    I love picked hard boiled eggs, done in the same pickle juice. I like brown sugar
    It makes the whited bright purple with the yolk
    So good and can add some thick cut onions

    Thank you both so much! I am of German & English heritage, born and raised in Central Texas. My German grandmother (Oma) used to make these pickled beets but not canned, just set for a week in the fridge. Thank you for sharing the canning of them. We love them! God Bless you both!

    I have started steaming my whole beets with the skin still on them. Thus way they do not loose any flavor at all. The skins will not slip off but peeling is super easy with sharp knife. I like we keeping all the flavor I can in my veggies by steaming. Love pickled beets.

    I grew up in the same neck of the woods. I also do salt water fermented Asian style pickling for beets and other root crops. If you like salt and sour you'll love this variation

      That's sounds good....I'm so stuck on this style of beets that it would be hard for me to try them any other way.

      Well until I lived overseas and had beets roasted I didn't think I could like them other ways too but I do now. Sometimes I like to make a few batches of sweet or spiced beets though

    I peel, cube and cook the beets. With that juice I cook down into a syrup and use for pancakes. I doesn't bleed too much of the color out of them.

    Thank you for the wonderful recipe! I didn’t have whole cloves on hand so I used 1/2 teaspoon of Ball Pickling Spice instead. Turned out great!

    I want to do this too LOL I love pickled beets but didn't know how to do them thank you I didn't even know how to peel them. I really like when Jason asks questions it is questions in my head to ask. Thank you Jason.

      This recipe is really one that means a lot to me. When I eat these beets it brings back so many memories of my childhood. They are the best. Jason said he started asking the question because if they were questions he had then other people probably had the same questions.

      no need to pressure can these....water bath canning works best with them

    I can't speak on beets but this was very informative. I haven't been around canning since I moved away from home. It's amazing all the stuff you have to help with it. Thanks as always for sharing. That recipe could've ended up lost but hopefully, it will continue on for many more generations. ❤️

      Thank you so much. This really is the best pickled beet recipe I have ever seen. I completely agree that it would have probably gotten lost forever. I think that is the reason my mom gave it to me is because she knew I would keep it going.

      We haven't tried the pickled ones yet, but I tasted them after they were cooked and they were good but not us good as Detroit Dark Red. That is really our beet of choice.

      Let it go a couple weeks. You could go earlier but to ensure the best flavor wait a couple weeks, pop a jar in the fridge for a day then enjoy.

      You lose color, flavor and nutrients cutting them up before cooking. Best to steam or boil with a couple inches of the tops so they don't bleed out. They peel easier after cooking than trying to do it before cooking.

    How can those beets be healthy with all that sugar . There’s no need for any sugar all you need is salt ,vinegar and water that’s it I have been doing this for years and they always came out perfect

    I add the beautiful red water you cooked the beets in to the brine instead of plain water. There is so much sugar and vitamins and color in the beet water it's a shame to waste it.

      @@artofcreationhomestead I have done this for many years. I just make sure the beets are clean so the juice doesn't taste like dirt. I also make beet juice jelly with it using grape jelly powder. Blessings to you all.

      No they will not explode. They can take it. I do a ton of canning every year and have never had a jar explode.

      Honestly....however many you want. It's kinda up to you. Beets are different sizes and it will take different amounts based on their size. We never count/weigh our beets when we harvest them. Angela just makes this brine in this quantity and we fill jars with beets til we run out of beets

    That plate is supposed to be on the bottom of the canner to keep the jars off the bottom. This is in the Kerr, Ball, and every other canning book. The plate keeps the jars from the possible exploding from hot spots of the burners of the stove. Your taking a great risk putting the plate on the top instead of where it belongs on the bottom. Its the safety plate for the jars. Please put it on the bottom where it belongs.

      With this canner there is a rack in the bottom that the jars sit on. This canning also has the plate that goes on top. I am doing it completely right. No risk here if you know this type of canner. The top plate will only fit on top. It will not fit on the bottom.

      There was a rack in the bottom already to keep the jars up off the bottom of the canner. Did you see it? Go back and watch you'll see it.
