High Protein Chilaquiles

- I’m noticing a trend in my favorite breakfasts: a saucy, savory dish with eggs and carbs for soaking it all up. If you liked my shakshouka, you’ll love this too. Run to the store to make this. It’s got a bunch of protein too (over 30 grams)… so brunch gains all around.
Ingredients:
- 4 eggs
- 1/2 cup non fat greek yogurt
- 8 oz shredded chicken
- Tortilla chips
- 1/2 lime
- 16oz of Salsa Verde
- Avocado
- Soft Sheep’s milk cheese
- 1/2 white onion - diced
- 1 tbsp milk (of choice)
- cilantro for garnish
- 2 tbsp olive oil
- Salt & pepper
Recipe:
- Start by cooking the onion until it is translucent in 1 tbsp of olive oil over medium heat
- While the onion is cooking, make the lime crema.
- stir the yogurt, juice of 1/2 lime, salt, and milk until smooth
- Once onion is cooked, add chicken to pan and heat until warm
- Pour in salsa verde and mix to combine. Bring to a simmer
- Cook the 4 eggs until over medium
- Once eggs are almost done, turn off the heat on the salsa and stir in the tortilla chips until covered and slightly soft
- Plate the chips and sauce. Top with 2 eggs. Add crumbled cheese, cilantro, and 1/2 avocado sliced.
- Pipe the crema over the top of the dish.
- Dig in and ENOY. Make the other plate for someone you love.
