  • hey guys, today we are making the infamous Taiwanese brown sugar boba ice cream bars with earl grey tea! This popsicle is totally worth making and perfect for summer!     ingredients / 材料:
    bubbles/boba 珍珠:
    - 1/2 cup glutinous rice flour / 半杯糯米粉
    - 1/4 cup brown sugar / 1/4杯黑糖
    - 1/4 cup hot water (add slowly and mix until a soft dough forms) / 1/4杯熱水
    - 1/2 tbsp corn starch / 半湯匙玉米粉
    - 1/2 cup brown sugar (to coat) / 半杯黑糖
    brown sugar syrup / 黑糖醬:
    - 1/4 cup brown sugar / 1/4杯黑糖
    - 1/4 cup water / 1/4杯水
    - 1 tsp corn starch + 1 tsp water / 1茶匙玉米粉+1茶匙水
    earl grey tea / 伯爵茶:
    - 3 cups water / 3杯水
    - 3 tsp earl grey tea / 3茶匙伯爵茶葉
    cream base / 鮮奶:
    - 1 pint light cream (heavy cream works too but it will taste thicker) / 430mL 鮮奶油
    - 1/3 cup condensed milk / 1/3杯煉乳
    - 1/3 cup earl grey tea / 1/3杯伯爵茶

    Thank you for sharing! If you can roll the dough out into a thin log & cut the log into small even pieces, then roll them into balls. It is easier to make the little pearls into even size. They will be cooked more evenly. Do the pearls need to be cooked until transparent? If you can use a smaller pot to melt & cook the brown sugar, it will be smoother because the corn starch mixture hit the melted brown sugar instead of hitting the heated pan. The corn starch mixture mixes well when the liquid in the pot that can cover the pot more at least 1.5 - 2 inches high. That will avoid creating lumps in the liquid & when cooking it longer, it will turn thicker. Overall, it's a good idea & nice job but you need a longer cooking time for the pearls & the thickened brown sugar.
