  • Canned carrots are a convenience food for me, so easy to just open a pint and add then to a dish!

    Isn’t it great to see the kids outdoors in the sunshine and fresh air and also helping Mom, instead of being glued to the tv or internet?

      My heart is so glad every time I see the kids being kids, learning and helping, taking big bites out of fresh picked veggies...
      And yes so unnatural and truly frightening how most kids today are being raised.

    When I plant my pelleted carrot seed I use lime and till that I’m first. I use organic lime. Since I was a market gardener I sold carrots all summer long and they asked me why mine were never bitter. So I told them I sweetened the soil with pelleted lime did that for over 50 years of market gardening and still to this day. My parents were the first subscribers or the little magazine called organic gardener. And that what they told us to do. I also do that for every root veggie

      curious, are you talking about organic lime fruits, or referring to organic pelletized lime that you can buy in a bag to till in the soil?

    I've been cooking everyday for 50 years and canning for 12.... yet I can always learn something from your videos, RuthAnn. It's always fun to see your kids and your interactions with them as you guide them in learning a healthy lifestyle. This is what being a homemaker should look like. All things home - caring for family, and keeping them healthy included teaching them how to be kind and good workers, growing and preserving food, keeping a household, etc. Women had the best job in the world before they decided to put on pants and compete in the workplace with men. By the way, I have lived this lifestyle and don't regret a day of it-enjoyed every moment. No time to be bored!! Yes, God is good! And my carrots turned out beautiful. Thank you.

    You always have such a loving teaching tone,Thank you!
    I was so thrilled to see you using a canner just like mine 😊 I use so much less propane with the peatcock. One I close it there is no steam released an I can turn my flame to its lowest setting. It holds proper pressure the whole time. ...I hope I'm doing it correctly, my dry beans sealed.
    Oh one more thing.. we love your BBQ bean recipe 😋

    Thank you RuthAnn for all the great videos. I love that your kids all asked to help you and do chores. Most kids now don't know what that is.     I found your channel about a week ago and have been watching so many of your videos.
    I would love to get some of your zinnia seeds if you do this yearly.
    I just gave my grandchildren large envelopes of zinnia seeds for Easter. I did a garden theme for them this year for their baskets.
    I home school them and am doing my best to raise them a lot like you do.
    Although on a much smaller scale. We no longer have a farm or land. We only have an acre but I do what I can with what we have.
    Anyway back to the point.
    Every year I have them grow something new and care for it. This year is zinnias. Yours are gorgeous and nice and tall. I've not grown them before and I'm so excited to see this video. I didn't know you could save the seeds like marigolds! Or the climate control for the seeds. That helps a lot!

    Thank you for taking time to do this. I have been water bath canning for decades, only pressure canning 2 years. My first year i followed a recipe for carrots and they were mush. Thanks for always including your details. I very much appreciate it and all your videos.

    Parsnips are wonderful, too, and can overwinter in the ground. They get sweeter in the cold. Also white beets ( not cow feed beets ) can be eaten raw or cooked.

    I'm glad I found this about carrots. I just ordered a bushel of them to pick up Saturday. Along with 50 lb of potatoes. I saw how you did potatoes the other day. That looked pretty easy. I hope I can do it as easy as you made it look on the potatoes😊

    OMGOODNESS Kendrick and Harrison are such good harvesters. What Fantastic energy. Ruth Anne you inspire me every time I watch your videos. And little Mr Harrison in the clip of showing how he does it… perfect. 🤗 the piglets are adorable. Do you guys process and eat pork ? I have eaten fresh pork once in my 57 yrs and it was very different from store bought. Absolutely delicious. ❤

    The kids are so cute. I tried canning carrots in 2021 but they came out like mush. I think the recipe I used you boiled them for 5 minutes, jarred them and canned for 30 minutes for pints. I will try it your way because it sure is convenient to have them jarred up.

    Our carrots almost never make it inside because the kids eat them eat them straight out of the garden 😂. “Your playing more than you are working.” Can’t tell you how often we tell our kids that 😂 God bless you guys!

    That's what is wrong with the carrots in the stores! I keep telling people that the carrots I used to eat raw as a kid were kind of sweet but today they are kind of bitter! It makes sense because the demand for carrots is higher these days because of population so I bet they don't give them enough time in the ground and therefore no frost for them which makes them sweeter. I am 73 so it was a lot of years ago 😊

    You should try dry canning these like you do your potatoes. They are amazing!! You'll never add water again. I dry can my green beans also .... SO GOOD!!

    I found a pressure canner just like yours. I was going to replace the valve but you use yours an im sure this canner has not been used as much as yours. Ill give it a try.

    I tried canning some of our carrots. Since they turned out so well, I will wait until a frost and get all of the rest canned for winter. We are in New Brunswick, Canada. THANK YOU - love your channel and excellent advice.

    How does this canner work not using the weight? do you have to constantly adjust he heat to keep it at the 10# mark?

    As someone with almost no experience in canning, why was a pressure canner your choice for these carrots rather than a water bath? Also, could I apply the exact same recipe but do water bath canning, instead? Thank you for taking the time to read and answer. You help to make us better. ❤️

    Try getting kids now days snacking on just plain carrots. This shows mainly start out this way goes a long way in life.
    I don't understand why small jars for the size of your family. I would use this size just for myself. Enjoy watching you in your daily duty and th children helping out, most younger ones in our world woul be arguing with each other.
    My most part is the cooking style and the recipe of your meals 😊

    You are using an old school petcock canner like I use. Much prefer it to the newer "weighted gauge" type.

      You need a pressure canner unless you are going to pickle them. Otherwise mush be pressure canned because they are low acid

    I canned carrots and after processing a few of the carrots are above the water is this normal and will it hurt anything all jars sealed.

    I have well water that sometimes leaves a white (calcium) and red (iron) film on my shower. Do you think it is safe to can with or should I use bought (bottled) water?

      You can use that water.

    I saw that you canned potatoes without water, do you think you could do the same with carrots? My canned carrots were a little too soft and I'm wondering if not using water would make for a firmer carrot.

    So how long are you leaving them planted? Spring to frost? That would be April to Nov-dec for me. I don’t think the voles will leave one carrot to harvest. I thought the roots would get really Harry with little white roots coming off if left so long. I want mine a good size like this.

      Just helps get all the ingredients combined. Plus helps speed things up in the canner.

      I’ve been told that zinc will help all veggies keep their color but I haven’t tried it. I find my carrots to stay nice and bright in the cans

    The one time I tried canning carrots they came out REALLY soft. What did I do wrong? They were grocery store carrots so maybe that’s part of it ??

      The air will suck out as the jars cool after coming out of the canner. That’s how the lids seal.

      I know my mother in law kept them to protect all the other farm animals and they bray and alert if any strangers come around. I love them.
