    Bottarga is always delicious. So many different flavors and varieties depending on the country. For eating straight, Egyptian bottarga is unparalleled. Grated, go with Norwegian every time, it's made with cod roe.

    I had some in a restaurant as an appetizer along with fermented cabbage. Not knowing what it was I was so surprised. Although not tasting great in my opinion it is crazy how flavorful it is, way more than caviar. (pretty sure i had tuna as well, judging by your reaction)

    How dull is that knife! I was happy to see you not pull the paper off before cutting. I didn't understand your method the first time so i was glad you changed it because i was waiting for it.

      that's a similarity I hadn't thought of. The tuna bottarga was pretty salty, but the mullet bottarga was milder and not as harsh.
