Just found your channel. I was looking for possibly what chili or tomato sauce Mark Weins was putting on a kabab in Istanbul and found your recipe (which I want to try.) I then clicked on this one. Not making this up I stopped the video and went to get a pound of ground beef out of the freezer. I have all those ingredients and I am making this today. It really looks great.
I made it today and what an amazing taste, thank you. Way better than Koobideh in oven or any Kebab in oven. I added a tea spoon of smokey paprika that worked well too.

I think he added saffron oil, the way it looked. But as an Iranian seeing so many people do this (if you choose to add saffron, that is optional but gives a heavenly aromatic taste) you just need to grind down your saffron to fine powder (adding a bit sugar helps a lot to ease the process) and add a tea spoon of boiling water and let rest for 10 minutes. That is the way they add it to all the dishes. And it is so dominant a small pinch would do for a 4 serving.
My ex- mother-in-law taught me to add tomatoes once you flip the meat and divide it. When it was almost done, we also added eggs to cook, about medium. Then we ate it with bread. She was from Tehran. I know different province's have different variations of the same recipes.
Exactly, that is the way I make it too and I can tell you why they do it like that. In Iran people tend to overcook the meat, and that way the meat turns a bit hard if you follow the usual methods here . Adding tomatoes is very helpful to get a softer bite if you want to go over well done.

THIS IS the way should be made, when i was a kid all Persian people in IRAN used to make like this BUT in videos in you tube i see they make Sause with tomato paste an all that shyt & pour it on the kabobs in pan ...dont make any sense , because in end usually they slices tomato on kababs & some peppers 2 , u don't need the Sause on top of that 2 ..u didnt do it here ..but usually done like that with tomatoes

Very hard to work with frozen/thawed mince as it will fall apart, better to make meatloaf, burgers etc
