It’s weird seeing Claire so composed these days. On one hand I miss the sillier/goofier Claire who ran around with vague direction but on the other I LOVE the Claire who knows what shes doing and looks so much happier and less stressed with life
This reminded me of making sausages with my family as a kid. We'd make the sausage filling, put them in casings, and cure them in oil. And we'd always fry up the meat to make sure it tasted how it was suppose to. But we stopped as my grandparents got into their 80s and it became too much for them. No one else had the space at their homes. Same with making and jarring our own tomatoes, and homemade wine and grappa. I miss a lot of those traditions.

To eliminate the guess work when cooking english muffins in a pan or griddle: Check the griddle temp with an IR temp gun, look for 350-400F Cook dough 5 mins on each side Test for doneness if you must with a small internal temermometer, look for (190F/88C) Optional: pat sticky dough in a plate of cornmeal to avoid the need for parchment
I made the sausage patties (had to omit the fennel), and they turned out really good! I formed the patties onto wax paper, stacked them, and froze them in a gallon bag and it worked really well. I made about 12~ with the amounts directed. I wrote this recipe down in our recipe cards to come back to because it’s really easy breakfast prep and you can have the sausage stand alone and it’s still really good 💕

In Canada, we have a program through the forestry ministry, that if you opt-in for a survey, you get a lower property tax. All you do is have a ministry surveyor to your property with their little telescope, and they call out the trees you have and you tick the count of what trees you have. You get a tax break, and you get to know what trees are on your property.

Claire! Thank you for the tip about adding bacon to the mix! I always make my own breakfast sausage, and one of my favorite uses is to make a hearty sausage gravy. I always add bacon to the saucepan, along with extra sage, black pepper and maple syrup. I hadn't thought to boost the sausage with bacon at the start! Really appreciate the tip. Going to put it into practice tonight!

i dont ever remember having bacon in the house growing up and even in university/college never purchased it for home. but it was a real treat to get pancakes with a side of bacon when going out for brunch
