- Опубликовано: 9 фев 2025
- Ingredients
10 pounds fresh small beets, stems removed
2 cups white sugar
1 tablespoon pickling salt
1 quart white vinegar
1/4 cup whole cloves
Directions
Place beets in a large stockpot with water to cover. Bring to a boil, and cook until tender, about 15-30 minutes depending on the size of the beets. If beets are large, cut them into quarters. Drain, reserving 2 cups of the beet water, cool and peel.
Sterilize jars and lids by immersing in boiling water for at least 10 minutes. Fill each jar with beets and add several whole cloves to each jar.
In a large saucepan, combine the sugar, beet water, vinegar, and pickling salt. Bring to a rapid boil. Pour the hot brine over the beets in the jars, and seal lids.
Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 40 minutes.

Pickled beets is the very first thing I ever canned in a 4-H project in 1973 and still my most requested thing I can.
We just finished 24 pints pickled beets. So yummy. I will be my nephews favorite Aunt.
I just love how ruby red cooked beets look! Thanks for showing this.
What I needed. Finally got beets to pick and can this year. Success.
Great job, the video was clear,a bit humorous, informative, thumbs up
I don't care to eat beets but the husband loves them. They are one of my favorite things to can, and they are so pretty sitting on the shelf in the pantry. And just knowing how much the husband likes them, makes me feel good about myself. Canning is so rewarding. Thanks for sharing. Love your channel. Great job my friend!!!
my wife tried your pickled beet recipe and fell in love with it now she is on a mission to find enough beets to can to last her a year. thank you so much for sharing this recipe and have a blessed day. 😀
I'm so glad to hear this!
@@SuttonsDaze my wife joyce is now following you on you tube and she said to tell you she will be trying lots of your recipes so please keep up the great work on recipes 😀
Nice step by step Leisa! Bet its nice to have all those beets on the pantry shelf! Lucky Phil!
I love pickled beets, yum, yum. They look so good, even thought this is a couple of years old video, great job thanks for sharing.
I love pickled beets. It's the only way I'll eat them but sometimes I can't get beets so I cheat & turn canned beets into pickles. They're just as good when it's the middle of winter. I just keep them in fridge for a treat.
Just loved the video and it's awesome that you put the recipe and directions wish others would do the same it's alot easier just to print off and put in cookbook...lol
When I was growing up, Mom canned a lot of pickled beets. I wasn't a big fan, but you make me want to try them again.
Do it!!! ((((hugs))))
I love pickled beets!!! In fact its the only way that I will eat beets LMAO . . . I'M ON TEAM PHIL! (someone has to tell that man to hide those precious pickled beets!!!) . . . Great job Leisa XOXO Happy Canning
Thanks! ((((hugs))))
They look great. Thank you for sharing. I love pickled beets.
Nice batch of beets. Thank you for sharing.
Hey girl, I tried your recipe for pickled beets today. I canned 24 pints and 12 quarts. Had a little bit left over so I ate those. Wow! Those are really good so, in the future I’m using YOUR recipe. Really delicious! Thanks for going through the steps for us!
Yay!!!! Another canning video. I tried canning pickled beets two years ago, and it didn't turn out so well. I like the way you do it, and it makes me want to give it another try. Thanks for sharing your canning techniques.
Thanks! ((((hugs))))
Girl you just whooped but on that canning session!!!!!!!!!!!!!!!!!!!!😍😍😍😍
It's beginning to whoop my butt.....haha I'm beat. 2 bushels of beans and 2 bushels of beets, 40 lbs of taters and what did I forget? All within a couple weeks. WHEW!
Pace yourself, woman! None of us, here, are 16 anymore...lol : )
i realize I'm pretty randomly asking but do anybody know of a good site to stream new series online ?
@Armani Kayden i would suggest FlixZone. You can find it on google :)
@Jakob Caiden Yup, have been using Flixzone for months myself :D
I LOVE THIS RECIPE! THANK YOU FOR SHARING.
Pickled Beets are my favorite 😋
Nice work! That's goodness! Saving your video👍
Thanks! ((((hugs))))
I call it the crown of the fruit. Thanks for the vid. Very helpful.
Well done. I like your personality.
I love beets but do a little different since I do not like cloves. I use for the brine this ratio - 1 cup sugar, 1 cup Apple cider vinegar and 1 cup water. Heat to boiling and pour over beets in jars. Process as you did in water bath. This makes a sweet/tangy pickle. yummy!
Sounds good
Thank you for doing this video. I'm sure glad you did this. I'm sure going to try this one.
I'm so glad!!
I am sooo with you on the bigger stove!! I would love to have a 6 burner 😍 I can't get 2 scanners to fit on my stove because of the knobs on the back
I love pickled beets....looks great. Shelby
I don't like beets but as I can things others like I am developing a taste for things I don't. Will be trying this one
I love pickled beets 😋
Thanks for sharing!
Love Beets pickled…
Beautiful looking ❤thank you for your video xxx😊
Oh man I love pickle beets. I grow them every year just for this purpose. :)
Thanks! ((((hugs))))
Can't wait to try this, haven't had pickled beets in forever. Looks easy to do too, thanks to your video. Just a quick dumb question... Is picking salt different from canning salt? Oh, I really enjoy all your canning videos too. Such a joy to watch..😊
Thanks! Picking salt doesn't clump 🙄
Love Beets cannot wait to try them
I know this is a couple years old, but the method stays the same. Yum...I love pickled beets. I've canned beet relish...one of my favorites. (:
Phil LOVES pickled beets. I have to do more this year :-)
Leisa, thank you for being so gracious to acknowledge my comments. You're a very busy lady, and I don't expect you to respond every time, but it is very nice of you. (: @@SuttonsDaze
@@lemoncrinckles If I don't respond, you'll stop leaving comments.....haha
Suttons Daze 😀
Mom used to make these when I was a kid and I hated them. Fast forward to now and I am not sure. For a test I bought a jar and have them chilling in the fridge. If I love them now, this video will be great to follow along for the process. I sure remember having pink hands helping Mom slip the beet skins. My stove has the same configuration of burners as yours and it is ridiculous. All the back large burner is good for is rotating out with the front one to keep the wear even.
Love pickled beets!!!
Thank you!
Great job! Thank you!
LOVE beets, hubby hates them. Blessings.
Thanks! ((((hugs))))
Love this video even though it's a couple years old but I love it love it love it one question though can I do this with can ned beets it's really hard to find fresh where I live
Cloves good job most people don't know enough to know that.
I know this ain't the place to put this, but wasn't sure how to reach you. Have you ever made pickle radishes? And if so, can you make them and water bath can them like you do beets, or pickles to be shelf stable til you open them? And can you do a video doing it? Thank you...😊 Learning so much from your videos.. keep up the awesome job.❤️
Denise,
I have pickled radishes and plan on doing it again when they begin producing. I think this is a great idea and will make sure to do a video on it. Thanks!
Beautiful!🤗
Omgi love these picked beets
Thank you for sharing I love pickled beets so how can I wiggle a jar from you I accept bribes it's a good bowler set for yourself for canning jar's thanks for sharing you are a blessing to me
I'm considering placing the cloves and anything else that is hard, in a piece of cheesecloth and tie in a knot. Hopefully, it will prevent the having to separate them out later.
I really enjoy COLD pickled beets in salads; regular beets just don't do it for me. I may just try your recipe and try this as my first attempt at canning. (fingers crossed). : )
That would be so cool!! You can do it!
I noticed a jar has a rusty cap. Does this matter? You taught this so efficiently. Thank you.
Thanks Sooooo much!
I always dye a few things when I do beets lol
Me too!
I love growing beets as much as I love pickling them and eating them I do not cut them perfect either I quarter some slice others lol
Those look so pretty. I just don't care for beets. I've never tried pickled beets though. Tried some plain ones just last year and ended up feeding them to the dogs after one small bite. : P
Hahahaha, try one jar of pickled. You never know.........
sorry you don't like beets, they're super yummy pickled but glad you videoed it now i can copy you!
Moore2Life The things I do for this man....hahaha
if i just want to can beets in water can i use my canner and how would i do it i love ure utube
Blessings
Hey, I really love your videos. I have learned a lot. I haven't canned in 20 years but still, have
all my equipment. Now that I am
retired I want to be a canning fool.
I also love your cupboards is that
Chalkboard paint?????
Thank you! Yes, they are chalkboard paint. When the grandkids were young it was a life saver haha
Quick question: Could I put onions in the jar too or do I then need to pressure can ?
You can put onions in the jar too. with the vinegar, it's acidic so you're good :-) Sounds yummy!!
I love the video! Could you substitute monk fruit (Erythritol) for the sugar? I love pickled beets, but am keto and would love to find a low carb method.
Nope, but...........extension.oregonstate.edu/food/preservation/can-i-use-stevia-canning?fbclid=IwAR0wb_VZJXBDzzAk8yBRFeFbv-9ZWeFc5fVYV9eTKAosXgpkldaMw4_BF6Y
Thank you!
Hear me out - the beet water the beets rested in before you jarred them - cld you reduce whatever you have left of that down into beet sugar? I want to grow sugar beets for beet sugar and I'm wondering abt colored sugar from colored beets...
This looks delish. Do you can beets without being pickled?
Yes ma'am, every year. They are a veg that Phil enjoys
I've just come across your channel. I am loving you and your content! Fellow Michiganer here! I noticed some bottles in this video on your windowsill....are those water bottles? Ho'oponopono?
I actually used them to store dish soap in...lol
How do you do it with eggs? Thank you! Really like watching you. And have you ever ate beet leaves?
I am with Phil on those pickled beets.I mean I am beet junky😁
Just at the beginning of the video but I was wondering if you know other ways to can or preserve beets? Any good savory recipes? Thanks!
Hi Leisa! Quick question on the process time for these beets! I’ve been pressure canning and fairly new to water bath canning so was double checking process times as I’m at a high altitude in Colorado. The nchfp website says to process pickled beets for 40 minutes at my altitude (30 at sea level). The recipe says 10 minutes. Which do I do? THANK YOU! Love you lots! You taught me to can!!!
Follow the NCHFP directions
Is there a waiting period between adding the flat lid, and the screw-on lid? Or, are they both added one right after the other? Thanks! : )
You catch everything......haha
I put 1/4 cup into the brine and then when I began putting the liquid into the jars I realized that some would have cloves and some would not. So I decided to add at least one whole clove to each jar in an attempt to be consistant with flavoring.
(I wonder which way 'I'd' like it)?? I've only ever had it a salad bars. What would you suggest: whole pot placement, or individual jar placement...to find my personal preference? (I think I'll use one or the other for the first batch). Thanks for your input, Leisa! : )
(you forgot to address my question about the flat lids and screw-on lids, my Kitchen Queen)! : )
General pickling question: When pickling, is it always necessary to add all that sugar? Can it be done with either none, or a replacement like honey or something and in less amounts? Thanks!
just wondering the national center for home food preservation calls for 30 mins for hot water bath for pickled beets any thoughts
How long till you can eat after batter bath y
Have you ever experimented by filling the jars using a sausage grinder to make it into a sauce, baby or astronaut food? Would that step best be done in the making or before serving?
When are they ready to eat? Where do we store them?
Did you grow them too ???
Is the processing time 10 or 40 minutes? You said 10 but the recipe says 40. I'm assuming 10. Everywhere I've checked is 10 to 20 minutes depending on if the meets were sliced or not. I just like how your recipes come out so I'd like to do it your way. 😊
40
Can i keep in refrigetaor for long last
Oh thank heaven for you. Too many froo froos out there.
Some of the beets I have are on the soft side- not rotten or squishy just not firm. Are they ok to can or should I just fix to eat now? Thanks.
I would eat them now
@@SuttonsDaze thanks. That’s what my gut reaction was. 🙏🏻💕
Hi Lisa would you please show canning with sugar free sugars.
Did you pickle any eggs with all that beet juice?
Thanks for sharing, looks like you need a wide mouth funnel. Looks Yummy!
Thanks! ((((hugs))))
Can i use xylitol or stevia instead of sugar?
How about prepping the beets in an INSTA POT for skin slippage? How long ?
I wouldnt
Picked up a steam canner...., any advice?

Ok so this recipe is just 10 min in water bath still?? I like how you make sure things are done safely so I trust you.
I misspoke, please use the link and look it up to verify. nchfp.uga.edu/

Thank you!! Haven’t pickled beets in years, needed a refresher. I don’t add cloves, but that still will work out.
Hi, you said boil 10min, but in description you say boil 40min...?
40
Can I use brown sugar instead?
Yes
leisa, great job! love pickled beets served with horseradish. yum!
Would it still work without the sugar?
It would not taste the same all pickled beets that I'm aware of have sugar in them
thank you for answering! I will try it!
I love pickled beets, but not with alot of vinegar. Can they be canned without vinegar?
Vinegar is necessary for the acidity level .
Noooooooo. I will never can beets, someone might expect me to eat them! As usual, great video though!
Beet looked nice and video was maybe pretty clear for someone with some experience but not so sure regards a complete beginner who I would think this is aimed at.
I never heard anything much about the de-bubbling or the type of equipment used.
However not a bad effort but there’s room for improvement and could have been a little better.
Only 7 out of 10 due lack of clarity in some areas with this being my first attempt at canning..
I’m in the process of growing my beetroot in the garden. So, I was looking for tips on canning them up , ‘ not sure about the dogs roaming about in the kitchen though! Apart from the danger of tripping over them when moving hot pans around dogs are mucky little sods. They belong in the garden and NOT the kitchen. I liked the lesson, though. Thanks for the lesson.😜
Good job , i just made me first canning video yesterday and it was on pickled beets. Yours is more detailed. If you have time check mine out and give me some tips please. Thanks
Will do
You say process 10 minutes, but the typed instructions say 40??
nchfp.uga.edu/how/pickle/vegetable-pickles/pickled-beets/
Where is the recipe?
Wasting water. The tap keeps running
Lol she’s cooling the beets off while using the water to assist in skin removal
I love all fresh an frozen vegetables but 1 an thats frozen green beans.i hate them. Canned only there.
You forgot the cinnamon...
