One Way to Make a Puerto Rican-Style Whole Roasted Chicken

- Ingredients:
• 1 3.5-4lbs whole chicken
• olive oil
• 1.5 tbsp sofrito
• juice of a lemon
• 1tsp per pound of Adobo (or any other garlic-based all purpose seasoning)
• 1/2 packet sazón
• 2 tsp garlic powder
• Onion Powder to taste
• Black pepper to taste
• Oregano to taste
Bake at 375 for about 1hr & 20 minutes or until nice and golden.

When you put the chicken in the oven was it covered or uncovered?
Uncovered!
Why did you cook the chicken with the back side up?
Because the juices tend to sit on the bottom of the pan. Since the breasts are the driest part of the bird, I want them to absorb as much liquid as possible. Hope that helps!
