Since covid my balcony become my garden. I grew tomatoes, cucumber, radish, courgette, squash, potatoes, spinach, a tons of salad. This year I add watermelon and melon, with flowers dahlia and mint. This journey helped me to reduce my stress, to learn patience, to never give up and that a failure is a lesson not a bad thing.😊 I hope God will give me my house soon to enjoy it more. You do great Gaz!😊
this video is just a delight to watch. It was comforting, visually stunning, and informative. Gaz, thank you! much gratitude to you for sharing your sincere, humble spirit with the viewer!
Just wanted to add that I have been a follower of your channel since very early on - I believe for over 6 years or round that. I have enjoyed watching your amazing Recipes and have purchased a few of your books. But now you have dived in to gardening and living close to the earth. My heart is In the same place! I actually feel that human housing structures should be relatively small and serve a place to be during inclement weather. I believe we should live out side as much as possible and as close to the land as we can. You help to inspire and keep that flame alive in me! Thank you and Rock On!
👏🏽👏🏽👏🏽👏🏽 I left a big metropolitan city and now grow a majority of my food in the country. I’ve never been happier, my health drastically improved and so has my disposition with other people. I know it’s not for everyone, but for many of us we were not meant to live like a sardine in a cubicle in a big no nature city. Thank you for these wonderful videos and I’m wishing you all the success. Happy growing!
It’s funny when you say how your mental health has improved since moving back to Wales and becoming self sufficient. I think it really comes across in your videos, you seem so much more relaxed and confident in yourself. Total inspiration! Love it!
I love everythng about your channel: from the gardening and cooking to the pottery bowls you use. Just beautiful. And of course your sunny personality is just so uplifting. Thanks, Gaz.
I'm in the Italian countryside from three months now and I can't agree more with you! Work hard on soil, be more self sufficient, growing our own food is the best way to live, even when the climate is not on your side! Have fun with your journey! Thanks for what you do on YT!
You just need to adjust to your climate and the micro climate of your garden. Did you know cabbage and potatoes grow like crazy in Alaska? It's the cooler weather and the long summer days with a lot of light. Th
The weather in Italy has been crazy in the last few years so it's becoming more difficult to grow plants 😭 I hope it will adjust a bit in the coming times
0:00 - 1:05 That was some really fine writing at the start of the video, Gaz and Tom. Very poetic and eloquent. Your self-sufficient life in the Welsh countryside truly looks idyllic. And now, it looks like you’ve given sanctuary to some chickens…how kind & rewarding!
my mental health improved just by watching this :) this year i planted sunflowers from seed, they are starting to blossom and i'm so happy! thank you for another inspiring video!
For anyone that isn’t lucky enough to have a garden or balcony, I recommend window boxes - I have two self-watering ones, where they have a reservoir underneath, and even though they’re not big, you’d be surprised what you can grow in them! And they end up like a little garden with insects and everything. Add a couple of potted herbs on the windowsill inside, and you have your own mini kitchen garden :)
I love how soothing and educational this video is. It's so apparent that you and Tom both have a deep passion and love for what you're both doing. Bless you both. The attention to detail and time taken to create these videos is greatly appreciated. Grateful to hear your mental health is doing better because of your connection with Mother Earth. Peace & love, Dominique
Squash, beans, and corn. That is what the ancient natives grew together. The squash, and beans fertilized the soil, the corn stalks gave a stalk for the vines to grow up on
It’s so nice to see a vegan who’s also into self sustaining and growing food. I really struggle to find many people on here like this that are also close to my age. Thanks gaz for all the inspiration ❤ I’ve been waiting for a good kimchi recipe too, can’t wait to try it. They are so expensive in the shops and I always worry that the culture has been killed off.
I’ve never been so inspired and motivated to finally grow my food on a bigger scale! I’ve been dreaming of this for years, thank you for materializing it and showing us the way! So much appreciation 🙏🏽
Not only have I loved the evolution of your channel but watching you grow in so much confidence over the years has been lovely to witness. Keep up the great work Gaz! ❤
Love this! And thanks for the elderflower recipe, It's my favourite thing in the world. For 3 years I've been foraging elderflower and drying some to have for tea all winter and using the rest to do elderflower cordial. Have just finished doing 5 litres of it! Going out to collect some more to try this brulée now haha
My garden is absolutely my favorite place to be! Even if I'm not actually doing any work, I love just observing my plants and all the wildlife that lives in the little habitat I've created. There are so many birds, butterflies, bees, wee little spiders and other critters, I never get bored watching them! Also, your new friends are lovely, and very, very lucky! 😊
Also, the chips will strip alot of nitrogen from the bed trying to break down. adding high nitrogen compost like coffee and manures from your animals will help combat that.
I have to admit I'd never heard of you prior to stumbling upon one of your video's, Chef Escaped Covid Lockdown. It was so satisfying and actually calming, I'm going to be a continuous fan from now on. The setting you work in is breaktaking.
Love you stuff Gaz, but have to share my concern with wood chips under only 4" of soil! Its a risky move as you have lots of nitrogen robing action going on as the wood chips decompose. It can also cause root burn from the heat! If you want to take a safer route I would recommend: - Same set up but do it in late autumn, this leaves time to decompose before planting in the spring - OR, Do at least 8" of soil and use large twigs and branches instead, these decompose much slower. Of course your method can work but it can be a game of roulette
I so resonate. I live on an acre of land that is for sale (for way out of my budget) but have an agreement with owner to let me farm it until it sells, at which point I'll have 3 months to move. I made that choice knowing the risks because I've had a longing to get back to the land. I have no regrets and have healed so much being here these past 8 months. I'm gonna ride it out as long as I can and continue to grow organic nutritious food, and just trust the journey, wherever it takes me. I'm healing the land, and the land is healing me, without separation.
When starting a new bed, you can also bury chicken poop and their eggs ( since you vegan and maybe dont eat them??) and kitchen scrap into the woodchips. they will help them break down
Just bought a house with a lovely small garden in the back in South Wales and cannot wait to start growing my own stuff! I’ll get a lot of inspiration from you, thank you Gaz
I am a sucker for garden videos, and share your passion. Gardening is my way of staying sane in a mad world. Growing extra food and bedding plants and sharing some freely is my quiet revolution. HOWEVER! Your introduction mimics a line from a song that irritated the H out of me when I first heard it on Sesame street when the children were small. “All I need is a rake and a hoe and a piece of fertile ground”. YEAH RIGHT. For most gardeners creating soil fertility is 90% of the work.
Young man, I applaud your efforts to grow and eat clean food. Well done! My honeysuckle is bursting out right now. I have made honeysuckle nectar and I am going to try a honey suckle creme bruelle.
I love this shift in your channel that focuses on the earth and growing/foraging things. I don’t know how close you are to the sea, but I live on the coast in Nova Scotia, Canada - and forage for lots of things at the seaside to help in the garden. Sea buckthorn is terrific for cooking and is super nutritious. Another thing we collect is sea truffle, it grows on certain types of seaweed. Every Autumn, I gather seaweed from above the high waterline and cover my garlic and asparagus beds with it. It helps with weeds and is a great amendment to the soil. I love learning about gardens, I have an urban-type garden here in Halifax - but it’s amazing how much you can grow in a small place…( I also do a bit of guérilla gardening and plant raspberry bushes in the brush near my home so everyone can enjoy the berries (and I don’t have unruly raspberry bushes taking over my garden 😅) I love your channel and can’t wait to see your chickens thrive in their new home. Looks fantastic.
My tip is to use your vitamix to blend up the weeds/greens/tops with water and pour it over your plants. It’s like a compost tea. I make green smoothies every morning and rinse out the excess in my plants and I notice a big difference!
Glad to see you using grass clippings as mulch. That is probably what’s contributing to nitrogen to balance out the wood chips carbon. Stellar video my friend.
It's been wonderful watching your journey from the beginnings of your vegan cooking vids all the way to this, I appreciate all the videos I've watched and love that you've come to such a wholesome place. Literally living the dream!
The end got me into tears. You are a beautiful soul. Thank you Gaz ❤ The girls are adorable! Will look forward to hearing their story in another videos. x
Its so good to see you in this beautiful environment. You seem to be really happy and enjoying life there. And your videos really transport these feelings. If Id somehow get a lot of money, I would choose exactly this lifestyle (but without RUclips, social media, writing books, working as a Chef or all the other work you do😂)

Are they rescues? What about the sheep briefly pictured in the video?
@ajvintage9579 he said they weren't in a good place before, so let's hope they're rescues. I guess we'll have to wait until he makes a video on it.
