I use sour cream instead of cream and mix some with sugar for the topping. I also use a smaller diameter but higher tin . I think the problem with timing may have been the lemon juice to be honest...just needed that bit longer. You can also bake the base first to make it more crunchy. Yours looks lovely

Hi Martin and Sharon, it looked really good, I like lemon cheese cake. I've just made my Xmas cake in the dual blaze, it was in for 1 hour 40 mins on 130 degrees, I even covered it with foil after the first hour. I'm not very happy with it, it's very hard on the top. If i'd done it in my Neff fan oven it would have taken 1 hour and 15 mins, i always add a dish of water so it doesn't dry out. Next year i'll go back to the main oven

For something even quicker and no cooking. Make your base them whisk up a packet of angle delight. Pop it on the top then into the fridge until you want it.
The 40g of cream cheese you missed out and the added liquid from the lemon would have definitely been the issue with the cooking time. It looks amazing and will be going on my list of instant pot recipes to try,keep up the good work.
❤This cheese cake looks so yummy. Also i have an idea for making lifting out anything that has to have foil around it.. If you pull off enough foil, to go from the base of the cake tin. or pudding bowl and bring up the foil to the center and twist it. Its slot easier to get out of the pressure pot. Works well every time. That's how i cook my puddings. As you can just hold the twisted foil top and lift out. I hope this helps you.with less risk of getting burned. Heavy duty baking foil is the best to use.

Hi to you both and Merry Christmas to you and your Family. I wanted to say that My wife and I just made a cheesecake in the Ninja 15 in 1 and it came out amazing. We followed the recipe that was in the book but with some changes. We used fresh fruit instead of frozen and used 300ml of water in the bottom. We also doubled up on the amount of biscuit for the base also added crushed pecans as well as the zest from a full orange. We added 2 caps of orange essence to the cheesecake mixture. We also added 5 minutes extra to the cook time. We also used our stand mixer for the cheesecake mix as it makes all the difference...You should try it as you will love it... It came out really nice thick and heavy and I know you both would love it. We added a part of a can of princess cherry pie filling on the top to 😁😁👍👍😁😁👍👍I hope you try it and take care and be safe.

A none baked cheesecake is nice/ok and bit easier for ease I make it that way, however I much much prefer a baked version like this.They have a richer taste and different texture, it looked pretty easy and if I can cook it this way I will thanks .I hope you're feeling better soon Sharon

Have you ever tried vanilla bean in a jar , it is so flavoursome. A bit more expensive but in my opinion much nicer. Looked very nice in the end . I would think the lemon would give it a nice fresh taste, hehe I just thought as you said it Martin about the coulis. One thing I put on my cheesecakes, is pie filling black cherry in sauce. It’s really thick. Mind it it is harder to find the black cherry pie filling these days for some reason.

Instead of lemon, try rum soaked rausuns bext time. When done, slighty golden brown under the brouler/salamander. Chill as ysyal. Enjoy ❤
