please no music during the show. It is unnerving and not necessary and too loud.
Great recipe which I made today with home made botarga.. So thank you but I have to agree with some of the comments , next time lose the music and avoid using metal tongs or chopsticks on the pan, your voice was getting drowned out and it wasn't pleasant on the ears..

What is Botarga? You didn't tell us. Many Americans like myself might not be familiar with it.

toanthai gave you a basic answer. There are two types. One from tuna and the other from grey mullet. The tuna is funkier and fishier in taste and the roe is a bit larger. .

Very good demo in terms of method and tips but do use non metal chopsticks as the noise from chopsticks hitting the pan is most unbearable to the ears and the music is also annoying. Other than that👍
Nice recipe, but the muzak is way too obtrusive. Makes it hard to watch and like.
