I love this recipe! The tomatoes are perfectly mushy and saucy. The only thing I do differently is sometimes I'll add some chili oil as a topping and even some eggplant and ground pork over white rice.
This was one of my go-to's when i was living in Xi'An. I moved there from Chengdu and couldn't find any good food except the LanZhou noodles and this dish. Saved my life. If you ever want to visit China, please go to Xi'An first and then anywhere else.... because the food will be amazing to you if you haven't had the food from anywhere else first.

My roommate always made this, and tonight I was craving something more to go with rice and this was perfect for me to try my own hand! This looks really good. Everyone can tailor it slightly. To this I wll add some sugar, some starch slurry, and undercook the eggs a bit as I like that moist slurpy consistency over rice. Can't wait to try this.

Oh! I have to try that cause I totally love stired/scrumbled egg (solo or with onion and/or bacon) and cold freshly chopped tomatoes. I use to put some salt on the tomatoes and some pepper on the egg and really enjoy the difference between the nice hot fried egg and the cool, fresh tomatoes. Perfect for breakfast in my opinion. Nevertheless I have to try your style with the soy sauce. Maybe that gets me a flavour to like the tomatoes more slushy. That was allways the point why I did not like to fry them with the egg.
OK, now I tried the recepie two times. I needed a little more soysauce than in the original recepie but that may be due to my type of sojsauce I have at home. Second time I had not enough spring-onions so I used normal onions for frying and used the spring-onions to add after frying. I found out that this is one of the dishes that tastest even better if you let it set for a while. So if you want the flavour really spread just do it as first thing when you prepare breakfast/the meal. Then turn off the heat, put a lid on it and then prepare the table, make coffee, take a shower or whatever you use to do. I experienced the same thing with several dishes like for example Seoungs Bulgogi Recepie. I once cooked it, it was really good but me and my friend did not eat the whole Pan. So I put it in the fridge for the next day. When we ate it then it was amazing how much better it tasted and just to mention it again: it was even really, really good when it was fresh. For the egg I can even imagine to prepare it the night before or Take it to work or somewhere. Will taste really delicious.👍

Can you please make tonkastu ramen with black garlic oil. I swear I fell In love when I tried this dish and I cannot find one that is like the one I had. It had the tonkastu broth with black garlic oil, charsu, black fungus thin mushroom things and I literally could not be more in love and would appreciate it so much if you somehow could show me how to make it at home for me and that family!
This was so good. I'm cantonese. I recommend adding some sugar and skip the salt on the tomato. The soy sauce and eggs have salt already.
She does add ketchup which would have that sugar/sweetness.
I make this all the time, I'm white but my husband is Cantonese I'll have to try that with the sugar instead tonight thank you for the suggestion!

It looks perfect! In Greece we make it by using olive oil, boiling the tomatoes first, then adding the eggs. It's perfect with Feta cheese!
