Tbh this is the first video I watched where they went back to the test kitchen post Covid, post the 2020 scandal/exodus. It almost feels like stepping into an alternative universe seeing all these unfamiliar faces in this very familiar physical space. Almost like going back to your old high school: the place is still the place, but the people you made those fond memories with are all gone. A strange feeling. (That said still good to see good old Brad, Chris and some new faces though!)

Brad! Taylor ham! What we call pork roll! Very local/regional ingredient. One of my favorite school lunches. It was called "pork roll on a roll with french fries," and I ate it with simple sweet pickle relish. Ketchup on the fries, but not on the Taylor ham. I was a purist when I was in grade school.

I would be really happy with every one of these . I don't like ciabatta and goat cheese much , but those are the only things I'd change. Probably my favorite breakfast sandwich is based on Korean street toast. Shred cabbage and a little carrot, add green onion and diced Thai chili, and a little salt and pepper. Crack eggs into that and mix. Cook into a bread shaped patty and melt cheese on top. Eat on shokupan with your condiments of choice which can include jelly, ketchup, cholula etc., whatever you like.

I was really intrigued with it as well and it's a great way to use up some goat cheese! I have this "muffin tops" pan that I like to use to bake eggs with for breakfast sandwiches and I think I'll make that frittata in it, then make the sandwiches and freeze for easy grab and go. 🤔
