    Those Look GREAT !!! In 1976 on 8-23-76 I did 90 pints of pickled beets love my beets !!! I had washed them in the wheel barrel a few times to save on water !!! Then woke on up to the thought of canning them !!! Got going and did them all !!! Had a Handsome Little Young Son then at the hospital !!! So was glad I had that taken care of !!! Your carrots look great also never canned carrots before !!! Amish canner was to die for there !!! It would help on out in the long run with children & husband to feed !!!

    Pickled beets are my favourite thing to can too! They just look amazing. My secret ingredient which makes them taste out of this world is malt vinegar (not brown vinegar - that's just white vinegar with brown food colouring, you must use malt vinegar)... I replace half the white vinegar with malt vinegar - just wait till you try it! I can share my whole recipe if anyone is interested, it's the best beets I've ever tasted and everyone who has tried them says they're the best they've had... my elderly neighbor even drinks the brine straight from the jar (but he's a little strange haha).

      OK, I'm Australian so I apologise if some of the terms I use are different to American but I'll do my best... (also we use metric so you'll have to convert). I always do a great big batch but this is the basic recipe for a small batch.
      4 Large beets
      3 quarters of a cup water
      3 quarters of a cup white vinegar
      3 quarters cup malt vinegar
      3 quarters cup sugar
      Half teaspoon whole black peppercorns
      1 Bay leaf
      2 whole Cloves
      Half teaspoon yellow Mustard seeds
      Half a Cinnamon stick
      1 quarter teaspoon salt
      (Plus a few of each spice extra for each jar - you can cut up the cinnamon stick for this after its been boiled in the brine if you want as youd only need a tiny bit of cinnamon in each jar or it may get a bit strong)
      1. Cook beets whole (boil or bake)- I bake them, throw them in a deep baking pan with a tablespoon or two of water and cover tightly with foil, bake at 180 degrees Celsius for 40-60 minutes, depending on their size.
      2. Cool beets and remove skin, they just slide off easily.
      3. Cut beets into cubes/slices whatever suits you.
      4. Place all the other ingredients into a saucepan and bring to boil, then lower heat and allow to simmer for 5 minutes to infuse the brine with those nice spices.
      5. Pack the beets into sterilised jars and cover with the brine. And add a few of each spice to each jar before canning. A few peppercorns, Mustard seeds, Cloves and a bay leaf in each jar. Helps to infuse the flavours a bit more and looks lovely.
      6. De-bubble if canning.
      I water bath can them but you can put in refrigerator - but I leave them for at least 3 weeks before eating to really infuse the flavours into the beets.
      The malt vinegar just gives it this real deepness of flavour that I can't really describe, you'll just have to try it and see!
      I hope you enjoy them.

      ​@randpmagnuson6711 I put them in my gigantic 50Litre waterbath canner in cold water, so it takes a while to come to the boil, maybe around 45 minutes. Then when it's at a full rolling boil I start timing. It's 10 minutes for half litre jars and 15 minutes for 1 litre jars. (Again, sorry you'll have to convert it those volumes).
      Oh and I forgot to add to the recipe to de-bubble before canning.
      I hope everyone likes my recipe, hardly anyone does canning over here in Australia so I've not got anyone to share it with - people are happy to eat them but not so keen on the making them themselves.

    I love beets but have never cooked fresh ones. Always though they made a big mess, but seeing you leave the tops on when cooking was an eye opener.

    Oh! The memories.
    My Nanny made these. I didn't care which way she made them either. She would serve them hot or cold, depending on who was at the table eating. There were a few times that I got caught in the fruit seller eating various HOME CANNED foods with bottle opener and a spoon. 😊 Sure do miss those days.

    They turned out great! I’m planning on canning beets later this week. Your carrots look fantastic too! I made brined sweet dill pickles this earlier this week and they turned out great. A lot of steps but worth it. This was my first making brined pickles and I’m always nervous trying a new technique. Gonna have to break down and buy an Amish canner. Definitely need that for beans and potatoes!

    Best canning recipe. I added a 1/2tsp pickling spice per pint and cut the sugar to 3/4 cup. wow! Compared to our local fruit shack, they are equal or better.YUM! And good for you!

    Your beach look amazing I love canning beets they’re so simple and I’m always so pleased I love the color they look so good in my pantry, personally I do not care for beats but my son and I have a niece that can go through a jar each in one week so this is who I can them for.
    Just cleaned up my garden and now fixing to plant more beats for the fall.👌

    I rinse my garden produce (beets, carrots, etc) in a milk crate in my rain barrel. Just swish them around and it removes the vast majority of the dirt without it going down your drain. the milk crate has handles to hold onto and holes for the water to swish through.

    I can beets too the way my mom canned them. You don't need to put them in the canner. You bring the brine to a rolling boil, put your beets in the jars pour your brine over beets debubble add your lids and rings set on a towel the lids will pop and seal. You then put away. Please don't say they are not good doing it that way, we put vinegar, sugar, salt, cinnamon bring to a boil and they will seal. I have some in my pantry I did two years ago and they are wonderfil!

      I didn't boil the glass jar after canning the dill pickles to keep them crispy. But I boiled the brine as well.

    They look great! I canned all mine in half pints or 8oz jars this year. I would guess yours are on the sweet side with that much sugar, but I am sure they will be great.

    Looks great! I was so glad to see you peel the beets the easy way - so many people I see chill them in ice water and then fight to get skins off. Interesting recipe - I might have to try it. However, that would mean I would have to wash my beets first! LOL. And how did you keep things so clean....I usually end up with beet stain everywhere!! LOL. Good job!

      Replace vinegar with water. That is what I have heard on other RUclips channels.

      Anything pickled is canned or processed with vinegar & herbs. Just water I’m assuming is just canned beets. I’m not sure if she added anything to them when she was boiling the beets on the stovetop, I was about to go back to see if I had missed if she added anything other than water. I know the recipe I have has sugar, I can’t recall the herbs, or if there’s vinegar. This will be my first time using it, I just have a small amount to can.

    I use my instant pot to steam the beets, then plung in cold water and slip the skins. Could also do it in my 23 court presto stove top. If you cook your beets completely through, are they mushy after the canning process??

    I think you should try a mix of White Vinegar, Malt Vinegar & Cider Vinegar. I have used this mix , mainly because I prefer Malt Vinegar on my fries than Ketchup. Personal taste really..

    Hi from another PA canner...I add cloves to mine but I'm not sure if ur recipe is same as mine, I mix mine by taste, lol but I definitely like cloves IN mine and I quarter mine too, and NEVER add salt to the brine because it makes the beets bleed out and get pale in canning process!

      Beet eggs are so easy! Just hard boil some eggs, peel them, and put them in the jar of pickled beet juice and let them sit in the fridge for a day or so before eating them. If the brine doesn't come to the top to cover all the eggs, you could make more brine as instructed in the video, but you can add water in place of the beet juice.

    I don't understand how some similar recipes process for 10/15 min and others 30/35 min. I don't want to overcook them. Why is this so confusing for beets? Your recipe seems perfect and simple which is what I want.

      You will need to experiment with your different sweeteners.
      I would make up a batch just like she did minus the sugar. Then take a 1/2 a cup of the brine and add your sweetener and see what you think taste wise.
      Once you figure out which one you prefer, sweetener wise; slowly add your sweetener to the rest of the brine. Then make a note of how much you used so you can be ready for the next batch.

    Kinda sorta jealous of your Amish/Mennonite stores. I miss those. It's hard to grow veggies and fruit here in my part of Las Vegas, NV. Not many people do that here but we do have farmers markets with people from surrounding states with produce to buy. Love pickled beets. I prefer them on the vinegary side too. I've considered buying the Amish made canners from Lehmans.
