How I Pickle Beets - Canning Pickled Beets

  • Ingredients
    10 pounds fresh small beets, stems removed
    2 cups white sugar
    1 tablespoon pickling salt
    1 quart white vinegar
    1/4 cup whole cloves
    Directions
    Place beets in a large stockpot with water to cover. Bring to a boil, and cook until tender, about 15-30 minutes depending on the size of the beets. If beets are large, cut them into quarters. Drain, reserving 2 cups of the beet water, cool and peel.
    Sterilize jars and lids by immersing in boiling water for at least 10 minutes. Fill each jar with beets and add several whole cloves to each jar.
    In a large saucepan, combine the sugar, beet water, vinegar, and pickling salt. Bring to a rapid boil. Pour the hot brine over the beets in the jars, and seal lids.
    Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 40 minutes.

    Pickled beets is the very first thing I ever canned in a 4-H project in 1973 and still my most requested thing I can.

    I don't care to eat beets but the husband loves them. They are one of my favorite things to can, and they are so pretty sitting on the shelf in the pantry.     I love pickled beets. It's the only way I'll eat them but sometimes I can't get beets so I cheat & turn canned beets into pickles. They're just as good when it's the middle of winter. I just keep them in fridge for a treat.

    I love beets but do a little different since I do not like cloves. I use for the brine this ratio - 1 cup sugar, 1 cup Apple cider vinegar and 1 cup water. Heat to boiling and pour over beets in jars. Process as you did in water bath. This makes a sweet/tangy pickle. yummy!

    Mom used to make these when I was a kid and I hated them. Fast forward to now and I am not sure. For a test I bought a jar and have them chilling in the fridge. If I love them now, this video will be great to follow along for the process. I sure remember having pink hands helping Mom slip the beet skins. My stove has the same configuration of burners as yours and it is ridiculous. All the back large burner is good for is rotating out with the front one to keep the wear even.

    I know this ain't the place to put this, but wasn't sure how to reach you. Have you ever made pickle radishes? And if so, can you make them and water bath can them like you do beets, or pickles to be shelf stable til you open them? And can you do a video doing it?     I'm considering placing the cloves and anything else that is hard, in a piece of cheesecloth and tie in a knot. Hopefully, it will prevent the having to separate them out later.

    Those look so pretty. I just don't care for beets. I've never tried pickled beets though. Tried some plain ones just last year and ended up feeding them to the dogs after one small bite. : P

      You can put onions in the jar too. with the vinegar, it's acidic so you're good :-) Sounds yummy!!

    Hear me out - the beet water the beets rested in before you jarred them - cld you reduce whatever you have left of that down into beet sugar? I want to grow sugar beets for beet sugar and I'm wondering abt colored sugar from colored beets...

    Hi Leisa! Quick question on the process time for these beets! I’ve been pressure canning and fairly new to water bath canning so was double checking process times as I’m at a high altitude in Colorado. The nchfp website says to process pickled beets for 40 minutes at my altitude (30 at sea level). The recipe says 10 minutes. Which do I do? THANK YOU! Love you lots! You taught me to can!!!

      You catch everything......haha
      I put 1/4 cup into the brine and then when I began putting the liquid into the jars I realized that some would have cloves and some would not. So I decided to add at least one whole clove to each jar in an attempt to be consistant with flavoring.

      (I wonder which way 'I'd' like it)?? I've only ever had it a salad bars. What would you suggest: whole pot placement, or individual jar placement...to find my personal preference? (I think I'll use one or the other for the first batch). Thanks for your input, Leisa! : )

    Is the processing time 10 or 40 minutes? You said 10 but the recipe says 40. I'm assuming 10. Everywhere I've checked is 10 to 20 minutes depending on if the meets were sliced or not. I just like how your recipes come out so I'd like to do it your way. 😊

      It would not taste the same all pickled beets that I'm aware of have sugar in them

      Vinegar is necessary for the acidity level .

    Beet looked nice and video was maybe pretty clear for someone with some experience but not so sure regards a complete beginner who I would think this is aimed at.
    I never heard anything much about the de-bubbling or the type of equipment used.
    However not a bad effort but there’s room for improvement and could have been a little better.
    Only 7 out of 10 due lack of clarity in some areas with this being my first attempt at canning..

    I’m in the process of growing my beetroot in the garden. So, I was looking for tips on canning them up , ‘ not sure about the dogs roaming about in the kitchen though! Apart from the danger of tripping over them when moving hot pans around dogs are mucky little sods. They belong in the garden and NOT the kitchen. I liked the lesson, though. Thanks for the lesson.😜
