This recipe is so good. My tip:Don’t be scared to use cardamom, I’ve made these with 50% cinnamon / 50% cardamom in the sugar mixture, and added 1 teaspoon of cardamom to the dough and they tasted like those sweet Swedish kardemummabullar. A real treat 😋
I made these yesterday and Wow! Best ever cinnamon rolls! I put some of the glaze in my coffee and it's delicious! Try dipping a banana in coffee and then in the glaze. Wow! Incredible! Thanks for another great recipe John! ❤
I made the Dulce De Leche yesterday as suggested here ( cook closed can of sweetened condensed milk in a pan of water keeping the whole can covered ) for about an hour on a light boil. It came out beautiful. I also had the dry ingredients measured out and ready ( except for yeast ) This morning I put the dough together and while that was raising I made the filling and the glaze. Easy breezy. I have been making regular cinnamon rolls for ages so this was a nice change. I love all the steps as it allows you to clean in between. Great recipe.

I've made your previous cinnamon roll recipe a handful of times and they are easily one of my favorite treats to make. Cant wait to try the dulce de leche version!
Put the whole unopened can of sweetened condensed milk into a pan of water. Make sure the water stays over the top of the can as you simmer it on your stove. After 2 hrs , let the canon the pot with water cool to room temperature. Take your can out and open and VOILA….. DULE DE LETCHE ! ❤ I’m serious, it works and is totally amazing! Please make sure to keep check on your water level…. Add water a couple inches above your can and add as it evaporates.

These look delicious! I have been a little hesitant to make homemade cinnamon rolls cause it seemed to be very hard in terms of the dough kneading and rolling out, but after watching this video, I definitely will be planning to give these a try😃

You used there some ingredients for the famous argentinian 'chocotorta', which is made with chocolate cookies softened with coffee, and DDL mixed with whipped cream as a filling. I suggest you try it out! Great recipe!

John, for as long as I can remember my Mom baked wonderful cakes and pies. I have a tool she used to mix dough, pudding and meringue, it is metal, looks like a paddle, the widest part may be 4-5 inches, and about a foot long, the paddle part has sort of looped wire going across, there are around 6 of those and their shape is fixed. I know that is probably difficult to get a true picture in your mind, but she made beautiful meringues using just that! She didn’t have a stand mixer until about 25 years later. No electric hand mixer either. And although I certainly could have bought myself a stand mixer, I have never had one, I use a hand mixer. And I bake quite a bit. Also John, I wonder if you have ever seen a pineapple upside down cake cooked in a dutch oven. I remember my Mom making one that way, when she turned it out onto the plate she had to keep putting the pineapple back on the cake because it kept sliding off while it was still hot. I think that was a lot of trouble because she never made it again. Seventy five years later I think she could have put the cake in the ICE BOX to cool down and it wouldn’t have been so difficult to get the pineapple to stay in place. The cake was delicious, and to this day pineapples upside down cake is a favorite of mine.
You can make the traditional dulce de leche recipe by adding a nice fatty milk with 35% of sugar. Then you evaporate the milk untill dulce de leche forms. If you ever come to Argentina I would love to give you some as a present, to thank you for all the lovely content you constantly make

I believe sometimes you can find sweetened condensed milk (like Eagle Brand) that has the dulce de leche flavor, meaning it’s been cooked down and partially caramelized.
Hello John, I love your recipies, today I made the coconut cake, wow, amazing flavour. I'm not a new baker, I'm 80 now. I'm from Uruguay, South America, were childrens grow up eating Dulce de Leche, as much or more than kids in North America eat Peanut butter. So, you are making it from a can of condensed milk, right? Have you tried making it from scratch? it require some patience of course, put some milk, sugar and vanilla in a pot on mid low and start stirring, for a few hours, ha ha. Some times if it gets the right colour but it's stil is too runny, I disolve a little cornstarch in a little of milk and added to it, always stirring of course! I also buy it from a Latin Store, even easier, and authentic, from Argentina. But it's worth it!!! Oh my, am I tryimg to give advise to a profesional? Oops!!!
These look really good! I have a question: is there a benefit to keeping the gooey part of the inside flavoring separate from the spice rather than making it into a combined seasoned paste? It seems like the paste would be easier to, but I’ve never tried it before and so would like your opinion.
Not sure if this is why but, every time I mix the butter and sugar in cinnamon rolls I find it can sometimes be hard to spread if it's not completely creamed together (which I usually rush because at this point I'm so close to cinnamon rolls I can taste them and get impatient). Spreading the butter then sprinkling the sugar is easier for me and I slow my "roll" a bit... I'll see myself out.

I use to mix my dough by hand, but would get annoyed by it sticking to them, so ever since, I've worn latex gloves..no more mess and no more sticky doughy hands.
About yeast and recipes, if the recipe just says 'yeast'...do you use instant or active? Also, would a cup of APF and bread flour weighs the same? Absolutely enjoy watching you and your recipes have always in a success in my home!
Active dry yeast and instant yeast are totally interchangeable, 1:1. I'm not sure why he says they are not. If a recipe doesn't specify, just use whatever yeast you have on hand. The only difference is proofing time will be a bit longer for active dry yeast compared to instant. You can also use fresh yeast. Use twice the amount of dry yeast, 1:2. So if a recipe says to use 7g of instant yeast, use 14g of fresh. Hope it helps.
