Breakfast Sandwich
4 Bacony Breakfast Sausage patties (recipe below)
4 slices American cheese
2 tablespoons unsalted butter, divided
4 English muffins, split
4 large eggs
Kosher salt and freshly ground black pepper
Hot sauce and ketchup, for serving
Sausage
4 ounces sliced bacon (about 4 slices; 113g)
1 pound ground pork
2 tablespoons finely chopped fresh sage
1 tablespoons maple syrup
1 teaspoon fennel seed, crushed under a heavy saucepan
1 clove garlic, finely grated
1 teaspoon Diamond kosher salt
¼ teaspoon cayenne pepper
Freshly ground black pepper

Racetrack Gas station. If you dont get it fresh though, The biscuit gets pretty hard in the wax wrap.
Always love a good sausage biscuit to start the day. Such a filling meal on an empty stomach with all the right flavors to be a great vibe right when the suns rising.

Watch the edge. It starts to suck in and show the "seam" where you would fork split it. That's how I can tell they're done.
It’s weird seeing Claire so composed these days. On one hand I miss the sillier/goofier Claire who ran around with vague direction but on the other I LOVE the Claire who knows what shes doing and looks so much happier and less stressed with life

I need a full video of Claire and Harris cooking together. Where Claire write a recipe for him and he makes it with out her help but with her commentary.
This reminded me of making sausages with my family as a kid. We'd make the sausage filling, put them in casings, and cure them in oil. And we'd always fry up the meat to make sure it tasted how it was suppose to. But we stopped as my grandparents got into their 80s and it became too much for them. No one else had the space at their homes. Same with making and jarring our own tomatoes, and homemade wine and grappa. I miss a lot of those traditions.
That all sounds like such a lovely time to spend with family - I hope one day you're able to pick up & continue your family traditions again :)

I made the sausage patties (had to omit the fennel), and they turned out really good! I formed the patties onto wax paper, stacked them, and froze them in a gallon bag and it worked really well. I made about 12~ with the amounts directed. I wrote this recipe down in our recipe cards to come back to because it’s really easy breakfast prep and you can have the sausage stand alone and it’s still really good 💕
So so good. Cooking over fire is literally one of my favorite things. Can't wait to make this homemade sausage. Thanks!
Breakfast sandwiches are my favorite, but I always switch between whether I want English muffins or biscuits 😂
Sugar Maples are the ones you want for making syrup. They have the highest ratio of sugar in their sap. In Canada, we have a program through the forestry ministry, that if you opt-in for a survey, you get a lower property tax. All you do is have a ministry surveyor to your property with their little telescope, and they call out the trees you have and you tick the count of what trees you have. You get a tax break, and you get to know what trees are on your property.

Cafe Duet, Stroudsburg PA. Two organic eggs, split and grilled Spanish chorizo, sharp cheddar cheese and baby arugula on a fresh baked roll w/ a touch of sriracha mayo. Best I've had of late, besides my own. Claires looks absolutely amazing!! Breakfast sandwiches are probably my favorite food group.
Claire! Thank you for the tip about adding bacon to the mix! I always make my own breakfast sausage, and one of my favorite uses is to make a hearty sausage gravy. I always add bacon to the saucepan, along with extra sage, black pepper and maple syrup. I hadn't thought to boost the sausage with bacon at the start! Really appreciate the tip. Going to put it into practice tonight!

I haven't watched you since BA. Randomly found you again and I'm glad. Fav. Breakfast sandwich is a local coffee shop. Everything bagel, scrambled eg real thin folded to make a pocket of cheese (blend of cheddar and swiss??) and bacon and add a siracha but choose a sauce of your choice.

No one will ever be able to convince me that American cheese is not the best cheese for these applications. Nothing beats it on a breakfast sandwich, a burger, or a grilled cheese.
I generally use a morter and pestle for pulverizing seeds -fast and consistent in texture. Recipe is fantastic, thank you!

These look so good! :D I've never had a breakfast sandwich before and it looks like something I need to try. If I ever have a cooked breakfast though I always put the egg, bacon, sausage and baked beans between 2 pieces of toast.
