How to Make Pickled Beets

  • July is extremely busy on the homestead! Always something to harvest and preserve, Fall seedlings to tend and of course the yard and weeds never stop growing!
    Heres the recipe for pickled red beets.
    6 cups cooked and sliced beets
    2 cups saved beet juice
    2 cups vinegar
    2 cups sugar
    1 TBS salt
    Bring all to a rolling boil and ladle into clean jars while boiling, turn lids on and let them set for 24 hours. The lids will seal as the contents cool.
    Theres enough vinegar and sugar to prevent botulism.

    I love pickled beets, especially with green salad, hard boiled eggs, sunflower seeds, and dressing, croutons, yum!!

    You should eat those greens. They’re amazing and extremely healthy for you. You separate the leaf from the stem and then you cut the stem in half cook your stems in a little bit olive oil and garlic just before you put the leaves and squeeze some lemon in it let’s sit for a second or two mix it up and then once they’re a little bit tender, those stems throw in your leaves, a little bit more garlic, and a little more olive oil And squeeze lemon and feta cheese on them and mix it up absolutely amazing eating since I was a kid because we’re Greek and weed every green possible

    I know you put out this video two years ago, but I wanted to share that I just canned for the first time ever and used your pickled beets recipe and process from this video. I’ve been watching for a few months and am sad that I’ve gone through all of your content, but will keep watching! I’ve also started quite the garden for the first time ever and am digging it! Thanks for the inspiration and sharing your recipes, tips, and ways!!!

    Love watching your canning system, I can beets also, just a little different. Glad your kids are helping. That is how I learned from helping and watching my mother.

    Ive never had a beet before but my mother in law loves pickled beets so next year Im going to grow them in my garden and can them up for her for a surprise

    This is all so perfect, I miss this sort of life very much. I wish you all the happiness!
    I am usually boiling empty jars and thier lids when pickling. We, in Russia, also do not use such double lids, interesting, it is for multiple uses, I presume.
    Seriously, this is so perfect, your kids are so wonderful, dream life ❤❤❤❤

    We use or beet greens. I sauté them with onion, bacon garlic, salt and pepper. Delicious. But we dont do it often as they will clean you out.

    I love beet greens with onions. Very good for you as well. Not a Swiss chard fan.. beets are much milder.

    I chop up the beet greens and stems and add them to day old leftover rice that we get from the Chinese restaurant and feed them to the MEAT chickens.....they love it.

    Why don't you eat the leaves? They are delicious greens and have more iron than spinach. I put them in ice water to crisp them up, roll from side to side and chiffonade them. Boil them like spinach. I cut the stems separately and eat them like asparagus. Blanch them in ice water. Squeeze excess water out, put them into freezer bags and freeze. I like them with a drizzle of vinegar, salt and pepper to taste and butter...Toss and enjoy. Good for when you thin your beets too. Similar to Swiss Chard.😊😁❤️

    You should be eating those tops separate the leaves from the stem and cut your stems in half. Sauté them in garlic and involve olive oil and then near the end ones. They started soft put your leaves in break them down a little bit and then squeeze some lemon juice over top put a lid on it pick out the burner, and we are Greek and we eat a lot of those greens like that

    Question: Beet Sugar. I have a sugar beet variety and was contemplating making sugar. Have you done that before? My understanding is basically small dice the beets, simmer the sugar out of the flesh, strain, and then reduce it down until it breaks into sugar crystals.... I'm wondering if I've missed any steps and thought I'd ask. 🙂👍🏻

    I love pickled beets but they are so expensive in the store! I’ve pickled them myself in the past. I used my Instant Pot…I don’t think they make one big enough for all you do!

      Today I was trying to find whether you have made a dill pickle video. Instead I found picked beets, which I love!
      I make mine with only a small amount of sugar and salt ( 2 Tbsp. sugar and 1 tsp. salt per cup of vinegar), since beets are so sweet I think they don't need more sugar. To keep them from being too sour, I add 1 1/2 cups water instead of only 1 cup. I also add 3-4 whole cloves per quart jar.
      But that's because I just don't like sweet pickled things. You might not like them my way!
      I still want to know whether you make dill pickles? I do, but I am not completely happy with mine.
