- Omurice is a Japanese dish with a Western twist.
Packed with protein and vegetables, it provides a satisfying meal.
It's an ideal dish for those on gluten-free diets.
This recipe excludes commercial ketchup, which typically contains sugars or high fructose corn syrup.
Ingredients: 3 Servings
270ml rice (225g) Japanese rice or short-grain rice
300ml water *1.1 times the rice
100g chicken thighs
1/2 onion
1/4 carrot
1 green pepper
3 mushrooms
2 tbsp corn kernels
2 tbsp tomato paste
1 tsp vegetable stock powder
1/2 tbsp sake (Japanese rice wine)
1/2 tsp salt
A pinch of black pepper
1/2 tbsp vegetable oil
6 eggs
pinch of salt
3 tbsp water
3 tbsp oil
parsley (as needed)
*Please use ingredients labelled as gluten-free.
Instructions:
1: Wash rice in water a couple of times, and drain for 30 minutes using a sieve.
2: Finely chop the onion, carrot, and green pepper. Slice the mushrooms thinly.
3: Cut the chicken thighs into small bite size pieces and season with salt.
4: Heat oil in a pot and sauté the onion and chicken.
Once the chicken changes colour, add the carrot, green pepper, and mushrooms and stir-fry lightly. Then add the rice and continue to stir-fry until the rice becomes translucent.
5: Remove from heat and add water, corn kernels, tomato paste, vegetable soup stock powder, and salt. Mix well.
Cover with a lid, bring to a boil over high heat, then reduce to low heat and cook for 12-13 minutes.
Remove from heat and let it steam for 15 minutes. Prepare the chicken rice on a plate.
6: In a bowl, beat 2 eggs with a pinch of salt until the egg whites are fully incorporated.
7: Heat oil in a frying pan. Pour the beaten egg mixture into the pan and quickly stir over high heat.
When the eggs are half-cooked, reduce to medium heat and shape the omelette by pushing the eggs towards the edge of the pan.
8: Place the omelette on top of the plated chicken rice, then sprinkle with parsley.
📖 In this recipe, I do not use ketchup to avoid adding sugar, but instead, I use sweet vegetables to create delicious chicken rice.

マッシュルーム 3個
コーン 大さじ2
トマトペースト 大さじ2野菜スープの素 小さじ1
酒 大さじ1/2塩 小さじ1/2
こしょう 少々
油 大さじ1/2
卵 4個
塩 ひとつまみ
油 大さじ2
パセリ 適量
作り方:
1: 米を2、3回洗い、30分ざるで水を切っておく。
1: 玉ねぎ、にんじん、ピーマンをみじん切りにする。マッシュルームを薄切りにする。
2: 鶏もも肉を1.5cm角に切り、塩で下味をつける。
3: 鍋で油を熱して玉ねぎ、鶏もも肉を炒める。鶏もも肉の色が変わったら、にんじん、ピーマン、マシュルーム入れ軽く炒め、さらに米を入れ米が半透明になるまで炒める。
4: 一度火を止め、コーン、水、トマトペースト、野菜スープの素、塩を入れよく混ぜる
5: 蓋をして強火にかけ、蒸気が出てきたら弱火にして12-13分間炊く。火を止めて15分蒸らす。
お皿にチキンライスを盛り付けておく。
6: ボウルに卵と塩一つまみを入れよく溶く。
7:フライパンで油を熱したら、卵液の半量を一気に流し入れ、強火で手早く混ぜ卵が半熟になったら中火にし、卵をフライパンの端の方に寄せる。
8: 盛り付けたチキンライスの上にオムレツをのせ、パセリを散らす。
📖市販のケチャップには砂糖と果糖ぶどう糖液糖などが使われているので、このレシピでは使用していません。
甘みのある野菜を使うことで、ケチャップなしでもおいしいチキンライスになります。
