my celebration for elderflower every year is a drink. Maybe you want to try it as well ?
Take some elderflowers, rose petals and slice up 1 to 2 lemons (depending on how much you make)and put them in a big jar and let it infuse for at least an hour with water. I always make a 3 L jar with a hand ful of rose petals and 4-5 elderflowers and 2 lemons. I often press one lemon and slice the other one up though. This alone is an amazing drink (very refreshing and looks beautigul in the jar). But I found out it is an absolutely delight to mix with kombucha ^^. You can mix it just up if you don't need any frizzyness (my favourite) but if you want it frizzy you leave out the lemon at first and add some sugar or syrup and let it further ferment 1 or 2 days (to your taste) with this addition - for this I especially recommend Jun-kombucha as it is known as the champaign of kombuchas and complements the delight flavour. If you like, you can add some drops of lemon when serving the bubbly drink. Just try out what suits your taste the best.

small trick for your garlic: let it grow until the leaves turn brown because it´s still growing and it does make quite a big difference if you leave it in there for one more month or so :)

@@cupidok2768 I guess it really depends on the area you live in. I live in a pretty poor rural area in Appalachia and its honestly cheaper to have your own farm than buy your food at the grocery store, and much more sustainable too. I know a few friends in college though from outside of this area that are shocked to hear that though, since having your own farm where they're at would be an expensive endeavor.

I can see you are in your element Gaz. The intersection of garden and food. I have also noticed you have been trying to reach those two RUclips audiences. I’ve noticed you’ve been strategizing how to show this new found passion while still holding the food (cooking) only audience. I personally know how challenging that is. I love the integration you managed and it flows smoothly from onto the other. On this video specifically I think the title has a great chance of getting to the gardening only people, so I wondered if jumping right into the garden tour part in the first minutes would have been even more beneficial and then going into foraging cooking. I say this because I feel that is the set up for the click. At the same time I know that jumping into food prep as you did should be better at retaining your traditional audience. Sorry I had to bring up RUclips strategy, it is just something I’m usually aware of.

I love the garden videos, the candy beets make great beet chips/crisp. The carrot tops can be used too. Your chickens look so excited to see you come up, they follow you everywhere and that’s wonderful. The butterflies show the fertility of the land, they are beautiful. I must say the squash zucchini that you made look excellent. The filling inside seems amazing as I really enjoy the idea of a vegan ricotta, and what an awesome crunch. Your food is always amazing and always looks delicious. You also have a nice glowing tan from all your outdoor activities. Thank you for your great content, it always brightens the day just a little bit more.

Okay, the champagne and elderflower agar agar jel looks refreshing and delicious. That was great to see, as the vegan jello’s are not always showcased. A jam for bread could probably also be made with pectin in place of the agar agar. This gives great ideas to try, and the incorporation of the champagne with the elderflower is always a great delight.

I've noticed that I don't view you as just a cooking channel anymore. You're role model for me and your videos always remind me of the lifestyle i strive to have. What I really want in life are not fancy cars or other status symbol. Instead, I just want to grow my own food in a nice but humble house on the countryside. One of the things I really miss living in the city is waking up to the neighbors chickens having a chat out in the garden every morning. Oh, and I love chard, too. I have made stuffed chard leaves, similar to stuffed cabbage leaves with rice/grains etc and then freeze them. I am happy you are enjoying your lifestyle. It is so wonderful to go to the garden and decide what you’ll be eating that day.
I do love too survey my good works after a day of lawn and garden activities. Seeing the progress and thinking back on the labor and trials. It’s a good feeling.
A good 40 years ago, my mother would use exactly that elderflower, make pancakes with it. She would just wash them, dip them into the batter and throw them into the frying pan cooking a pancake with a elderflower embedded in it. You could grab it at the flower parts and eat it like that.

I cant help but see art all over this video. The recipes: edible art; the garden you've grown from the ground up: green art; not even talking about the visuals and overall production... Quality and passionate content you serve everytime. You're such an inspiration, keep doing you! 💛
you can also plant perennial or annual plants for insects in between or at the side of the beets
one example is blackthorn. it is serves a lot of insects and birbs as food. also, you can make liquor out of it.
It is always important to have plants that blossom at different times of the yr so the insects can have food the whole yr.
Aww the part about the zucchini flower.... I lived many years by the seaside with my grandparents in a Northern region of Italy. My grandpa used to grow these flowers on the balcony (the air from the sea was amazing for his plants, the balcony was like a jungle) and when the time came, my grandma would pick the flowers and fry them. You just made me travel back in time.
I spent part of my childhood playing on my grandparents balcony between all these amazing plants and helping my grandmother to cook the edible ones

You could add some trees or bushes to the chickens. They naturally come from the forrest and love the shade and aslo some fruits that drop.

Growing winter leafy veg like chard and kale is also a good source of food for my chickens in the winter as well as bringing beautiful colour to the garden

I don't have garden access and learning to grow in pots. A lot of failures but I grew courgettes one year, they were so tiny but tasted the best I've ever had. I'm succeeding with redcurrents just now but fighting with the ant kingdom. I totally get your satisfaction.
