If you dip your pears in boiling water, just like you do when processing tomatoes then place them in very cold or ice water, the skins will slip off easily. Pears are not easy to peel using a paring knife. I found this method useful when I had bushels of bartlett pears to can. Hope this helps.
I tried this trick and it didn’t work for me. It did make them a bit easier to peel but the skins didn’t slide off as I saw them do on a RUclips video 😕

We used to can 1/2 pears like this. For desert. And pour a warm custard over them. The making of the custard was my 1st cooking “job” in the kitchen and I still make it for friends. 5 eggs + 1 yolk per quart of milk. Heat milk to steaming. While heating the milk I whisk the eggs and some sugar(just to get a head start on the sweetening), and a pinch of salt. “Temper” the eggs: dribble a little hot milk in while whisking, adding it all, little by little til you know the egg mix is already hot, then dump in the rest and cook over med-low to low, whisking all the while. It’ll kinda “foam” a little, right before it thickens up. I usually go til visibly thickening, around 180-190 degrees. It’ll thicken a lot more when cool. Adjust sugar and flavorings. I haven’t had it last more than a week cause I eat/drink it before then. You can freeze it too. Frozen custard. I do this with whole milk, but some heavy cream would prolly be killer😊 The whole deal only takes about 10-15 minutes.
Instead of cinnamon try tossing in a half vanilla bean cut open lengthwise... Also ginger and lime juice are fantastic... It takes a simple desert to the next level.

FYI: (Hope this helps) A little known fact about the pear is that it is one of the few fruits that does not ripen on the tree. The pear is harvested when it is mature, but not yet ripe, and, if left at room temperature, it slowly reaches a sweet and succulent maturity as it ripens from the inside out.
Such marvelous memories! Many younger people may not have experienced using only seasonal produce and canning the rest for winter, since so much is available year round at the store. We NEVER bought out of season produce. We canned summer fruit and ate it in the winter. We learned to enjoy food by the seasons and in many ways I still eat that way. I am almost 70. Pears are a good one to can in small batches. I remember my aunt would have 3 pears that were ripe. We would split one for supper and she would can the other 2 in a sauce pan after supper!

SO interesting the method of canning pears that you use… I pre-make my sugar water…4 cups water to 1 cup sugar…or even 5 to 1…depending on the sweetness of the fruit to be canned…and bring that to a boil…then put on lowest heat…I put 7 lids in a small pot with water covering them, bring to a boil for about 5 minutes… I process all of my fruit for 15 minutes…place them on a towel that covers a cutting board, and when I remove my processed jars, I then cover them with a flannel sheet, out of any draft, and leave them like that until the next day… If I make pear jam, then I add ground cinnamon to that… For canned crabapples, I do use cinnamon sticks…nice flavour… We canned cherries and apricots so far…much more to can… You are SO blessed to live where you do…to “eat off the land” where nothing has been tampered with! You are a most beautiful woman of Almighty God…You are SO blessed to have such a beautiful, precious family…your family is definitely a true-blue FAMILY…in a Godly way! Many years ago a very good friend of mine told me that I only need to prosses my fruit for five minutes; other wise your fruit goes all mushy! I'm glad to see that someone else does too! I always put a clove or two into my jars; it gives a really nice flavour! I may try a cinnamon stick this year!!!! You said; " just warm water? What about white grape Juice?☺
I like to add a twist of lemon rind to my pears. It gives such a nice flavor and I've wondered if it helps to keep the pears from oxidizing. Not sure about that, it's just my theory.
I garden totally organically too, mostly in raised beds, just home made compost. Sure you get bugs etc but a sink full of salt water takes care of cleaning leafy greens and good wash for apples plums and pears ❤

I canned pears for hubby for the very first time last year. I also freeze dried a couple batches. One of the older women on YT said she has never peeled pears and she thought her pears retained more of the pear flavor. So tired and frustrated that's how I did it last year. Peels still on the pear and hubby said just do it that way from now. He really liked them.
Samson silent dehydrators work really well, and you can get them with alot of trays....also, I portion size my baggies, and my kids are allowed one a day :) makes them a bit sad, but makes less work for Mamma and they still get a yummy treat! We try to eat whole foods as much as possible, so I dehydrate alot of snacky foods, even bell pepper slices sprinkled with garlic, the kids love them!
I have a box of pears and have been told that a knob of ginger in a simple syrup and then pour that over the canned up pears, it’s supposed to be amazing. Thank you so much for your video

I'm so glad my friend shared your video with me. We have a bunch of pears to can. The forst batch i had we ate half fresh, and i dehydrated the other half. Slices snd pieces. I can apples, applesauce, and dehydrate some apples, too. Also make fruit leather. We scrump apples from around our neighborhood, so most aren't perfect. But they sure are yummy! Takes quite awhile to dehydrate them, and i figured it's because I am on the coast, and it's humid here. I have the same dehydrator as you. I also sometimes dehydrate the peels, powder them before i use them, and add them to anything where i want apple flavoring. It's very tasty in oatmeal. Thanks again for showing this easy way to do pears!
Pears are one of my favorite things to can! I will miss it this year as I don't have pear trees yet, and we have moved so I no longer have neighbors with the pears.
We make pear sauce also. We put cinnamon red hots candy instead of sugar, to taste. It gives the pears a cinnamony taste & makes the pear sauce pink or red (depending how many red hots you add to the pot). Beautiful for the holidays & tasty all year long! Loves this family & channel!
I LOVE my Excalibur dehydrator. I have the model with 9 shelves. I can fit a LOT of apple slices on it and with the heater & fan blowing from the back wall, things dry faster than the stacking dehydrators. Plus, it’s easier to check and remove trays/pieces that are done first. I’ve had mine for 25 yrs and replaced the plastic shelves about 8 years ago with stainless steel shelves. They often have sales, so if you sign up for emails you can watch for a 20% off. It’s totally worth it! But if you can find a used one- even better

My neighbor has a pear tree, and she made a pear pie. I hadn't heard of pear pie, but was surprised at how good it was. I think she just did it like an apple pie. Not even sure she used cinnamon, but it sure was good!
Have you considered Dehydrated Ginger Pears? My family and church family love them. Slice thin and sprinkle with a mixture of sugar and ground ginger. Dehydrate for 8-10 hours at 140 degrees.
Pears are a long time fruit that I can. I chuckle that you are canning quarts,as I now I am down to half pints! this year our trees are loaded and wish that we could share with your piggies!
My mother came from a big family(12 kids) and her mother did a lot of canning. Mama always said she hated when they canned peaches because it was so sticky. We never did any canning so I had to learn on my own. It's so nice that you are teaching your own kids.

I have a Nesco just like yours. I love mine! I was never happy with my dehydrated apples.. they would get limp and sticky, but it could possibly be my storage method. I DO love to dehydrate sliced potatoes, though and they last a good long while. Mushrooms are best dehydrated as well. I like your method of smooshing the butter to remove the buttermilk. You don’t have trouble with the heat from your hands making the butter too soft. I smoosh mine on a cookie sheet with a spatula, but it is a long and tedious process..

My extended family always made apple butter, cooked all day, outside, over an open fire, in a huge copper vat. I felt honored being allowed to take my turn stirring the apples! There’s NO apple butter better than what my family made! I cried when my last jar was empty! The younger generation didn’t 👁️👁️ the need to continue this tradition. 😢
My granny made some great apple butter and mincemeat . I regret not learning more from her . I would be willing to bet the youngsters will regret it in time. When they are older and realize how quickly life goes by. . God is most definitely good .
This video was 10mo ago which means that my neighbor's pear tree which has been droppimg pears like crazy, that momma deer has been gorging on, is producing pears that I should be picking & canning? They are small & green, I dont think I've ever seen them turn yellow. It was super nice to see you not put a ton of sugar in the pears or precook them! We don't like to eat a lot of sugar. My old time table guide says 25min WB or 10min PC and I had the idea they'd be mushy. I have only been canning for less than a year (started at age 55) but I'm trying to learn good ways, not just canning police ways. I have not yet done water bath, I have learned to use my PC to steam can with to use less water & time heating the water. I so appreciate your videos! God is absolutely good! I work for the Canning Police Dept and I will be calling round soon to check your pantry. Homesteaders are trying to defund the Canning Police but I think that's just mean.
You likely can use your PC as a water bath canner. Keep the rack on the bottom as you would for PC, place your jars in the PC, have the water level come up to the neck of the jars, and bring the water to the boil. You can put your PC lid on, just don't add the weight or close the petcock (depending upon what kind you have) This applies to stovetop models. I haven't used an electric PC so can't comment on those.
Loved how you smacked that misbehaving hog. It'd be the first to become bacon for my freezer. Lol, many years ago, we raised meat hogs, Fred the Red got loose and bit a hole in our little swimming pool. I was so upset until one day sitting at the dinner table, totally enjoying a delicious porkchop. I asked my dad if it was Fred. Dad said that it was, and i replied that Fred was mighty good 😂. I was only about 8 years old.😂

I made then pears last year, and am so excited to do it again next week. Great way to do it, thanksfor teaching me! Also, I got a much nicer and bigger dehydrater...took just as much time as the smaller, cheaper one. So disappointing!
I know that a freeze dryer is pricey but since I was introduced to Freeze Dried apples 🍎 I cannot think of dehydrated apples. And you can preserve a large amount at a time.
My thoughts around the apples are to save the dehydrated ones until the fresh ones are no longer available. Fresh eating whenever possible is allways the first choice I would think. Where I live, Apples keep extremely well in cold storage, so are available a good portion of the year if stored right. Anyhow, that might cut down on the frustration of the products of your hard labour disappearing in minutes flat! ;_)
Perfect timing as I was just given the opportunity to pick some pears. I had to process the ripe and bruised ones right away so I did pear sauce last night but I have a banana box full of greener intact pears yet to do. No pigs here to feed the damaged ones to so compost it is!

I just used a vegetable peeler it worked much easier than blanching without cooking my pears.

I canned pears for hubby for the very first time last year. I also freeze dried a couple batches. One of the older women on YT said she has never peeled pears and she thought her pears retained more of the pear flavor. So tired and frustrated that's how I did it last year. Peels still on the pear and hubby said just do it that way from now. He really liked them.
Samson silent dehydrators work really well, and you can get them with alot of trays....also, I portion size my baggies, and my kids are allowed one a day :) makes them a bit sad, but makes less work for Mamma and they still get a yummy treat! We try to eat whole foods as much as possible, so I dehydrate alot of snacky foods, even bell pepper slices sprinkled with garlic, the kids love them!
I have a box of pears and have been told that a knob of ginger in a simple syrup and then pour that over the canned up pears, it’s supposed to be amazing. Thank you so much for your video

I'm so glad my friend shared your video with me. We have a bunch of pears to can. The forst batch i had we ate half fresh, and i dehydrated the other half. Slices snd pieces. I can apples, applesauce, and dehydrate some apples, too. Also make fruit leather. We scrump apples from around our neighborhood, so most aren't perfect. But they sure are yummy!
Takes quite awhile to dehydrate them, and i figured it's because I am on the coast, and it's humid here. I have the same dehydrator as you. I also sometimes dehydrate the peels, powder them before i use them, and add them to anything where i want apple flavoring. It's very tasty in oatmeal.

Pears are one of my favorite things to can! I will miss it this year as I don't have pear trees yet, and we have moved so I no longer have neighbors with the pears.

We make pear sauce also. We put cinnamon red hots candy instead of sugar, to taste. It gives the pears a cinnamony taste & makes the pear sauce pink or red (depending how many red hots you add to the pot). Beautiful for the holidays & tasty all year long!

I LOVE my Excalibur dehydrator. I have the model with 9 shelves. I can fit a LOT of apple slices on it and with the heater & fan blowing from the back wall, things dry faster than the stacking dehydrators. Plus, it’s easier to check and remove trays/pieces that are done first. I’ve had mine for 25 yrs and replaced the plastic shelves about 8 years ago with stainless steel shelves. They often have sales, so if you sign up for emails you can watch for a 20% off. It’s totally worth it! But if you can find a used one- even better

My neighbor has a pear tree, and she made a pear pie. I hadn't heard of pear pie, but was surprised at how good it was. I think she just did it like an apple pie. Not even sure she used cinnamon, but it sure was good!

Have you considered Dehydrated Ginger Pears? My family and church family love them. Slice thin and sprinkle with a mixture of sugar and ground ginger. Dehydrate for 8-10 hours at 140 degrees.

My mother came from a big family(12 kids) and her mother did a lot of canning. Mama always said she hated when they canned peaches because it was so sticky. We never did any canning so I had to learn on my own. It's so nice that you are teaching your own kids.

I have a Nesco just like yours. I love mine! I was never happy with my dehydrated apples.. they would get limp and sticky, but it could possibly be my storage method. I DO love to dehydrate sliced potatoes, though and they last a good long while. Mushrooms are best dehydrated as well. I like your method of smooshing the butter to remove the buttermilk. You don’t have trouble with the heat from your hands making the butter too soft. I smoosh mine on a cookie sheet with a spatula, but it is a long and tedious process..

My extended family always made apple butter, cooked all day, outside, over an open fire, in a huge copper vat. I felt honored being allowed to take my turn stirring the apples! There’s NO apple butter better than what my family made! I cried when my last jar was empty! The younger generation didn’t 👁️👁️ the need to continue this tradition. 😢
My granny made some great apple butter and mincemeat . I regret not learning more from her . I would be willing to bet the youngsters will regret it in time. When they are older and realize how quickly life goes by. . God is most definitely good .

This video was 10mo ago which means that my neighbor's pear tree which has been droppimg pears like crazy, that momma deer has been gorging on, is producing pears that I should be picking & canning? They are small & green, I dont think I've ever seen them turn yellow. It was super nice to see you not put a ton of sugar in the pears or precook them! We don't like to eat a lot of sugar. My old time table guide says 25min WB or 10min PC and I had the idea they'd be mushy. I have only been canning for less than a year (started at age 55) but I'm trying to learn good ways, not just canning police ways. I have not yet done water bath, I have learned to use my PC to steam can with to use less water & time heating the water.

I work for the Canning Police Dept and I will be calling round soon to check your pantry. Homesteaders are trying to defund the Canning Police but I think that's just mean.
You likely can use your PC as a water bath canner. Keep the rack on the bottom as you would for PC, place your jars in the PC, have the water level come up to the neck of the jars, and bring the water to the boil. You can put your PC lid on, just don't add the weight or close the petcock (depending upon what kind you have)
This applies to stovetop models. I haven't used an electric PC so can't comment on those.
Loved how you smacked that misbehaving hog. It'd be the first to become bacon for my freezer. Lol, many years ago, we raised meat hogs, Fred the Red got loose and bit a hole in our little swimming pool. I was so upset until one day sitting at the dinner table, totally enjoying a delicious porkchop. I asked my dad if it was Fred. Dad said that it was, and i replied that Fred was mighty good 😂. I was only about 8 years old.😂

I made then pears last year, and am so excited to do it again next week. Great way to do it, thanksfor teaching me! Also, I got a much nicer and bigger dehydrater...took just as much time as the smaller, cheaper one. So disappointing!

I know that a freeze dryer is pricey but since I was introduced to Freeze Dried apples 🍎 I cannot think of dehydrated apples. And you can preserve a large amount at a time.
My thoughts around the apples are to save the dehydrated ones until the fresh ones are no longer available. Fresh eating whenever possible is allways the first choice I would think. Where I live, Apples keep extremely well in cold storage, so are available a good portion of the year if stored right. Anyhow, that might cut down on the frustration of the products of your hard labour disappearing in minutes flat! ;_)

Perfect timing as I was just given the opportunity to pick some pears. I had to process the ripe and bruised ones right away so I did pear sauce last night but I have a banana box full of greener intact pears yet to do. No pigs here to feed the damaged ones to so compost it is!
