I'm Italian too and my grandmother and mother used to make this for me too. It was called "Eggs in Purgatory" translated in English. It was so simple to make and we would eat it with Iralian bread. I make it every now and then when I want something simple and quick. Every household usually has tomatoes and eggs. We didn't add Katchup or sugar or cornstarch.
We have a local place that I went to pick up take out from and they were setting the table for all of their family when I got there. One of the women brought out tomato and egg and it looked amazing and I asked her what it was, then asked her if it's on the menu. She said no it's not on the menu, but if you ever want I will make it for you! So every now and then I will go there and have her make it for me. It's delicious!
I remember my mom cooking this in 1950’s.,,,than I cooked this for my husband because my tomatoes were getting too ripe…this was the first for him….he was amazed…he enjoyed it. Nothing beats the good old days food❤❤❤❤👍👍👍
Here in UK scrambled eggs, fried tomatoes served with or on toast is a common breakfast. But, these Asian influences raise this to a whole new wonderful level. Thank you.
Love the addition of the ketchup. It is so versatile and I’m always surprised when it’s not in someone’s fridge as it’s such a great flavour enhancement for so many dishes.
Simple and versatile , depending on how hungry , or how much time you have , imagine adding a few things to that dish , shrimp, left over roast chicken or bbq pork , endless possibilities , have a cool and relaxing Sunday ,today it’s expecting to rain here in Jamaica Montego Bay , but when it comes I will believe.

Oh, as a Chinese foodie I usually cook this dish in a much simpler way. I use only eggs, tomatoes and salt, and it tastes very good as well. I think the eggs and tomatoes are such a perfect match to develop amazing aromas and flavors. It's magic! Thank you for sharing an alternative way of cooking this dish!

now this is a home recipe I can get behind. nothing fancy. and as an asian born in canada to immigrant parents and grand parents.. times were very tough in the 80's.. these were the staple recipes I can clearly remember my parents and grand parents making us... and flo is 100% right. This recipe is versatile.. if you don't have ginger on hand.. no sweat use onions... don't like too much eggs.. no sweat sub another protein in like a can of tuna or sardines and use half the eggs. use what you got. make the the dish your own.

Wow, goodness me, it was delicious. I have no idea if it would compare with yours (I'm sure yours tastes much better) but I cannot tell you the confidence it has given me to try other recipes. I'm Mizo from northeast India, this is our regular breakfast dish. Easy to make.. But we don't use sugar, soy sauce, water or corn starch slurry. We fried tomatoes and add eggs after cooked.. The ratio is also like 2 tomatoes to 3 eggs

As a person of Hoi'Saan descent, I have been trying all of your recipes and I cannot wait to try this one! I also cannot be bothered for complicated, labor intensive cooking!
I also grew up with the +beef version of this dish and the restaurants in the city offered this as well. These days, I really appreciate the simpler tomato and egg version without the meat. With the skyrocketing price of food, especially meat, the non-beef version is still a great dish that is packed with flavour and easy to obtain, affordable ingredients.

Today I was feeling poorly and was unable to make it to the shops. I knew I had eggs and tomatoes but no spring onions, so I was indecisive about adding garlic and onions (not quite the thing I know) but I did so, and it turned out - tastewise - okay. So thank you for the tip, about being free to adapt recipes! Saying that I`lll be sticking to using spring onions in the future !!!

My little chinese cookbooks have a recipe for beef and tomato. Mexican cooking has huevos rancheros(tomato potato, and eggs). Now Chinese has tomato and eggs. Hooray!! I love to eat that's why I learned to cook. And I have eaten some good food that I've prepared. Long time subscriber,. Glad to see you hitting your stride . You make me happy with the last few months of recipes. My main cuisines of interest are Asian, Indian, Mediterreanean basin,and of course American. Basically peasant food., But good tasting peasant food. I am always amazed at two or three ingredients that just go together(ham and eggs;, bread, butter, and jelly; bread and melty cheese;. Etc. I love simplicity. I love noodle dishes. Keep up the good work...
This looks so delicious! I thought this was a weird concoction my great grandparents and grandma made up for us. I love adding a little sugar to balance the acidity of the tomatoes. Such a comfort food dish in our home.
I love meals using eggs and tomatoes together. I modified this meal by adding a few leftover grilled shrimp, omitted the sugar and ketchup, and topped it off with crumbled baked crispy kale chips. I sautéed it all in a wok using a chili oil to spice it up. It was delicious! Thank you for the inspiration!
I'm from the middle east, and we have a dish called Shakshuka (eggs, tomatoes, onions , salt and pepper.. and anything else you like : garlic, paprika, cilantro/coriander leaves or parsley for garnish 🙂)

I'm from the middle east, and we have a dish called Shakshuka (eggs, tomatoes, onions , salt and pepper.. and anything else you like : garlic, paprika, cilantro/coriander leaves or parsley for garnish 🙂)
