    Healthy Cabbage Casserole
    Ingredients for one 2-quart baking dish (about 4 servings as a main course; 8 servings as a side dish)
    1/2 of a medium-size head of cabbage (about 500g)
    1/2 to 3/4 teaspoon salt
    4 large eggs
    1/4 cup (58g) mayonnaise
    1/4 cup (62g) sour cream or plain yogurt
    1/4 cup (30g) all-purpose flour or a gluten-free substitute
    1 teaspoon (4g) baking powder
    1 teaspoon (4g) cornstarch
    A pinch of black pepper
    4 ounces (112g) or more finely-shredded Swiss cheese
    Directions:
    Preheat oven to 350°F (177°C).
    Preparing the Cabbage -- Thinly slice the cabbage (as for coleslaw), and place it in a large bowl. Sprinkle with 1/2 to 3/4 teaspoons of salt. Mix with hands, and then massage the strands until they weep moisture and soften up -- about 30 seconds. Pour the cabbage into a greased 2-quart baking dish, and let it rest there for 5 minutes. Meanwhile, make the batter.
    Making the batter -- Whisk the eggs in a medium bowl. One ingredient at a time, whisk in the mayonnaise and the sour cream (or yogurt). Add the flour, baking powder, cornstarch, and pepper. Whisk until fairly smooth -- about 30 seconds.
    Assembling -- Pour the egg mixture over the cabbage. Stir with a spoon or spatula until all of the cabbage is coated. Sprinkle the cheese over the top of the casserole.
    Baking -- Bake in the preheated oven until the casserole puffs and the cheese melts and turns spotty brown -- about 50 minutes.
    Serving -- Allow the casserole to cool for at least 15 minutes, and then cut it into serving pieces. The casserole is delicious at any temperature -- even cold from the fridge!

    You really can't go wrong with cabbage, in my opinion. However, some recipes are so outstanding that homage must be paid. This is one of those recipes. After watching your video, I made it the very next day, as I always have the necessary ingredients in my fridge and pantry. It was so good that I finished it off - BY MYSELF - in three meals. (Hangs head in shame.) The only thing I did differently was to add a whole chopped onion because I think cabbage and onion are a match made in heaven. Although the ingredients are simple, the whole is definitely greater than the sum of its parts. And you are correct - it even tastes wonderful straight out of the refrigerator. I will make this again and again. Thank you to your mother, and to you for making this video.

      Me too Holly! I'm very intrigued and will be making this interesting recipe tomorrow. I have shaved parmesan and Mexican cheese but I think I'll pick up some mozzarella cheese tomorrow to try it as instructed first before considering any changes .Thanks for the recipe.

    Kevin, I made your recipe today and it was the BEST cabbage casserole I have ever had. Forget the mushy cracker topped cream of chicken filling so dated. What I got could be sliced into a bar that was so delicious and creamy, the cabbage was cooked well. You are right, the corn starch took away all the liquid and it cut like a pan of brownies! Now I like onions, so I put in some chopped onions. I didn't have sour cream or yogurt but I DID have some cottage cheese and it worked out fine. I didn't have enough swiss cheese so I used medium cheddar/jack. I will make the swiss version next week when my Japanese guests come for a week's visit. You are a great teacher. You worked and spoke slowly enough and told me why you did things a certain way, and although I am 82, I learned something from you. Mahalo plenty from Hawaii.

      Cooked cabbage is bland, so some jalapeno and green onions will help to give some flavor to the casserole.

    This looks like a wonderful breakfast casserole as well--it would be great with a couple of sausages on the side or on top. (try a split grilled beef hot dog or a sliced kielbasa)..it reminds me a lot of the Japanese cabbage pancake: okonomiyaki--a delicacy that sells for large sums of money in restaurants here in the US (like $20 a plate)--and it is so easy to make...thanks for sharing this great idea for food that holds up...dts/usa

    Can't wait to try this! It sounds amazing!!! In the 1980s when we lived in Charlotte, we used to eat at a restaurant called Elizabeth's and she made the best cabbage casserole! We ate there at least weekly just because of that cabbage casserole! I've searched for years for what I believe might be have a similar taste. I even met Elizabeth nit too many years ago in Charlotte and asked for the recipe. She was thrilled to hear how much we loved it and said she would email it but she never did. Thank you!!

    I happen to be fond of cabbage - my recipe consists of cooking the cabbage in salted boiling water for 10 minutes and then I drizzle olive oil and a little black pepper along with a sprinkle of Italian Romano grated cheese- very delicious dish served with a small steak!However, I loved your recipe and I shall make it for my dinner tomorrow evening....     This recipe looks really good. I think I'm going to try it since we like cabbage at my house. I think it might make a good side dish for pork chops! 😉
    EDIT: made this casserole tonight as a side with pork chops. It was very good and my hubby liked it too. Next time I'm going to add half the swiss cheese into the sauce so it melts inside the casserole as well as on top. I like your idea of maybe adding some chopped scallions also.

    This was very good...I added onions and garlic because, well, that's what we Italians do!! My husband who is Ukrainian (and a great cook) also suggested to add slices of Polska Kielbasa and a little apple cider vinegar to the dish which I thought would be a good idea. I had leftovers and enjoying.

    We're vegetarians, so we used it for a main dish tonight; I did add a few green onions with their stems. YUMMY! My kind of dinner -- low-cal, complete proteins, green vegetable, filling, crunchy, VERY tasty! I can't wait til leftovers night. I calculated only 1,046 calories in the entire dish, perfect for anyone who needs to limit caloric intake. Thanks for yet another amazing recipe!

    I love this recipe and your channel. I've made this dish twice. For the third time I substituted diced apples and
    raisins for the cabbage. Also added a little brown sugar, cinnamon, vanilla and butter. The cabbage casserole
    will be a favorite at my house. Thanks much
    PS The apple-raison casserole was fantastic too. Very low calorie except if topped with ice cream.

    Just found this recipe and thanks for such an awesome dish ! When one is diabetic, retired and trying to stay heart healthy its really hard to find "great for you" food that actually satisfy w/o guilt lol but this one tops the list !

    This looks so yummy! Here in the North Florida panhandle, we're preparing our Fall garden beds, and my cabbage, and other brassica transplants are almost ready for the garden. I love cabbage and am always looking for new recipes! My 35 year old son lives with me, and he's not a fan of cabbage, but he just might like this cabbage casserole. I can't wait to try it!

    I love this recipe and your cabbage pie recipe too. Everyone in my family says they can't eat cabbage because of digestive issues. I love cabbage and I think it helps with my digestive issues. Oh well, their loss! They don't know what they are missing.....and that's more for me.
