Harvest and Preserve Cabbage | Canned Coleslaw + Sauerkraut

  • Today is the day we harvest our large Alaskan cabbage grown under the midnight sun, weighing in at 37 pounds leaves and all! We work to preserve our abundant garden harvest through fermentation, pickling and water bath processing.
    ~ Canned Coleslaw Ingredients ~
    Sliced Red and Green Cabbage, Carrots, Beets and Kohlrabi
    ~ Canned Coleslaw Brine ~
    2 parts vinegar (of your choice) to 1 part water
    Sugar as desired
    Peppercorns, brown mustard seeds and celery seeds
    ~ Canned Coleslaw Instructions ~
    Sprinkle kosher salt over vegetable mixture, allow to sit for 1-2 hours then rinse well and drain.
    Heat brine ingredients and prepare canning jars. Each jar needs approximately 1/2 to 3/4 cup of brine.
    Pack coleslaw mixture into jars, pour hot brine over leaving 1/2 inch headspace.
    Lid and band jars, process for 20 minutes in a water bath canner.

    I've never in my life experienced a couple who makes the most out of their life like you two have been doing. I respect your way of living, but your relationship is one we can all envy.     My favorite part of the video: where Ariel measures the size of the cabbages using a face… “this is like 8 faces! I’ve heard of using a “dinner plate” to measure sizes of things, but not a human face. Oh Ariel, you are the BEST!😂 great harvest and processing days! 🫑🌶🥒🥦

Please be sensitive to the needs of others and realize that other people may not have it as good as you do to where you can just look around and wherever you feel like living.       Please can I ask what might seem a silly question I always thought Cole slaw was a fresh unheated uncooked grated vegetable mixture with mayonaisse? Is your product soft and totally different from the Cole slaw I'm used to ?

Though they often used just fried cabbage and onions in a TON of butter with egg noodles (and a ton of pepper). It's good both ways, with bacon or butter or both of course. Best comfort food!

    Since I found your channel 3-4 years ago, y’all have motivated me to start my own garden 2 years ago and I can hopefully learn to can food next year. I’m no where near as successful at as y’all are in my garden,but I’m slowly learning and I really appreciate how you explain things and tell us the way you do things. I also love how you cover so many other things like bee keeping, fishing and hunting, preserving food and cooking. I just wish I could go fishing for salmon, but sadly they never come to NC except in the freezer section. Thanks for sharing your life with us.

    Talk about Cabbage Patch Kids!! Holy moly they are massive! The kid in me wanted to make a bonnet with one of those mega giant leaves and put it on my head! Lol! Look at all that chopped salad!       you can go back and watch all their videos...but they store it under their cabinets and kitchen island,,,,they once made a root cellar but it held water so the filled it in...there are videos of it....just thought i would answer as im sure they dont get to all inquiries hope i helped...HAGD😃

      It's the most incredible greedy/proud feeling to see all those canned goods lined up. I canned like a maniac this summer. The last thing was the best: dill and garlic green tomato pickles, omg I wish I'd canned dozens of pints more...but I just wore out. I regretfully committed the last half bushel to the groundhogs.

    I made your canned coleslaw for the second year in a row. I used the green cabbage I got from my CSA. My son and I love it! We like it as is from the jar or with some mayo. So easy and yummy!💕

    Hi Ariel and Eric, It's incredible how your harvesting is so amazing ! I think you have enough for at least two to three years. Salmons, chickens, vegetables, wild berries and more. This is a wonderful year for you. I'm totally amazed how you manage your food reserves. Congratulations. You're the best. I'm a fan for a long time now, and still surprised how you improve each year by the way you combine fishing, harvesting, canning and preserving all these foods. (Sorry for my English, I'm not totally bilingual, so I write to you with my Knowledge in English) 😉😉😂😂
    I wonder if you two have learned kitchen by yourself or at school. You are so professional, in preparing and presenting such meal. Some restaurant are not at your level ⁉⁉

    I always find the temperature and sunrise/set times interesting in your videos. It seems we have similar spring and autumn as you here in the north of England (cooler summer and much warmer winter though!) We're at 7.30am sunrise and 6.30pm sun set and the same high and low temperature as you today. Beautiful cabbage harvest! Everything looks delicious.

    Ariel - you have the hand movements of a true baker. The way you push the dough with the backs of your fingers then softly handle, knead and shape. It’s a gift that not everyone has. Very cool.

    Ariel, just throws together some flour and butter, and water, chops some veggies and in thirty minutes out come a pastry that is cooked to perfection and would please a King, unbelieveable. they eat like kings in the middle of nowhere. What a duo.

    First, I like seeing cold climate gardening. Second, the chemistry between you two is inspiring. Finally, I REALLY LIKE how you do a subject from start to finish. Cabbage to sauerkraut for example. Instead of slicing up a video into many smaller videos which may do better in the algorithm. Also, I'm not an historical fan of cabbage, but in recent years I found out that it's not bad if you salt it. And this video alone has inspired me to start growing cabbage in my Montana garden.

    I think you two are the real deal when it comes to homesteading if you go back and look four years ago and when y'all started to now y'all have done a an awesome job there's other RUclips channels out there that claim to be homesteading I think instead of them sitting around running their mouths they need to watch y'all two personally when I watch homesteading this is what I want to see again awesome job y'all love your episodes

    I was waiting for Eric to say that was the best thing he ever ate! It was a beautiful galette, could have been the cover on a food magazine. Your cabbages are awesome! I thought after your struggle with the first one, that you would have been using the hatchet on the rest of them. 🙂
