    As much as you love cabbage (as do I) try replacing salad greens with cabbage. When we were in Jamaica all the salads were made with cabbage instead of salad greens. I was in heaven. I ate so many different kinds of cabbage salads and loved every single one. Burritos with a side pile of raw shredded cabbage is excellent too. Then every bite of burrito has a nice crunch. The texture upgrade is heavenly. Now back to trying to find your pickled cole slaw recipe. I have 40 lbs of Azure cabbage here and need to start prepping for that recipe. Thanks again.

    Rachel how do you prepare the cabbage steaks, do you blanch them before vacuum sealing?

    Have you ever made kraut? We make it every year and it is the best. We ferment it for 6 weeks then can it. Aside from using it as is, is a recipe called kraut salad. I made it and it reminded me of your canned colelaw, it just wasnt as sweet. I your slaw recipe.

    Hi Rachel thanks., I need to use my Vacuum Sealer and never do, being lazy I guess 7-10-2022👍🏽👍🏽, I am not a Fan of Sauerkraut but I do love coleslaw but I use a mayonnaise base coleslaw

    I LOVE cabbage all kinds of way! Just one question, if I want to let it set overnight (instead of 30 minutes), should it be left in the refrigerator or left on the counter?

    This is off topic, but do you work with sunflowers? I want to try and bake with the flour from the stalk and the milk from the seeds. I know how to get the flour and milk just not sure on the recipe. Thanks Donna

    Unrealated question: I am looking to break down my bulk green bean cans (6.3lbs each) into smaller, more reaonable sized jars. Is it possible to pressure cook pre-cooked green beans? I can't find any info on that anywhere.

      I wouldn't recan green beans personally they would just turn to mush

    Can sauerkraut be made fast like that?

      No. Saurkraut is fermented and creates a brine without vinegar and this is pickled (marinated) in vinegar. Both are a form of pickling (the term for food preserving veggies in a liquid) but this is not a ferment.

      You can get plant based fish sauce. It’s mushroom based. I love it.
