    One of my best friends growing up was from Iran. His mom is the nicest woman ever, and almost every time I stayed over she would cook persian kebab with persian rice, and serve it with a big fried tomato on top of the rice. To this day I have never tasted anything better in my life! Seeing this video brought back a lot of happy memories. I have to try to cook both the rice and the kebab at home.

      Must have been chelo koobideh. One of my fav dishes of all times. The butter and tomato on the side, the kebabs, the saffron rice and sometimes, sumac to sprinkle on top. Yumm! Nothing ever comes close.

    I made this for a family gathering yesterday--not a single grain was sticking to another, they were perfectly steamed and not raw, and one person was convinced that I secretly got this rice catered because of how perfect it was!!! Thank you!!!

    Best video and authentic Persian way of making the Best basmati rice ,,,, I am Dakota Sioux Indian ,,,, my husband was from Shiraz ,,,,, he made the perfect rice every time and
    he patiently taught me how to do it too..... went through a few trial and errors before I finally got it right.... He died 7 years ago ....miss him still ....always will. ..... we learned
    about each other's culture .... and foods.... We had an Native American Indian and Persian household .....

    Now I love Thai, Chinese, Japanese, Korean and all that rice, but there's something so fluffy and light about Persian rice. I could just eat this stuff forever.

      Elijah crump funny. I’m Hispanic and my mom used to make rice almost every day but we don’t get tired of rice because we make it so many ways so it isn’t just white rice 🍚 all the time.

      @@Orlanzepol123 Hi Orlando. Persians do not eat plain rice alone. There are dozen or so stews that you can eat plain rice with. Also plain rice is served with several kabobs, barbecued meat. Another dozen dishes uses rice with mixed ingredients. Plain rice can also be cooked without straining by adding just enough waster and far less salt.

    I first tasted rice in Iran in 1967 while going overland to Australia and have never tasted the same anywhere else since. Thanks for that method...wish you well.

    We just discovered this amazing Persian restaurant. I've loved Persian food since I was a kid, but now I'm super motivated to learn how to make it so I can eat it any time I want. We have said over and over again, how insanely amazing just the rice alone is, and now I'm ready to make it for our next feast.

    THANK YOU!!!! I am married to a first generation American whose parents are from Iran, and my mother in law is one of the best Persian cooks in the world. She has tried to teach me how to cook Persian rice for over 11 years and I never got it. Attempted MANY times, but never comes out like hers. I have great hopes that my Persian rice that I am attempting to make tonight, based on your video, is a equal comparison to hers. I cannot thank you enough for posting this video!       Of course it will be, look how much effort to make it taste good? not just throw it into the rice cooker. Far East Asians they dump it in water and that's it... far west Asians and Africans are all about the flavour.

    I have so much appreciation for this rice. I fell in love with it a year ago but couldn't re-create it. I can't wait to try these techniques. This just shows that this rice is also a labor of love...truly surprised by the saffron sugar water....i thought it was a different rice! Much appreciated for sharing!

    This is a great video of showing how to make the best Persian Rice in the world! For years I have been trying to do it like my family who are Iranian. I've watched them do it but never seemed to ace it when trying. Surprisingly I've got doing tahdig down to a science (which was not shown). Importantly watching your video has guided me through the gray areas of their method.
    If you do another video of rice show a version with the option of making rice with with Dill and/or Lima Beans.

    How could anyone hit the dislike button on these videos? I love my traditional Persian rice and I am Persian from a very old school pure family. This was the perfect way to make Persian rice which my grandmother taught me. Your videos are fantastic Henry thank you for making them. This video reminded me of one step I had forgotten and I can't wait to try it and see how much it improves my rice.

      Yeah... our food taste good but... it's also a great way to get fat. Doesn't kill you right away like western fastfood but by the time you are in your fifties you are looking forward to an awkward belly.

    Hey Henrys. I am from Iran and I am so happy that you cooked Iranian rice. first of all thanks a lot for teaching us. secondly, your saucepan is not good for cooking Iranian rice but you are so professional. thirdly when you want to throw rice on the filter please wash your rice with Lukewarm water. finally, when you want to split some oil on the rice please use the warm oil. all the best for you my dear friend.

    Very interesting! But such a long process! I think I make my rice in 10-15 minutes! But will try it! One thing for sure is that with all that amount of rinsing pre and after, you are surely removing a great deal of arsenic from the rice!

    Had a friend from Afghanistan. The way how he made rice was so intriguing to me. He basically did it like this but i think he put potato slices on the bottom of the pan and the rice like a pyramid on top. Then i tried it and it was phenomenal. The texture, the taste how they seperated was just out of this world looking on how to do it ever since. ill try this recipe

      Oh yes the potato is very common in Iran as well. Some even add a piece of lebanese bread under it and it crisps up really nicely.

    I'm glad that you showed how to wash rice, because in every cooking program on TV/social media they don't show or just simply dont wash their rice, meat/fish and vegs. I hope more people will do the washing at their house too.

    My Indian grandparents always poured the water off the rice, then put it back on the stove to cook. Wow. I've never seen anyone else do it until now. I am going back to my roots.

      just boil with water then drain it and cook with oil for another 20 or 30 minutes depending on volume

    Thanks a lot for your very detail cook advices. Also when I a liitle bit harry, after boling rise phase, I've use microwave - on almost minimum level for 10-15 minutes with oil add also. Result is a same - Tasty separate rise

    Had no idea it was that involved. Being Korean we just wash it, throw it in a rice cooker, set it and then 20 min later it’s done. But this is some good stuff!

    Great video :) There is no better rice then Persian rice, its so yummy. I do the same way but instead of oil I use butter and instead of tea towel i use kitchen foil (in my opinion works much better as it seals the pot properly) :)

    I love the fact that he practically uses every grain he has! It drives me nuts to watch cooking shows where the chef partially scrapes the ingredients whilst demonstrating a recipe. It's a bit illogical. I adore Persian rice! It's like none other! Yum!

    loved it and I am trying it now! Quick question, When you started steaming you said around 15min but then it stretched to one hour is that right?

      Steam for 30m. If it still doesn't look right then steam more. You don't need exact time for this technique. Just follow what looks and tastes right.

    Beautiful rice. I much prefer using clarified butter to any type of oil though.

    I love this method of cooking rice. I never knew to put a towel over the rice and let it steam out all the water after boiling the rice. Thats a great technique. Thank you :)
