Nothing is better than pickled beets. In PA we would put hard boiled eggs with the beets as a special treat. This was very common among the Amish and Mennonite communities in South Central PA. God Bless
My mama was born & raised in the Central PA Amish country (Mifflin County) and made us pickled beet eggs while we were growing up, using an old family recipe. Now my adult nephew uses that recipe to make pickled beet eggs for our annual trips to Cannon Beach, Oregon - YUM!
As a little girl I never liked beets. For the same reason your girls didn’t, they taste like dirt smells! Lol Now I just adore them. I’ve never grown or pickled beets, but would like to. Our garden had been on the smaller side so I was selective about what I grew because I wanted to make sure I had my most favorite things. Now, my husband extended our garden so I’ll be able to try out more varieties. Beets will be one of them! Thanks so much for showing us your method!
😍I can put a dent in a few quarts of pickled beets!!!😜👍🏻 💞My grandmother always had pickled beets, pickled okra, bread and butter pickles, and many other veggies...these 3 are the first thing I went to get from the cellar when we got there followed by gathering eggs and the garden goodies before supper...I'm glad I am able to can things like she did and have ventured to jalapenos 😉
All I can do is repeat my comment from your green bean episode! I could (and did) eat Grandma's pickled beets and canned green beans until I was plumb foundered! And she always saved a few extra jars of beets cause she knew I loved them. I really think that watching you folks just before bed time produces a calming effect. So much better than the "news". Hope to see ya again tomorrow night!
I love beets, they always make me think of my grandmother and large dinners when on the farm here in Minnesota. I use a similar recipe to make mine, I just add the beets into the brine and cook them in it. I can eat the whole jar in one sitting by myself.
I love beets fixed any way. I don’t think they taste like dirt. My grandma never grew beets either but my aunt did. She got me hooked on them as a child staying the summer and winter holidays. I then begged my mother to try some and she got addicted to them so we ended up growing them in our kitchen garden. Thanks for the memories. I love your show.
Lot's of folks don't like beets, pickled or otherwise. I love pickled beets!❤ I only pickle a few jars every year now. Some people won't even try them. I have a friend who likes them & my little 2nd cousin Daniel loves them, he's 6'5" tall, 18 years old & just started college.
U did it one more time. I love pickled beets & the great memories of my Dad’s family. Only thing missing would be some pinto beans, sausage, or slice of ham, biscuits, homemade butter & sorghum molasses. I need these wonderful memories to keep me going during this lockdown & isolation.
Going to try my luck. I love pickled beets now , although I didn’t growing up in West Virginia. I’ve been making sauerkraut this summer and am loving it. Thanks for that one, too.
I use the same recipe and everybody loves them. Walmart has the same jar that you use for kraut but in a smaller size. Holds one dozen hard boiled eggs and one quart of pickled beets. We always have a jar in the fridge. I think that's a Pennsylvania thing.
I've never been a fan of beets, pickled or otherwise, but my mom absolutely loves them. She gets a jar from the local vegetable stand in my hometown every week because she goes through them so fast!
I love pickled beets. When I boil them I do how Granny does with her green beans ( I bring them to a boil and simmer for a couple of minutes, drain and refill with water). Also, I think Lutz beets are a beet that has a touch of sweetness and does not taste like dirt.
There is just me so I started saving the juice from my sweet pickles. I will then get a can of beets & put in the juice with garlic cloves. Perfect. I do peaches too. Sounds lazy, but it works. I love the color. They are full of minerals from the earth. Good to see you again. I love these visits.
My Mom would can about 50 quarts of pickled beets every summer. We had pinto beans almost every night during the winter, and nothing goes better with a piping hot plate of pinto beans than some pickled beets, onions, and buttered cornbread! Thanks for the great video :)
Oh my goodness never heard ANYone else say they tasted like dirt! So loved to hear it-I said it as you did -just knew the girls were going to say the same! Theres something about beets, that earthy taste feels like you NEED to eat them and so good! Another thumbs up really nice video. 🙏
Nice job with the pickled beets, Tipper. They look delicious! There's a certain feeling of security that comes from putting-up a pantry-full of fresh food, isn't there? And in these uncertain times, that's not a bad idea. Thanks for posting!
@@CelebratingAppalachia Most importantly, you are passing those skills and values on to your daughters. Kudos for that! They will be well served by that knowledge.
I've love beets. I never really think about their "earthy" flavor because next to their sweetness that is their great charm. My mother always boiled them and served them buttered. I always roast them, dice them and toss them with a vinaigrette. Now, I'm going to have to try this simple recipe.
A German aunt of mine would save the beet juice in a 2 quart jar and add hard boiled eggs and keep in the fridge. Sliced, these beet eggs were great in a spinach salad or regular salad.
Love pickled beets! My mom’s recipe included cloves. She didn’t let the beets grow too big before harvesting them because she didn’t like the texture of the big ones. The small ones were left whole, and the bigger ones were quartered.
I used to eat beets when I was a kid. Pa would make pickled beets and we would look like a scene from a horror film when eating them. Then for whatever reason, he quit growing them. I was grown before I had any more. I think that I would like this recipe. I like the sweet ones. Thanks!
Beans, greens, grits, and beet pickles is hands down my favorite fall to spring dinner. I use the grits in the beans as a lazy man's version of beans and cornbread. Toss in 53g of grits for each serving of beans anywhere from 10 - 45 minutes before serving depending on how much bite you want left in the finished product. Leftovers set up and make for a nice savory slice of fried mush the day after. And very little goes better on stewed greens than pickle juice.
I have always loved pickled beets and my Mom used to can them for us. This sounds like a simple recipe. If I can find beets I think I will try this. Thank you for the tutorial. I love your canning videos.
Love it. Thank you Missus Tipper. I pickled my beets as well. I prefer to use a vinegar blend of white and apple cider vinegars. Going to be delicious come this fall and winter!
I make them that way too! The only difference is I leave about 2 inches of the stems so that they don't bleed out as much. They still peel really easy and the top stems just peel off too! 😉
My mom made pickled beets the very same way as this lady did. I loved them and here is something she used to make, Beet Eggs, boil some eggs and put them in the beet juice when most of the beets were eaten, leave several days, up to a week in the frig, and the eggs would turn purple clear to the yolk, even the yolk was kind of purple and so tasty.
Lovely video. Thank you so much. I absolutely love beets in any form, but I'm the only person in my family who does. Like your family, my family says they taste like dirt. Well, I tell them, I've never tasted such delicious dirt in my life. Thank you again for the video.
I've only eaten them pickled and I love love pickled beets!! I've been trying to find my aunt's recipe Since I've never made them. It seems like she put cloves in but I can't remember. Mostly I've only had commercially Jarred pickle beets, but they don't taste like dirt to me. Could be because they're commercially done & junk they put in there covers it up so you'll buy them. Lol.
Thank you for this video. I happened to have beets i was going to roast but you changed my mind. I am going to pickle my beets. Thank you for your time and work. God bless you and yours!
Love beets and your canning process. I usually boil and peel them, slice them or quarter them, and then add a sliced sweet onion. Sometimes I even add some feta cheese. Wow is that delicious, too. I've heard but have never tested that golden beets are a little less "earthy" tasting than red beets.
I remember my mom canning pickled beets when we were kids and how much we loved them. You remind me of my mom in appearance. Thank you for this recipe and sharing your knowledge of canning.
Awesome.great and simple teaching. You make it look so easy.we always had beets growing up.Now,Ibuy from store.very good with green beans. Thanks Tipper for another winning video. If I had a family at home I would can still.looks so comforting.🤗🤗🤗👏👏👏God Bless family♥️
I just ate some pickled beets yesterday. I am the only one in my family who will eat them. My mother and dad really liked them, but I did not really eat them growing up, however, I do like beets now.Yesterday, my husband made a face while watching me eat those pickled beets from the salad bar and said he liked them roasted but not like that. I told him he didn't know what he was missing : ) tastes like dirt but they are GOOD! and I still like them too (LOL)! I do not have a canner and have never put up any food like this. I keep watching videos to try to learn how, you make it look pretty easy to do. I am looking for a canner that I can use on my glass top stove and when I find one that will work I am going to try this recipe. Thank you for the video showing how you make these.
I love pickled beets! They do have a little taste of dirt I guess but I really enjoy beets. I also use the brine to make pickled eggs after we eat the beats.
I’m planting beets as part of my fall garden. My wife and sons like them. I’ve never cared that much for them. But again you taught me something. I didn’t no you can roast them. I enjoy the video!
I can remember helping my Granny and my Mom can beets when I was young, they would cook them with the skins on and then dump them in the sink in cold water, after a few minutes of cooling, we would squeeze them just a little and the skins would just slide off, it was really fun to help do that!...but out of all that fun, my favorite part was eating them!! Lol
I LOVE beets! Whenever we had beets for supper when I was growing up, it was always grocery store canned beets and I'd finish them off before we started on the dishes. As I said, we always had canned beets from the grocery store so the first time I ever ate roasted beets, I thought I had heaven on a fork! So much better than store bought canned ones! Funny story: when I was a really little boy, I "helped" my grandma can stuff and once I asked her why they call it "canning" when they use jars? Why don't they call it "jarring"??
No doubt your beets look sooo good. My Mom pretty much pickled her beets the same way and we’re they delicious...oh yes! Just love watching you cook; reminds me of my Dear Mom. Thank you
Pickled beets , and shucked beans and fresh onion, and cornbread is one of my fondest memories! And of course saving th the beet juice for coloring the pickled eggs!
I boil sweet potatoes in skin for easy pealing. I think they are more flavorful. Make them with brown sugar, butter and cinnamon. So good. We love beets as well. Very pretty beets
I never liked beets cooked until I boiled them with the greens still attached. It changes the flavor significantly. I boil them for 45 min then the peels and greens come off easily. Then I pickle them. Love your channel.
As an American expat I loved your video and your lovely accent made it even better. You made me laugh out loud with the "they taste like dirt, I always said mud but having not eaten a lot of either I suppose it's the same. When I was a kid and the only way I had ever had them was pickled but can take them both ways now. Will definitely check out your book. I live in Asia now so have had to learn to make all the things I miss from scratch.
Thank You for sharing this with us I miss my Momma's homemade pickled beets so much. This recipe really reminded me of how we would can or pickle almost everything from the field. God Bless you! Sending much love from Appalachia, East Tennessee 💖✨️
We enjoy pickled beets, I always use my grandmother's recipe, I always leave a couple inches of the stems on the beets and remove them after boiling them, that way they don't loose their deep purple color. Thank you for the video.
I love pickled beets! I haven't had them for years. Since watching all your canning videos I believe I'm going to try my hand at some jellys and jams. I've asked my mother in law to teach me the jam shes one who makes it every other year or so. Or when a sister visits from Ireland. She's one of 17. I'm so looking forward to doing this with her. Im hoping to give them out to family as Christmas presents.I think I'll add the pickled beets too. Thanks for inspiring me to do this.
I LOVE homemade pickled beets! That stuff from a can in the store doesn't even compare to homemade. I miss having property that's large enough that I can have a garden area!
Tip: I save mayonnaise lids and peanut butter lids or any plastic lids hst fits a canning jar. After they are sealed I too date the lid , remove the "ring" closure and replace it with a plastic recycled lid cover. Gor those new to canning with few supplies yet, this is a nice way to reuse your rings and keep your canned stuffs covered. I just like my jars with this method , on my shelf. Look kind of pretty with the different colored lids and O feel good that I kept a bit of plastic out of the landfills. I love Sweet Pickeled beets with the Vidalia onions added. Makes your Holiday table do festive with their lovely magenta color amongst all the other goods offered.I love pickled peaches too. Mama Always did the first fruits for the pickling. Said the flavor was fresher. But In the Winter time , it's so Wonderful to pop that sealed lid and smell and taste last Summer's bounty.. I'm so happy many young people are learning how to " put up" food by your tutorials. Happy canning All.💜
Hi Tipper, I am a canner. I have canned beets. They are so yummy and I love the dirt flavor. One time I made beet jam w strawberry jello. It was delicious. Thanks for showing me how you pickle. Karla in Cali.

As someone from both E Pa and Appalachia Pa I fully agree to this!
My family is from Western PA and I love the eggs more than the beets, but the beets are delicious too.

I grew up with pickled beets and eggs. I'm Polish and we loved them.

That's wonderful Stacey-you can do it! And they do make great Christmas gifts 🙂
Ty Tipper ❤💜
I LOVE homemade pickled beets! That stuff from a can in the store doesn't even compare to homemade.
I miss having property that's large enough that I can have a garden area!
Love pickled beets ,always have …so good .
Happy canning All.💜
Thank you Donna 😀
I love pickled beets ❤. Haven't been successful growing beets yet though....
Thank you for this video Tipper. My Mama used to pickle beets and I loved when she would open a jar for Sunday dinner! Yumm! Be well!
Love pickled beets, they are one of my favorite pickles. I also make what my Gran called red root relish which is so good with cold meats and salad.

I love pickled beets and I love to drink the juice after the beets have been eaten. The juice tastes better than Kool Ade.
