I make this and switch out the vegetables according to what I have on hand. Sometimes broccoli, green beans, bok choy, celery etc. Sometimes I add all the vegetables to it at one time. Since my daughter is extremely allergic to shellfish I use the vegan oyster sauce, it has an excellent flavor
In Commonwealth countries you could potentially substitute Vegemite, Promite, Marmite and Ozemite for the oyster sauce as they all claim to be vegan (although check the colourings & flavourings additives to make sure they're okay for you too, they will be vegan but some people may react to them. Or not.). These are all yeast extract spreads, very intense umami & salty. Partly diluted (I e. add less water than recommended) dried vegan stock may work too. Or (vegan) miso paste, although if you have miso paste, you probably have oyster sauce. Europeans add tomato paste to dishes for a umami kick, but in a dish like this you might need to balance it with extra salt, idk. Just some other alternatives if oyster sauce is a problem.

We used ground Turkey and chicken broth simply because it’s what was on hand and it is fabulous. Ours was over soba noodles because they were in the pantry. Simple and really delicious!!! Thank you❤❤

Please be careful about putting cooked food into a bowl that previously contained raw meat that has not been washed. Saving the washing of one bowl is not worth the risk of cross-contamination with the raw meat juices.
