INGREDIENTS:
2 oz softened cream cheese
1 large egg, room temperature
2 tbsp powdered allulose
¼ tsp vanilla extract
Whipped cream to top
DIRECTIONS:
In a microwave safe ramekin or mug, mix all of your ingredients and mix until combined. Make sure that your cream cheese is softened, or else you cheesecake will not turn out.
Microwave for 90 seconds, then allow to cool for 10 mins. You can slo place it in the fridge as well. Top with whipped cream, or enjoy with fruit!

I'd recommend adding a splash of lemon juice to your batter. It gives it that little twinge of tart that cheesecake is known for. 😊

@@drac464 Searching for "NY style cheesecake", I looked at the first three recipes in the search results, and they all had lemon. And I didn't click beyond three. Oops.
This is so far from a cheesecake flavor that even lemon juice won't help. I actually try this recipe and put a splash of lemon juice because that is more traditional. HORRIBLE! Tasted like scrambled eggs with sweetener and vanilla in it.

These are fabulous! I make several at once mixing the batter in a bigger bowl, for a crumb topping I mix a little melted butter, powdered sweetener and almond flower and microwave separately till it browns a bit and crumbles nicely, sprinkle it on before I cook the little cakes, it adds a nice touch. Looking forward to this little treat really helps me stay on track the rest of the day so thank you😊

Fast, and easy to make. Great portion size, especially if you love cheese cake and can’t stop at one slice! Thank you, Myra for a great, easy recipe! 🙏
If you want to improve this recipe by 1000x you just need to add a few steps and a few tools. Separate the egg yolk from the white. Thoroughly mix the egg yolk, sweetener, vanilla extract, cream cheese and a tablespoon of water until it's a nice creamy texture. Then beat the egg white until it has stiff peaks, and then gently fold all the ingredients together with a soft spatula. Then place into a ramakin and microwave for the 90 seconds, however place an ice cube on a towel or a moist towel inside of the microwave with the ramakin before microwaving.
Doing all of this will provide you with a far better, fluffier texture and the mouth feel alone will elevate it to higher levels. It will be airy and practically melt in your mouth almost like cotton candy. Also, if you use Swerve sweetener or any sweetener you prefer of course, some high protein milk and a bit of heavy cream you can make your own delicious, low calorie, high protein whipped cream.
in regards to the whip cream in a can, carageenan is toxic and is usually in these canned creams. your option is much better.

@@lpg8518 Here's the question you have to ask yourself. Do you want it simple and taste okay, or do you want it slightly complicated and taste like heaven when you're done?
The extra steps I proposed maybe adds 5-10 minutes of work to it, but is extremely well worth it.

If you're dying for a crumb base, this might work. I'm new to keto so am not sure if you can have these ingredients. Please advise.
I once made a cheesecake that had a base made from dessicated coconut and melted chocolate. It was so good. For the purposes of maintaining a low blood sugar you'll need to buy a sugar-free chocolate. Personally I'd go for a pure chocolate with NO substitutions for the sugar. Just 100% chocolate.
I can't remember the amounts (this was 30 years ago and I've made a lot of cheesecakes and varieties of bases since then) but you basically melt the chocolate in the microwave and gradually add in coconut until you get a thick but malleable consistency.
Put a small amount in the base of each ramekin or cup and press it on the bottom and up on the sides a little using the back of a spoon. Place in fridge for at least an hour. Once it's mostly hardened (you may need to freeze it- I've never re-cooked it in a microwave since I made mostly fridge-set cheesecakes) you can then pour over the cheesecake batter and proceed as per the instructions here.

You can make dairy free whipped cream so easily! Just use canned coconut milk, whip it up with vanilla extract. Yummy!
Yes, Aldi's sells coconut whipped cream in the squirt can, just like the real !
Do you add a keto-friendly powdered sweetener? I find the coconut milk won't whip up well without it. One thing I learned somewhere on Pinterest is to chill the can of coconut milk to help it whip up, but to also add some sweetener.

Yes, canned coconut milk and a stick blender… But you must let the fat of the coconut milk separate from the watery part, so don’t shake the can before you open it, skim it off the top, add a tiny bit of sweetener and vanilla if you like, then blend/Whip it!

I make the little cheesecakes fairly frequently---maybe twice a month-ish---and I use my stick blender to smooth it out. Might be overkill, but until I get myself a pump-up-and-down whisk, the stick will do nicely.

to make your own whip cream pour 1 cup of heavy cream in deep bowl you can use a whisk in your hand mixer .it only takes a few min to get the whip cream of your choice ! to make real butter just continue whisking until you see yellow in the cream continue on till you have water liquid in bowl from cream,it is seperating the butter from the cream. yummy good. i sometimes add cream of tartar to the whip cream to get it done quick.

This is Keto, no or low carbs not healthy cream cheese has is high in fats if you’re a kid you shouldn’t be doing this, just eat whole food, as our grandparents did, make simple dishes from scratch and a lot of fruits and veggies, your body needs a little bit of everything to grow up healthy, but again Whole Foods.

Why don't people talk about how much it costs to be on a keto diet. Buying all those ideal ingredients costs as much as getting a full shopping kart of regular food. It's unfortunate because I eat so much less now but still spend the same amount of money on food.

You should still save money on keto. When my body is in ketosis I only eat once a day. I usually sometimes add fat like coconut oil to my meals. I also sometimes do a smoothie with frozen avocado in it. I start my morning off with a bulletproof coffee with coconut oil in it. I get my coconut oil from Dollar Tree for $1.25. If you're spending more money or the same amount on food you're not doing keto right.

Coconut whip cream can be made from a can of full fat coconut milk placed in the refrigerator so the solid (cream) separates from the liquid. Then the solid can be sweetened, vanilla extract added, and whipped (I use electric mixer). I've made it several times and it's a decent substitute. I'm not sure the brand right off, but the coconut milk in a red can works best. I've tried other brands and couldn't get some to separate.

I use the flavored packets for water instead of adding a sweetener. I made a Cherry limeade milkshake. I think I’ll try an orange or strawberry for this recipe. I think I’ll use egg white and whip it before I mix it with the cream cheese. Probably pre whip the cream cheese before too so it will mix better.

Thank you Mayra! I'm a little late to your awesome low carb cheesecake recipe 😋, but "better no-bake than never!" Had to share my swaps with you because I basically didn't have any of the ingredients. Except the egg. Didn't have cream cheese, so swapped in part-skim Mascarpone cheese. Didn't have vanilla extract or the sweetener, so I swapped in a couple splashes of no-sugar, "sweet cream" flavored coffee creamer. Combined everything with the egg, and after 90 seconds + about an hour in the fridge and a dollop of CocoWhip , the cheesecake was ON! :)

HA! I doubled the amount, which made 3 half-filled, 4 oz ramekins last night! Mine needed 2.5/3 minutes in the microwave, but that could be because I also added a little bit of Meyer lemon juice/pulp to my "batter". Once ready, I then topped each "mini" with some sour cream before chilling for that genuine "New York cheesecake" flavor! Even added a few sugar free dark chocolate shavings & a dollop of CZ sugar free raspberry syrup to the top before serving. PERFECR DESERT!
