the guy who did this probably used a type of process that slices the sound into two tracks, one for instruments (what we're hearing) and one for voice (the other track). The process is not perfect and that explains that what you're probably hearing is the faint remnants of the voice track that got left behind in the splicing. That could also explain why we can hear the claps at 3:15, but maybe that was intentional.

It's just practice. I got serious about piano about 10 years ago and could barely play a simple progression. Right before the pandemic hit, I spent months transcribing Queen songs and now I have an entire set done that's basically a flawless rendition of the original recordings! Just keep at it.
