- Preserving the harvest is very important when you are homesteading and trying to grow and raise most of the food for your family. We had a very successful spring harvest of beets and want to preserve it for the winter and the remainder of the year. Sarah shows the first half of the spring beet harvest, how to skin the beets, and how to pressure can them. Grace, our teenage daughter, makes an appearance and helps out. What an amazing feeling to preserve the bounty of the harvest!

Adding to the good advice you got from The Neals' Homestead: If you cook them a bit longer, the peels will literally slip right off...easily. Crazy easily. They will still can fine. Also, if you leave about an inch to an inch and a half of the stems instead of cutting so close to the beetroot, they won't bleed nearly as badly. Beets are my ABSOLUTE FAVORITE from the garden. I have been canning, pickling, Harvarding them, julienne-ing them and just plain buttering them for over 50 years! Good job !

Love beets steamed till soft and eat just like that it has sweet flavor that I enjoy the most. However, the beets harvest time is right about to start what a lot of other vegetables coming out and I found my self having too much fresh beets to eat.
I'd love to canning beets but I'm afraid that if the flavor might get lost in process.
How would you like between the fresh cooked beets and canned beets?
I'd love to hear from someone that have a lot of experience.

Sarah cook your beets until they are almost fork tender, the skins will slip right off including the stem end and often the root will just break away. If you can work really quickly they’ll still be hot going into the jar.
My mom taught me 2c sugar, 2c water, 2c vinegar 1 tsp pickling salt makes a perfect brine for pickled beets 😋😋😋
Sarah, Idea: I always add white vinegar, sugar, salt, and cloves, etc. to the jar liquid. The Ukrainian way is so darn addictive, that I can easily polish off one whole jar, but you’ll have to fight me for it. Serve either cold or hot as a side to your plate. So good for the body. Academy award worthy: This is your BEST video ever. Has to do with your bubbly, perky, funny girl presentation. 😬
This takes me back! I remember when I started canning, I was obsessed, canning whatever I could get my hands on. A mailer came announcing the county fair, so of course I entered a bunch of canned stuff. I won the Kerr AND the Ball award, as well as best in show. I won best in show with my red beets! Unless you can them you have no idea the work that goes into them. I assume the judges must have had some idea!

I have used a pair of gloves that are for exfoliating your skin in the bath, works great for rubbing off the beet skin after you boil them like you did.
Hey, everyone! This works great! Those skins were off in no time. I held the beets in one hands and used my extra exfoliating gloves to take off the beet skins. Worked like a charm! (Of course, that glove is now dedicated to beet/vegetable peeling...)
I'm 34 years old, and have been gardening and canning for a long time. I never tasted a beet. Until this winter. I have 8 rows planted this springs. Can't wait.

Privacy issue. But if you watch Kevin's video of "when the wife's away", you can see a little of it. Also video of this way worked for years too.
If the skin doesn't just slip off it would help to cook longer. It always takes longer to cook than I think it should. Also, I don't cut off the stem end when peeling. If they are cooked long enough the stem end should slip off also. Doing all that peeling in a water filled sink is easier than with a cutting board. I was once where you are, learning how to do all this stuff. Keep up the good work!

I agree with The Neals' Homestead. I cook my beets until they are fork tender. I have no problem with skinning the beets then. Also I leave on several inches of the stem to help prevent the beets from bleeding out. I just do as my grandmother did as I was growing up. I agree with your daughter. I too think cooked beets smells like dirt. I do agree with you on what canning means. Keep up the hard work! Very cute video!
I agree that they should be tender when poked with the fork. However, I never put in cold water as it seems that the skins reset on to the beets. If you just put them in the sink, let cool on their own and when still warm (able to handle)cut the top and tail off the beets and the skins will simply slip off. Make a fist around the beet and push it out the top of the hand...the skinned beet squirts out of the fist. That many beets should take about 15 minutes max to skin out.
We always leave nearly 3 inches of stem on the beets or they will "bleed" out and your beets will be pink after canning.
Absolutely! It's almost fun and takes a lot less time. Thankfully, I had a mother & grandmother who shared their skills & shortcuts, when I was quite young.
outside, turkey fryer, 2 coolers one with ice water and one with water. leave the mess out side. I even use the slicer to slice the beets into bowl outside. clean up is a snap and no staining.
We had neighbors who had a "summer kitchen" outside and it was the best. Heat, mess, stains all stayed outside. Really a good idea.

You guys are so great, the only thing I can think of to help is to suggest wearing your beret, maybe even backwards, when you film in the evening with overhead lighting. Hey Sarah I know that this video is old but I just found you guy's. I saw other but they just don't make me feel as if I learning from my friend and sometimes I can even watch them the confidence level isn't there. So don't stop teaching those of us who need instructions. You guy's are great. Thanks praying for you and your family

You can also roast them which avoids all the water mess. You just fill up whatever flat pans you have , put on the beets and then cover the pans with foil or something that will keep the steam in. When done, let them cool and peal. At this point I am usually so sick of beets that they end up on the dinner table and the rest I toss in the freezer to can later when one is mostly inside in the winter. Unless I am going to can outside to keep the heat out of the house, doing canning in the winter also helps to heat your house. I am also stingy with foil. I use the heavy duty kind and when you take it off, turn it over and wipe the inside down and set aside to dry and then put away for future use. This works better than the thin kind. It doesn't rip easily and I am usually able to get several uses out of it before it dies and goes to recycle.

Just subbed :) I'm about to embark on canning our first ever beet harvest as well! Just wanted to add another great reason for removing your rings is food safety. If you happen to have a jar go bad from a weak seal, you will be able to know right away. Keeping the rings on can present a false seal. Blessings to your family from ours! Ps. I'm also a reformed ex-corporate girl (3 yrs now). Would never go back for anything!

I really love how you guys not only share how to grow the vegetables, but also what to do with them! My husband loves beets and we have a beautiful harvest of "peppermint beets" you know, the ones that look like candy canes inside? Cant eat them all at once, so I looked you up to learn how to can them. You guys are one of my favorites.

If you can keep the red water that you boiled the beets in and can with it as it has so many vitamins in it and it keeps the beets a beautiful color
This was a suggestion from a dear friend of mine. I now have beautiful beets as I use the water from cooking the beets, straining it through a cloth to keep it clear.

For the those who don't know, Ball is now selling lids that make your jars good for 18 month. I assume they have been out for awhile. I have just purchased mine for the first time in Australia. I haven't canned for awhile due to health reasons.

when you are canning and need to cool the vegetable down for pealing , I put a couple gallons of water in my frig. the night before it helps to cool better. I don't have a lot of Ice to use. Love watching you r channel,
I have been following you since the pandemic and enjoy your current stuff very much. I am growing beets for the first time and needed to see the commitment it takes to process them. 6+ years later, Oct 26th, 2023. Lol we have 6" of snow and still falling here in western ND. So, I'm canning fall harvest beets. 60lbs today. Total brain fart, on preasure canning method. Had to find this video. ❤
We used to eat the beat greens when I was little. Loved them cooked like swiss chard with some garlic and a little butter...
also, there are a lot of nutrients in the water. you may want to cool it down and put it in the compost.

I love to watch your videos. I grew up on a farm in Mississippi so I know how to do most of the things y'all do. I still have a good sized garden and can and freeze all the harvest. I do share a lot of produce with my son and daughter in law.

Well done on the beets Sarah!! Also you leave it to cool down some so that the jars do not siphon (when you get a jar that was filled at the beginning and not when you get them out). Same thing goes with a water bath canner! We are doing the same thing as you and Kevin. Husband has retired and I am almost there... Been canning forever it seems... lol Keep up the great work!

Love your videos, Sarah. Just a hint, I pressure cook my beets, separated into sizes of course, works really quick and easy. Leave a little bit more stem to minimize bleed. I love fresh, frozen, and pickled beets yummmmmmy

Hi Good Show , Im 72 and my mother back in the olden days peeled bushels of beets with a crank apple peeler, give it a try .
I love beets
Not sure if you read these or not but I thought I could pass on some tips for your beet peeling. It takes only 5 seconds per beet even if your picky. Use a paper towel. Just hold the beet in a paper towel and rub. The skin comes off in a hurry. I just canned 8 pints of pickled beets. Took 10 minutes to to peel and cut and pack in the jars with the syrup and lids. There no need to cut off the root or top either. It just rubs right off.
Best tip I ever got and hopefully your daughter would enjoy the beet peeling waaaaayyyy better.. lol

Hi. I have watched your videos and enjoy seeing you and your family and how you do things on your homestead. By the way I hope you are feeling better and taking care of yourself since your surgery. Just don't overdo it. My Grandma says it will come back to bite you in the butt later on. LOL. She was a card. I learned alot from watching her and my Mom. I just ordered the Ball New Canning Book and want to compare it to the older book. Do you ever can beets with onions? I haven't yet but I tasted some years ago and they were so good.
