    Hey Everyone!
    Next up was the Cabbages! Pickled Coleslaw is a fave of ours, we love to eat it on wraps with marinated chicken, it is one of our most favoured ways of preserving cabbage other than SauerKraut! I had some excess sweet brine as well so I decided to pickle some of the cucumbers we got in the hamper.
    Enjoy!

    “Plain on the shelf, then when you pull a jar from the shelf you can adjust it” is a great idea.
    Love your videos.

    I am so glad I watched this a year later, yay RUclips! I totally forgot about yoko okonami 😂 - those cabbage veggie pancakes, however you say it real fast. Time to use up that cabbage in my fridge.

    The cakes look really good. And the slaw in the jars is very pretty, a good way to ut some cabbage away on the shelf. Yummo!

    Nyssa, for the cabbage butterflies, try cutting white plastic into butterfly shapes and attach to a stick, place among the cabbages. Supposedly they are territorial so go looking elsewhere to lay their eggs. This has worked for me.

    • @OurSmallFootprint
      @OurSmallFootprint  Год назад +3

      Thank you Cathy! we bought the ones that are on the stick too, the fake white ones, it definitely seems to help! Covers seem the best bet, but my kids have a tendency to pull the covers back and not pin them back down! My current row has kale in it too and they go in and pick kale to eat and don't pull the covers back down heh.

      My father in law swears by a tennis racquet 🎾. Get the kids to wack the cabbage butterflies with the racquet.

      @OurSmallFootprint maybe you could put the butterflies up inside the covers so still available when kids will be kids and leave the covers back 😄

    Nyssa, you look sassy today... Good look! 🙂. We love this coleslaw, eat it similarly. I have reduced the sugar in my brine even farther.... And I use the excess brine for a ton of things... Makes a wonderful marinade!

      Yeah, I think I’ll scale it down again next time! And I totally hated not saving the excess brine I was just totally worn out and the fridge was full and Urgh! Lol

    I've made a natural weed killer using 1 cup salt with 1 cup vinegar. I don't know if your left over brine would work with the sugar added but might be worth a try.

    Yum to the okonomoyaki with some of that marinated chicken. Sounds great. I definitely need coleslaw on my shelves. I haven't grown any decent broccoli or cabbage for years. I'm trying in earnest this autumn because we can go through a lot of sauerkraut especially. Thank you for sharing lovely 💚

      I don't do fantastically each year with cabbage, I'm hoping I can find the right sweet spot to succession grow it, I love that it lasts quite a while in the garden, quite a while in the fridge and then even longer on the shelf!

    Yummy. I'm going to cheat though lol. I'm going to buy the coleslaw mix. I have a pinched nerve in my neck so maybe another surgery. Cutting all that up would cause pain. ☹☹ My husband watched with me and he said to tell you he admires and loves your setup. ❤

      Highly recommend, the first time we did a really small batch because I just wasn't sure, but now we try and always have some on the shelf! The last lot we did we added a bunch of things in too, turnips and radishes and some silverbeet stalks etc!

    Hi Nyssa, thank you for your canning information, I really enjoy these videos. Do you know if you can use calcium chloride in it's liquid form for pickling? If so do you have any idea of quantity? I use it in yoghurt making for a thicker yoghurt & use only a couple of drops....

    • @OurSmallFootprint
      @OurSmallFootprint  Год назад +1

      Hrmm I also use it in my yoghurt but have never thought to check! I’m not sure on that one!

    I noticed you are not using 2 clips per jar in the last several videos. Did you get new clips? My son lost his job in Sept. due to the business closing. Since it's just my retirement income we're living on we qualified for the food bank (free food). It took me 3 weeks to get up the nerve and get passed the embarrassment to sign up. It was a long wait in line during the blowing snow but there were so many people. I received 5 pounds of apples, 1/2 gallon milk, french bread rolls, 3 pounds of carrots, 3 heads of cabbage, 8 sweet potatoes, 3 pounds of onions, a pineapple, frozen peaches in puree, a bag of 10 pieces of chicken drumsticks/thighs frozen together, a bag of shrimp (the size of a raisin), 50 (1 ounce bags) of potato chips, cheetos, doritos, etc. and a turkey. We will have to give some away (to a friend that's a small farmer and doesn't have much) like the sweet potatoes, 2 pounds of the carrots, 1 large cabbage, some of the snacks and the shrimp. The only seafood I like in the world is shrimp but I like it coated and deep fried. And these are so small I have no clue what to do with them. They probably would be good in a stir fry but I can't look at them and eat them and my son doesn't like seafood except salmon. I thought of you because if you lived closer I know you would use all this. Too much for a family of 2. Right now the wind chill is 15 degrees and we've gotten over a foot of snow in the last 24 hours. It's not even winter yet so I think this will be a harsh winter.

      I tend to use a single when water bathing, and a double when pressure canning, but I'll put a second clip on if the one I put on doesn't seem to be holding the lid well enough! Sometimes its just about how many clips I can find at any one time lol! It's hard food banks isn't it, because you normally get a bunch of stuff in bulk and then have to find a way to use it, otherwise its just wasted too :S The small shrimp would probably be nice in like a pasta mornay dish, super easy to cook then!
      We got down to 3 degrees overnight the other night! so strange, but its almost 33 degrees here today at 2pm :O

    • @OurSmallFootprint
      @OurSmallFootprint  Год назад

      We make it regularly, it is very tasty, definitely not as nice as straight fresh shredded cabbage, but superb to have on the shelf, we like to drain it definitely, and it has a distinct sweet tang to it, but that goes with most things, it also works quite well to make okonomiyaki with in a pinch!

      @@norahalmquist1345 I’d have to check my notes to see what we ended up going with, but yes, definitely, I do still use sugar it helps keep it crisp etc too, but prob 1/3rd of the recipe linked I’d imagine that’s about what I cut the sugar normally! It is extremely sweet if made to the recipe
