    I have learned so much from you!
    While watching one of your videos you said someone called you uneducated and you agreed because you only attended school to 8th grade.
    I completely disagree!! I attended college and was an A student throughout college but I didn’t know half of what you do about many subjects. Being “educated” doesn’t make a person Smart!!
    I just love you and your family and appreciate your teachings so much!

      I have been saying that forever...picture it.....I'm painting a loooong hallway in a building and a group a business men approach. One guy, while trying to pass me, brushes the wall with his shoulder and gets paint on hims suit. Blames me for not having a WET PAINT sign on the wall... I say to him "WET PAINT sign is for after I am gone,, when you may not be aware of fresh paint... I am PAINTING the WALL. DUH! Geez, education is no guarantee that you are smart!!" He had nothing else to say. lol

    Your parenting skills are amazing. I never see you get upset, you are so patient ❤️❤️❤️ I think I have watched everyone of your videos and love them all. I was raised in foster homes from 6 grade on, my last home she did a lot of homemade (not as much as you) such a good cook. (I even called her mom). Always hold your head high!!!

    Your my favorite homesteader. You’re so real. I can tell that your lifestyle has been your way of life. That’s why I like it so much because I grew up much the same way. I grew up milking cows raising hogs for meat. My dad actually free ranged his hogs and would gather them at certain times of the year. Anyway I love your channel. And I have shared it with so many people. Thank you!

    I love watching your videos especially canning. There’s not many of us that do canning especially the way Americans and Canadians do it mainly because we do not have the same time of canners you have. We have pressure cookers which is similar to your canners with a pressure weight on top.
    We do however preserve things in jars but differently from you, for instance if we need to preserve pickles like onions, beetroot, yellow pickle called Piccalilli etc we cook the ingredients if needed then make the sauce which contains pickling spices and vinegar salt etc. these do not need water bath canning because the acid in the vinegar stops bacteria from growing.
    This applies to sweet things like jams jellies and marmalade also fruit although not grown in or just laying on the earth because the sugar you use in the syrup also stops bacteria growing although I will admit my jars are scorching hot the syrup is still at a slight boil as I can, if I’m still wary I water can the fruit.
    Hope you like looking at another side of preserving our harvests I’m thinking we are very similar to the way your Mennonite folk do things.

    This is living the life. You must feel so blessed. We have a crop of more cabbage than our neighbor and we can eat. I thought I’d give canning some a try. I love this method you’ve shared. So glad to have found you.

    You can put a kitchen towel in the bottom of your WB canner to protect the glass from the hot bottom. Really enjoyed your video's. Thank you for a great recipe.

    I absolutely love that shredder. I also own a Bosch Universal mixer and they make a slicer/shredder accessory for that machine. I know you said you didn't need another machine on your counter but the accessory works with the mixer you already own. So you wouldn't need to have another machine sitting on your counter. A day in your shoes wears me out just watching let alone having the energy you do.

    I have been canning for about 4 years I thought the water had to be 1 to 2 inches above the jar lids for water bath canning the coleslaw looks wonderful

      Mandie - yes, it does need to be 1 inch above the jars when you process according to food safety experts:)

      She's said in a previous video that this is how the Mennonite community cans and she continues that practice. She is aware of current canning policies but has chosen to continue the Mennonite practice.

      Oh this is a recipe we will try. My mom made kraut and my husband now makes his own in a quart. Just cabbage and salt. We don’t can it just eat it. I love this color of slaw! My mom also had a Cole slaw freezer recipe

    We just opened a jar of your coleslaw recipe I canned in October. It is so good. We usually have creamy slaw but when we tasted this, we ate it right out of the jar.
    So I just wanted to thank you for sharing this recipe & I'm so happy I made it!

      I watched another video and she said if you occasionally want the creamy coleslaw, just rinse it, let dry before adding the creamy dressing. I haven't tried it yet but sounds reasonable to me. Love Options 😊

    I keep my rings on bungee cords stretched across my canning shelves. Surprisingly, they don’t all fling off when I release the end to remove what I need…lol

    I’m sorry this is probably a silly question but how much sugar do you use to how much vinegar ? And do you use apple cider vinegar or white vinegar? Thank you

      This is way late, but she was the written recipe in the description box. She specifies 1 cup vinegar to 1.5 cups sugar. She doesn’t specify white or apple cider vinegar but looking at how clear it is, I would guess white. But you could try apple cider vinegar. That could taste good!

    Hello, just curious, other recipes puts some water in the brine and yours dont have any.. Will that make it more crispy? Will this brine be very strong flavorful and vinagary or just well balanced out and not water down the flavors ?? Please would like your opinion and thoughts, if you could. Do you also have videos on making fermented sauerkraut, and also for making canned sauerkraut? If you could please let us know. 🎉 ❤ 😊 We are from Wisconsin Rapids, Wisconsin USA. PS.     I love pickled cabbage! Ate it for the first time last year. I hope to make more soon. I'll have to try your recipe, looks so good!
    You could staple some netting on the wooden shelf that's open in the back, that way it would have a little give but hold the jars too. I would staple each section separately for more strength.

      I steam can my pickled vegtables . Timing is this same as water bath but less water and not as heavy to work with .

    I've been thinking about your other video, the one about tips and tricks for Mennonite canning, specifically about not covering your jars with water and how "modern" canning guidelines state that you should. However, "modern" canning guidelines don't have any problem with steam canning anything that you can water bath can and for the same time. So, when you think about that, why would you have to cover your jars? They certainly are not covered when you steam can.

      I've thought about these different methods too, but with the steam canning, there is big lid over the pan the jars sit in so that the steam can't escape.

      @@truthseeker3967 but I think she had the water both pot covered as she processed them. Wouldn’t that have the same effect? Hmmm, I’ll have to go back and recheck the video now to be sure… 🤔 Yeah, she covered the pot during the water bath processing time.

    I am so tickled by the way you and your children interact. Seeing the “Little Boys” and how they help you so much is wonderful. I remember putting on my apron and putting my grandsons in their aprons so they could help me when I was cooking, mostly baking. They would sit on my lap while I was sitting at my embroidery sewing machine and let them push the buttons. They would look up at me and say “Now?” They were so excited to help me push buttons and slide the fabric under the presser foot. It was so wonderful! God was moving thru me even tho I was at that time practicing the worship of God, the Father. It has taken me time but now the boys are almost 18, 16, 13, 8, and 7. All boys plus three step-granddaughters that have no steps between me and them.
    My 4 year old granddaughter was diagnosed with ALL LEUKEMIA just 3 weeks ago. I am asking your followers to please pray for Merryn. She and the family are struggling at this time. We need all the support we can get thru God and ask for a total healing of this beautiful little girl. She has a big sister, 8 years old and they are very close. This is hard on Eleanor so I ask you to pray for her also.
    I pray that God will hear our prayers and thank you in advance for your kindness. We have not met but I still consider you a good friend, like so many others who watch you.
    May God Bless you and your family with good health and happiness.

    Just a tip, if you want to you can just lay a folded towel on the bottom of your canner to hold the jars up a bit and cushion them.

    I got a Breville food processor & I am amazed each time I use it. It would chop up 4 heads of cabbage in 30 seconds. Wonderful for scalloped pitatoesn french fries, cole slaw. I never had this until 6 yrs ago. I wondered how I lived without it.

    I’m getting really frustrated with all of this cabbage because I recipe from the ball said to salt cabbage for 24 hours, friends and then drive for six hours. This is getting ridiculous.
    I hope it was ok to leave out of fridge as This Is what I had to do for space issues.,I left it salted in collider overnight.,will this be OK?

    What percentage is the vinegar or does it matter?
    I 've seen videos of 9% vinegar for 1 tbsp per jar, but if 5% vinegar, then 2 tbsp per jar -they (Croatian video) added the vinegar jar by jar instead of pre-made brine mixture - Can you leave the sugar out? Is salt or sugar necessary for safety and substitable?
    Sorry for all the questions. I've never pickled before , just ferment with salt- no processing, but want to do some pickling this summer, Lord willing, and am doing some pre-planning.

    Wss your brine room temperature when you added to cabbage? Also, It looks like you started the canning process with room/well water temperature, then brought to a boil. Is this right?,

    Think there's a wood making project. Make a broad to fit a pot and fasten to machine. Put a clear on board so it doesn't slide hard on pot.

    Do you pressure can or can at all cabbage that’s not kraut or pickled. We like stewed cabbage but I don’t know if it’s safe.

    you could always place a tea towel inside the bottom of the canner if needed so the jars do not sit on the bottom

      Thats how most Amish & Mennonites do their waterbathing. Ruth & her husband used to be Old Order Mennonite so she just learned from her mum & never stopped doing it that way (in an earlier video she explains how she never even knew people covered the jars all the way until someone on Instagram mentioned it)

      It’s more of a steam canning method. The Europeans and middle easterners have been doing this method for hundreds of years. In fact you only need to do it half way up if your canner is well covered.
