I love pickled beets and have been canning for years. My mom’s recipe has a doubled layered cheese cloth with 2 Tbsp of pickling spice, then tie the bag up tightly and let it cook in the brine. The flavour is amazing. Cut the tail of the cloth shorter. If you find you have little strings in the brine, don’t worry about it. You can always take a small hand sieve and dip them out, otherwise they are harmless and in the end you see them.
Your video takes me right back to my childhood helping my mom do the canning every summer. Skinning the beets after they were cooked was always my job and I loved the feeling of the skins coming off.
I rode my bike in Ragbrai, it was fabulous. Your Iowa is so beautiful. I would live there too. I saw sun rise over the corn fields at early am. Your so lucky to be there with your farm, and flowers. Love it all.

Hey, from Michigan here (Downriver Detroit Area). Just canned a number of items, corn, green beans, dill, bread & butter and sweet pickles. Everything was done perfect. I do replace my lids every use though for safety. I also put my jars in a 180 degree oven to keep them warm while I am waiting for brine and canned to heat up. Would love to do a collab. ❤🎉
You said you've been canning about 30 years. I don't know how old you are but I always thought in late 20's. You look young. My mom wold make pickled eggs and beets. I liked the beets not the eggs.I do enjoy your videos.

I've never tasted a good tasting beet, yes they taste like the earth, to me like dirt. 🤣 I haven't had them since I was s child. I'm willing to taste some but only if they don't taste like a mud pie. I believe beets are high in nitrogen? which is supposed to be good for your blood? am I correct? I don't know. my doctor advised low nitrogen content as it is believed to be a trigger for headaches and migraines. love the method of canning, love learning, love Kaleb and the infinite knowledge. I'm going to try some beets, maybe my adult tastes have changed.

Question… most water bath canning recipes suggest 30-35min in the final boiling water bath for the actual canning, but some others (including yours) say 10 min… we used the 10 min like yours because I didn’t read the others and ‘official’ ones (canning company books etc)… so, since you are still doing video (LOL) 10 minutes must have worked, but why the large discrepancy in times? There is quite a difference between 10 and 30-35min (safety).
I would say based on the site’s guidelines I will be using 30-35min next time. The canning guide updates periodically and at some point was updated to 30 minutes. This could cook the beets to be more soft but it is the guide that should be followed. As to why you see various times around the internet, not everyone uses the USDA guide as they should.

Ok this was exactly how I use to do my pickling except the sugar then I saw another beet pickle videos-of yours it’s sugar and different vinegars & changed it , now you’re back to my own original recipe!? Am confused🤷♀️ Also in my culture my mom pickles everything uncooked & beets also raw cut in slices with vinegar salt garlic brine!

You re-use the rings..really. Isnt this a NO NO? But this would make sense as back in our grandmothers day such rings surely were not widely available and stuff was recycled properly..
You wrapped in foil and baked at 400 yet? Skin peels right off without water taking away the good stuff . I can about 200 lbs of beets once a week and add jalapenos . I make a product called Beet n cowboy z . It's jalapeno cowboy candy that I added the beets too and use honey instead of sugar

My beets were up out of the dirt a little-they look a little brown-dry-on top. Are they still ok, meaning worth going through the effort or not?

Beet juice, stain is very fragile. A drop of dish soap easily cleans hands and utensils.

Just a suggestion, perhaps you could boil a pot of water and just dip each rim in?
That would make it easier, but it's not a safe canning practice. The entire jar needs to be submerged in the water bath to safely can the contents.
