What are your thoughts on scrambling your eggs but not whisking them before pouring in the pan? You just move with the spatula in the mid heat pan. I like to cook them and see the difference between whites and yolk cooked. In Costa Rica we call those "huevos pateados" (translates to kicked eggs) and it's similar but different to French style scrambled eggs.
I've seen plenty of Spanish style tortillas made like Devonn's, but never saw scallion seasoned oil before. Will have to give that a try at some point, and not just with eggs! Picture that going along with a scramble and put over rice, that would be lovely!

i'm normally not one of those "if you make this you have to get the ingredients at a farmers' market or fancy grocery store" people bc i think that's unrealistic for average income people for many dishes, but for french omelettes you NEED great butter & fresh, farm raised eggs. it makes such a massive difference. a french omelette with just eggs, butter, salt, and chives is perfect as is when you get good ingredients. doesn't need anything else
and since brad has his own chickens and can probably get fresh butter pretty easily (if not, kerrygold is good), it's easier for him to make a great french omelette than most people

So that spicy crepe is basically an Indian omlette. Put the chopped herbs in the eggs next time. Tomatoes and onions go very well too.

I grew up on these! they're lovely and We call them "huevos arrepentidos" ( Regretful eggs) here in Mexico!
