  • Join me for a trip into the salt marshes in France, in the region of Saint Gilles Croix de Vie. We’ll learn how salt is produced and harvested, and then it’s back to my kitchen where I will show you how to make a delicious salted caramel ice cream sauce!

    SALTED CARAMEL ICE CREAM SAUCE RECIPE
    Serves 6
    INGREDIENTS:
    1 cup white sugar
    1/2-1 cup heavy cream
    1 Tbsp Unsalted Butter
    1-2 good pinches fleur de sel salt (or coarse Kosher salt)
    METHOD:
    Add sugar to a high-profile saucepan. Heat on medium-high heat, until sugar begins to melt and turns amber brown. Swirling the pan as needed to distribute the heat. Once all the sugar has melted and you have a liquid caramel, set the pot aside and place it off the heat.
    Warm the cream (1/2 cup for a thicker sauce, a full cup for a thinner sauce) until simmering. Add the cream to the caramel sauce (reheat the caramel sauce if it cooled to the point of thickening.) Whisk the cream and caramel until combined then add the butter, whisk until melted then add 1-2 good pinches of the salt. Allow to cool slightly then drizzle of vanilla ice cream.
    to make ahead: make sauce as directed allow to cool. Then transfer to a microwave safe container, cover and refrigerate. To reheat, place container, uncovered in the microwave and heat on high at :30 intervals until warm and liquified.

    The San Francisco south bay still has some active salt companies. Colorful salt flats can be seen as you fly out of SFO. I remember learning about pickleweed during an ecosystem field trip in the bay. I didn’t know it was edible. Thanks for today’s fascinating vlog!

    Thank you for sharing and explains the salt collection process. That is a lot of work! I’m glad it’s still being collected by artisans and not just big companies. And, I know what’s on our dessert menu tonight! My daughter goes back to school (university) tomorrow. She will love making this with me.

    I think we call Salicorne , samphire in the uk, you can buy it fresh in the produce section in the supermarket, or near where I love you can pick it. It’s great stir fried! Gorgeous video again, Beth, I so look forward to them!! 💞💞🏴󠁧󠁢󠁷󠁬󠁳󠁿🏴󠁧󠁢󠁷󠁬󠁳󠁿

    Hi Beth, I'm just so enjoying your videos from France. Everything has been so interesting. I am truly a salt girl....I'd rather have salty than sweet any day but the combo of sweet and salty IS very compelling. That sauce looks so delicious! And I bet it SMELLS wonderful

    I enjoybthede types of. Adventures! I visited a salt Marsh in Cape May NJ with girls organization learning about the habitat. There was a hawk's nest that had fledgling in it! Anyway, the tour guide pointed the edible plant that you shared. She asked for volunteers to try it and I steped up and I nibbled on a piece. I Found it to be interesting flavor.
    Definitely add it to a salad, a cream vegetable dip or mayonnaise sauce for fish. The girls thought I was brave and the tour guide said she would accept an invitation for dinner and we all laughed, I love when things like this come full circle. Was there a link for the jarred product. I must make the caramel sauce. Make my own salted caramel sauce for my cold brew coffee. As always Beth TFS.

    Salt harvesting looks very picturesque. The smooth precise movements of the salt harvester, the basins and the birds. has there been a famous painter who made salt harvesters his (or her!) subject?

This region is dear to my heart since not a lot of Americans know of it (favoring Paris or the South of France) but I think the Atlantic Coast has so much to offer, while a bit off the beaten path, I think you can really see some wonderful things hear!     WOW!!! Fabulous as usual Beth and I LOVE YOUR tours and the sharing. Growing up in Brasil I did experience salt harvesting and that was a million years ago. As I remember humidity played an important part in salt harvesting, when the humidity is high the salt turns back to salt water. I'm assuming the humidity in Saint-Hillaire-de-Rez is low, right? Living in Florida I have seen restaurants that serve al fresco dining insert rice in the salt shaker because it absorbs moisture even faster than salt. The salt that says "when it rains it pours" is NOT sea salt but rock salt that comes from mines one of the biggest mines is about 2,000 feet under Lake Erie and that salt is then infused with Iodine. That particular company has now diversified to incorporate sea salt in its manufacturing portfolio, I guess it needed to keep up with the times. STILL nothing absolutely NOTHING compares with the old fashion harvesting of sea salt like the salt from France that you so kindly showed us...I forgot about the salted CARAMEL It looks positively YUMMY and I also had a giggle when you inserted Philippe's voice-over in the pronunciation of the ice cream. I so look forward to your videos Beth it really makes my day, so THANK YOU!!! 😘🥰🥰🥰

    So never heard of Salicorne but sounds like Samphire or "sea asparagus" which I used to be able to buy fresh. Definitely going to look for it when I go to St. Pierre et Miquelon. Such an interesting to tour.

    Ooooo…salted caramel sauce! As a kid, when everyone else was ordering chocolate or hot fudge sundaes, I always picked caramel or its cousin, butterscotch. I learned to appreciate hot fudge, but caramel is still my fave. I only have ice cream twice a year, but next time I’ll having it with this sauce. And I think I’ll moving the schedule up! 😉
    Loved the trip to the salt ponds. Years ago, we visited salt ponds in Grenada and it was interesting to see. I’m afraid they are no more due to development of the island. So sad because it was located in the part of the island with a wildlife/bird sanctuary.
    I’m in North Carolina and there are a couple of places here that collect salt from the sea, but neither uses the open ponds. They still do solar evaporation, but they do it in these little greenhouse-like structures. I envy you being able to just buy it right there. How did you resist the kind with the seaweed? I’d have had to give it a go!
    Can’t wait for next week - I was sad to read in your response to someone else that it will be your final one for this trip. Bittersweet…

    Et les biscuits sont des petit beurre LU ! je les adore ceux là. Pour ma part j'utilise souvent la crème fleurette je la trouve très bonne. Elle est plus douce en goût, moins acide que la crème fraîche traditionnelle. C'est une question de goût.

      Oh yes having a ball! :) The best way to store the caramel is to cool it down and transfer it to a microwave safe container and refrigerate then, pop it in the microwave at :30 intervals until heated through :). I hope you enjoy!

      Ha! Oh I'm so glad you like them! My teenage daughter bought them for me at Zara, claiming my other ones were "too granny!" they are a bit bigger than I'm used to, but they do a good job at hiding the wrinkles LOL! :)

      Great question! For cooking: Kosher Salt, for dry rubs, French Coarse Salt, for salads, dressings, and finishing, Fleur de sel! :)
