1 Onion, Chopped
3 TBS Butter
1- 13 oz can Evaporated Milk
2 Cans Cream of Chicken Soup
2- 4 oz cans Chopped Green Chiles
2 1/2 - 3 Cups Chopped, Cooked Chicken
Or
3- 5 Oz Cans of Chicken
2 Cups Shredded Cheddar Cheese
12 Corn Tortillas
Set oven to 350. In a large pan, melt butter and saute onions until softened. Add evaporated milk and soups, stir until smooth. Add chiles and chicken and stir until everything is incorporated. Grease a 9x14 baking dish and line the bottom with 6 tortillas. Pour half of the chicken mixture over and spread evenly. Sprinkle evenly with 1 cup of the cheese. Repeat another layer in same order, ending with cheese. Cover with foil and bake 45 minutes. Let sit for about 10 minutes before cutting.

I wish my Mom would have made this dish Jill! The closest we came to this growing up in rural southern Ohio was boxed tacos LOL!! So glad my military life took me out for culinary adventures! You were talking about being a kid in the 70s. I grew up way out in the country, no street lights, no street corners. My sisters and I were up in the hills, hiking, climbing trees, you name it! Lots of exercise, though now I look back on it, I am amazed we didn't end up killing ourselves!

Ah, the 70s were when I learned to cook. We lived in the suburbs of Green Bay, Wisconsin, and both of my parents worked. When I was a freshman in high school, Mom would put out the non-refrigerated ingredients for dinner and leave me a recipe. I'd get home from school and start dinner while my younger sisters watched Gilligan's Island. I'd often get dinner going, then Mom would get home and finish it. Casseroles (including a couple similar to this one), chop suey, scalloped potatoes with ham, chicken and dumplings, Spanish rice, chili, porcupine meatballs, etc. ... I made them all and still make many of them for my family. Mom's gone now, but my daughters still call to ask for the old recipes that I cooked for them when they were growing up.

Vegetarian here: you can make a great veggie version of this with cream of mushroom soup and chopped mushrooms. So good! And, yes, I remember the 70's vividly. My mother made recipes like this, too. Her kitchen had wall paper that was shiny chrome with lemon yellow. There was a furry lemon yellow shag rug on the kitchen floor. (No, I am not kidding--you did not want to drop anything messy on that because it was so hard to clean.) But the very best of all is that we had a Frigidaire Flair stove (you know, the one like they had in Bewitched--the stove top closes like a drawer under the oven). Oh, I still miss that stove! Once you've had an oven door that opens up (Delorean-style), you will never want to deal with an oven door that opens down. One of these days, I want a Frigidaire Flair of my own, if I would ever be lucky enough to find one.

I’ve been making enchilada casserole with homemade red sauce. I’m interested in trying the one with creamy green chilies. I need to find a replacement for the canned soup. A lot of convenience foods aren’t healthy. I was born in the late 60’s. We ate a lot on TV dinners because both my parents worked. My mom learned Mexican cooking from a neighbor that became a lifelong friend. My mom was scared of spicy things so she wouldn’t have made this. The best thing about the 70’s was the wacky Americana for the bicentennial. Everyone really got into it. Considering what the country went through during civil rights movement and Vietnam, the bicentennial was a wonderful coming together of people who loved our country (even though we all disagreed). I was in grammar school and it was wonderful.

Wow that creamy tortilla chicken casserole looks amazing but I first have to comment on yes I can kitchen CanOpener looks adorable fun and very useful in the kitchen perfect for this recipe with all the cans you had to open everything’s better with a can of cream of chicken. And I love the flashback pictures of the kitchens in the 70s that was fabulous but not as great as this tortilla chicken creamy casserole
You will love this, it's very low on heat and is just fabulous! Of course, 70s not super healthy, but o so good!

Looks delicious! I was born in 1960, so the 70's were wonderful! I remember everybody having luau parties. I grew up and still live in Los Angeles and they were such a big deal here. Could you please post some of those recipes. Thank you.

Just finished the last slab of enchilada casserole Angelia made~ Your casserole looks delicious and what a treat! These are so great for work-lunches and they freeze so well. Wallpaper on the ceiling? Oh my goodness....I am smiling so big now. Those kitchens remind me of my friend's houses. All our stuff was "avocado green", remember that? Seventies recall: My friend and I used to go to Sears at the mall, the TV section, and comandeer the big TV they had hooked up to PONG. We thought that game was "so cool"!

I grew up on a farm and certainly did didn’t come in when the street lights come on, more like when the chickens went to roost, I got married in 1973.

In New Mexico, we make a variation of this with sour cream instead of milk (I use plain Greek yogurt), one can each of chicken and mushroom soup, and of course, locally grown and roasted hatch green chile! It is a staple dish in almost every home and New Mexican restaurant served with pinto beans. To die for! Thanks for sharing this recipe :)
