Just a tip when I make these: Use oil (or oil based pastes) and milk powder instead of cream (or any aqueous liquid) when making the pistachio filling. This thins out the pistachio filling and keeps the kataifi crunchy for longer
@@ThaMaven I don't really measure anything when I make them. I usually use around 70% dark chocolate for the outside so I make the filling on the sweeter side. Most pistachio creams, like the one used in the video will likely already have milk powder in them. I make the pistachio paste myself by grinding pistachios in a food processor till smooth. Then I mix the pistachio paste with a bit of tahini (I use the thinnest tahini I can find), milk powder, lots of powdered sugar, and the toasted kataifi. The ratios are completely down to personal preference and I recommend tasting the filling until you're happy with it. You want it to be thick enough so that it holds its shape in the mold and doesn't run so you can cover it in a layer of chocolate. It's honestly pretty easy and I highly recommend giving it a go
I live in the same neighborhood as the original Dubai Chocolate kitchen, so I’ve eaten it several times. Your version looks very delicious! The ones you made look thicker than the original Dubai Chocolate. 😋
