    Making caponata was the first ever video we ever posted on Tik tok when we started this social media journey 3 years ago. It's beautiful to see how far we have come. We feel so grateful to be able to bring this to you long form so you can learn with us step by step how to make caponata. Feels full circle 🥹 RECIPE BELOW ⬇️
    Ingredients:
    3 large or 4 medium eggplants
    3 stalks of celery
    1 large onion
    1 1/2 peeled tomatoes
    2 tablespoons of capers (rinsed)
    1 cup of green olives
    2 tablespoons red wine vinegar
    2 tablespoons sugar ( you can put less if you like)
    Directions:
    Dice eggplants into cubes. Cover in salt and let it rest for 1 to 2 hours.
    Chop celery and Blanche in small pot over medium heat.
    In a medium saucepan add olive oil, sautee chopped onions, then added peeled tomatoes and the celery.
    Lower the flame to medium and let it cook for 15 minutes.
    In the meantime, fry the eggplants.
    Then add the rest of the ingredients. The capers, olives, vinegar, sugar and finally eggplant.
    Let the caponata rest and cool down before serving. It tastes way better room temperature or even cold. 😋

    I would love to water bath can this recipe. I heard you say your family did this. Did your family just can the recipe, or did they also water bath?
