Mari, did you stretch out the discs to thin them out a bit? I had used the Goya brand a few years back and thought the dough was to thick. They weren't coning out flaky like our normal empanadillas. I got discouraged and didn't do them again. Those look delicious. Yummm.

Because Puerto Rican Pastelillos (empanadas) original method does not call for eggs or egg wash - a bit of tomato paste can be used if the person making empanadas wants a bit more consistency vs runny. Is a matter of preference.
A cauldron or caldron is caldero in Spanish. I love my set. Easy to cook in and easy to clean. Last longer than most cookware. I have one from my grandmother's kitchen.
