roast but wrap it in fat to preserve the meat? Maybe pork belly or something similar.

    Hey Max what if you took the bourbon and maple syrup and let it come to a simmer on the stove and then inject it into the meat. It should have more of a caramelized flavor. I really like your experiments.

    hey max, is it possible to marble with something like gelatin instead of wagyu tallow? sort of like deli meats that have gelatin in them, like head cheese.
    I'm asking because gelatin would be a delicious marbling but much healthier than straight up fat

    While this is entertaining, I wonder what is the risk of bacteria growth. I thought the dry age is "safe" because we don't introduce bacteria inside the meat. (Similar to how you could have issue with under cooking meat that has been tenderized with needles).
