Isaac Peress the Vietnamese have a special “baguette” they make that fits that description. Similar to French baguettes, but they use a mix of rice flour and wheat flour. Super crispy on the outside and pillowy on the inside. Few places make it properly, but man does it taste amazing when they get it right.

I got to try this. I tried to develop a pork roll and pineapple sandwich. Figured it would make a good basis for an iconic sandwich. I couldn't quite get it right. You need a way to dry out the pineapple and also to grill it without making a burnt sugar mess. Maybe it needs thinly sliced pineapple or even crushed pineapple. Also I'd go with a potato roll, though the size of a kaiser is nice for adding volume to a sandwich with intensely flavored ingredients like pork roll.
