A kitchen mishap netted me a very warped cutting board, so a new bamboo cutting board also arrived this morning. Thanks, you two. This seems awesome, Flo! Can't wait to try it! Only thing I might do is add some canned diced tomatoes as well, but only bc this time of year the fresh tomatoes tend to be a little dull and flavorless - so just a bit of a supplement, I guess. Cheers & Happy Holidays!

Crazy how expensive everything is now... Produce has jumped massively also. Glad our final crop of cherry tomatoes were harvested before our freeze. Being in Texas we can continue to grow. Was just hoping our first freeze would come later so that we could get another bushel. We know what we will do with our big bag of tomatoes.... God bless... 🙏✝️🙏

Made this with just 2 tomatoes and some thin rib eye steaks (skipped the eggs). Modified the recipe for the smaller quantity and it was delicious! Thanks for a quick and easy recipe made with ingredients I had in stock!
This is very similar to a Turkish-style dish my mother made all the time: Stuffed Tomatoes and Green Peppers. Mince beef, egg, onion, cumin, salt & pepper, olive oil, and rice stuffed into one of the two veg, and submerged and allowed to stew until the rice is fully cooked. 😘 Mwah!
Looks great, but for some weird reason, all the stores where I live (champaign, illinois) have been out of stock of green onions for like 3 weeks now. Really odd....
Can I guess the recipe? First take your beef and cook it until it is brown but not fully cooked then take it out of the pan next add your tomatoes diced and cook it for a minute, then add your onion, garlic and then cook that until the onion has wilted a little bit and soft and put that to the side, add oil and scrambled an egg. Put everything to the side and then add in your beef again then add in soy sauce, hoisin sauce, oyster sauce, and ketchup. Mix in everything, add salt and pepper according to taste then add possibly a dash of Xiao Xing or rice wine vinegar. Add some water. Add in your green onions at the end.
