Ingredients:
2 Cups Basmati or Long Grain rice
200ml Concentrated Chicken Stock
3 Garlic Cloves
2 Brown or Spanish Onions
2 Plum Tomatoes
2-3 Black Limes (Loumi)
2 Bay Leaves
2 Cardamom Pods
2 Cloves
1 Green Chilli
4 Tbsp Lemon Juice
2 Tbsp Butter
2 Tbsp Vegetable Oil
1 1/2 Tsp Salt
3/4 Tsp Ground Turmeric
1/2 Tsp Black Pepper
Directions:
1 - Wash your Basmati rice, 3-4 times until the water runs clear.
2 - Peel and dice your Onions to a medium-small dice
3 - Deseed and dice your tomatoes into small pieces
4 - Slice your chilli into small pieces
5 - Add your Butter and Oil to a pot on medium heat
6 - Once melted, add the diced onion, and mince the garlic cloves and add in
7 - Saute for about 5-7 minutes until the onions have softened and wilted. Do not let the onions brown
8- Add your Green Chilli and diced Tomatoes as well as the Black Limes, Cardamom, Cloves and Bay Leaves. Mix well and saute for 3-5 minutes
9 - Once the tomatoes have softened add the Salt, Black Pepper, and Turmeric. Add the rice in and stir to combine.
10 - Add your lemon juice to the pot, then add enough stock to barely cover the rice. Top up with water if required.
11 - Turn the heat up to high and bring the pot to a boil. As soon as it boils cover with a tight fitting lid and turn the heat down to your second lowest setting. Allow it to steam for about 20 minutes
12 - When 20 minutes are up, remove the lid and fluff your rice up with your fork. Place the lid back on and allow it to simmer for 2 more minutes
13 - When the 2 minutes are up your rice is ready to be served.

A small note! This recipe in the description doesn't list the onions that you use in the video!
Taste test
"OH YEA!..."
That sums it up nicely.
You'll have the exact same reaction when you make it
Here from reddit! I love the fact that you made a youtube channel to cover middle eastern dishes!! Id love to learn more about them as they are my favourite kitchen! In Europe there are not many people who know how to cook like this, thank you so much for sharing your culture online!! I will definitely try this!

@@MiddleEats i served it with pan-fried chicken, much like your video! I did not take photos, it smelled so good I just wanted to eat it immediately haha! It looked very similar to your rice, maybe a little bit more pale yellow.
Sounds delicious, I'm happy you enjoyed it!
Could you please offer us a cookbook? I love your recipes!!

Had to figure out a good way to get some filler shots, happy it was clear what it was 😅
@@MiddleEats the whole shoot was done perfectly. Small mishap with the steam on the camera but in reality it brought the viewer into the shoot. Worked perfectly.
Haha yeah, I usually have a fan running for exactly that but forgot to set it up.
I just made this rice tonight and it turned out so good! My husband and I both looked at each other and thought it tasted just like his moms! ❤ thank you for the video and all the hard work. ( I replaced the tomato & green chili with frozen carrots and peas )
My husband made this rice and now it’s one of our favorites he makes it all the time
Greetings from Australia to both of you lovely people. I just want to congratulate you on your meticulous work in preparation presentation and description of all your recipes. Have to admit I've never seen work like this on any other channel. You guys should have a TV channel and I honestly believe it won't be long before someone from the media spots your work Al h'amdil'La Thank you from the bottom of my heart.
Hi, I just came across your Toum video and am hooked to your channel. Your personality is beautiful and your gentleness makes it easy to watch your videos. Keep it up and thank you for the lessons 🙏
Thank you, I really appreciate your comment! I hope you enjoy the recipes and the dishes.
Tried this today, and came out really well. Instead of butter I used ghee, and also mixed in vermicelli pasta with rice.
Just tried this recipe, turned out great, cheers! :)
Thank you Shellz! Im happy to hear that. Did you take any photos?
Your videos give me the inspiration I have been looking for for a while now after having been fixed on asian cuisine for a long time. Time to step up my game!
Hope you enjoy the journey, loads of great dishes to try.
I did it and everyone absolutely love it! I definitely will save this recipe, big big thank you! 😊
That crunchy rice you mention that you save as a “chef’s treat” reminds me of a sort of accidental version the tahdig every Iranian I’ve ever met prides themselves on, or bemoans their inability to get right.
Yeah Tahdig is insanely beautiful and a dish I want to do really soon. I think with Tahdig though, there is a key to removing the crispy rice without breaking it into tiny pieces.
Yeah, they do take a few extra steps to make it a more firm sort of...puck? At the bottom, that holds together when the dish is done and flipped over.
Yeah it's a thing of beauty and I could imagine myself taking the entire thing 🤣
@@MiddleEats Please teach us how to make perfect Tahdig. My dad does it to impress Iranian guests (which always works!) but I would love to be able to make it on demand :)
I'll definitely need to do some research and experiment to get it right. But when I do it will be fool proof.
This looks delicious. Can’t wait to try this recipe. Thanks for sharing.
Im late to see your channel but im glad, its very clear and easy to follow❤
Thanks!
Thanks to Chinese Cooking Demystified for recommending this channel. Your vids seem very informative and I look forward to learning some new things from you.

Just tried this for Christmas and was amazing. I made lamb and yet the rice was the best dish. Koodo to the recipe

Great Knowledge watching you cook with such passion and energy ♥
Greetings from Egypt and Dubai
Glad you found it useful and I hope you'll stick around for more videos. Thanks
Made this three times since first watching your video, and your recipe is my favorite one for Middle Eastern rice. So tasty! Thanks for sharing!
We just made this rice today with kabobs for Mother's day dinner. This recipe is a keeper. It was that yummy. Versatile, would pair up awesome with baked fish. We ordered the cardamom pods and dried limes off of Amazon. We used a green chili from our local grocery store. It's heat was that of a good jalapeno but thin walled, perfect for flavoring. Thank you for sharing this with us.
this is such an underrated channel
Thank you, I really appreciate your support!
This is the third time I make this rice. I'm vegetarian so I only use water as liquid. But the rice tastes Soooo GOOD. in fact more than Good!!!! Thanks again for this wonderful recipe 😋

Hey man. Popping by from Reddit where I lurk r/cooking.
So happy to see a Brit spreading the love of cooking from their motherland.
You have officially inspired me to record videos of my mums cooking, for my own use and as a family history.
If I can recommend something: zoom out a little to frame your face better in intro.
Thank you, a fellow British Asian.
Also, amazing channel name. How long did it take you to come up with it?
Good to have you here, I appreciate you following along. That's a nice idea, that way you'll be able to make her recipes perfectly.
I would but the kitchen is quite small and it can also be a bit messy, so sometime I have to crop in to hide the mess. I'll definitely keep it in mind though and try search for a solution!
I'm not quite sure, it just came to me a couple of years ago.
I am amazed you have so many followers now! I don't recall as many when I commented back then. Congrats my man :)
Just made this for my husband and I! So delicious !!!
You’re my favourite new chef!! I’m so excited to keep learning these incredible Egyptian & middle eastern dishes!

Chef's treat; I love your thinking!
making it this week to enjoy w falafel :) so excited!
Thanks!
This looks delicious and super simple. Thank you!
No problem at all, glad you enjoyed it!
Agreed. That powder, was that curry? Sometimes when I order Chinese food, I get a Curry Lo Mein and I like it.
It was turmeric. All ingredients are in the description box
Very nice and flavourful recipe for when you feel like extra! Thanks for the vid dude.
Usually im quite lazy so i just chuck tumeric, cardamom and black lemon into Asian rice cooker and called it a day XD
That's a great quick way to get all the flavor with less of the work. The vegetables aren't essential, but they add just a small amount of depth!
I'm making this now in my rice cooker. It should go great with my Turkish chicken !
Hope it turned out great!
Love the comentry voice and explanation. 👏🎓💰
Thanks Shan! Glad you are looking it!
Rice recipe looks delicious 😋
good video my man! Im about to try and find myself some of those dried limes
The dried limes really make this dish. They are so tangy that added salt is not needed.
Fantastic so easy and result is excellent thanks❤️
Great recipe, very easy to follow.
Thank you!
Middle eastern food is my latest favorite!
bro you are the best im a home cook myself and really enjoying all of your videos keep up the great work habibi
Glad you're liking them Mark! Be sure to send us some photos someday
Looks so good! I wonder if I could make this in a rice cooker.
You can...that's how I roll
Indonesian will love this! Yellow rice is a staple breakfast menu down here.
Oh yeah! You should check out Indonesian Nasi Tumpeng. It's variant of yellow rice of short grain rice. Instead of using stock to boils it, it uses coconut milk, turmeric, and long pandan leave.
The rice then shaped like a big cone in the middle and surrounded with various Indonesian side dishes.
It's the grand menu of Indonesian cuisine because it only serves for special celebration.
Fun fact: the tip of the yellow rice cone is only served to the most important person of the celebration.
Oh wow that does sound good, I love Indonesian food! The tip of the rice thing is so cool, we also do the same thing with lamb shanks in the middle east. If you cook a leg, the shank is reserved for the important guest!
Made and they turned out excellent
Glad to hear that! Hope you try some more of the recipes!
Made this and was absolutely amazing
This is absolutely the best rice I’ve ever made😩
Great stuff thanks 😊 👍
Wow I've seen Persian black limes many times in spice shops in Israel but never knew what they were for.
I'm going to make some rice right now, but no limes on hand...
Ive made this dish and i can say ITS AMAZING ! now i didnt have those dried limes but now i wonder how would it taste if i did . . . Does the citrus taste change because the limes have been dried for so long
I used have one middle eastern friend. Just one. Friendship didn’t work out. Thought about rekindling the friendship, just so I can east some good middle eastern food... thanks to you, I no longer have to lol
Lol, hope these make up for it
@@MiddleEats thank you sir!
Loved this recipe, thank you for sharing! A question: if you added more stock to the rice, wouldn't you end without any burnt bits on the bottom? In m country we also do rice in a similar way, and I found that adding extra water would remove the sticky rice on the bottom
Actually those crispy bits aren't burnt, they're fried and they're perfectly edible. It happens because the oil and butter sinks to the bottom of the pot and fries the bottom layer of rice. Adding more liquid would causes the rice to over absorb it and with basmati rice it can go mushy or doughy.
I quite enjoy the crispy bits, it's a fantastic texture!
Are there any lime substitues?
You could try dehydrating lime in your oven similar to how you make black garlic. Hopefully that will work fine. You may be able to order them online too.
will be making this next week!
i will try it,thank u
Love this guy
I like your recipe. Thanks ❤from🇷🇺
Wow I see Basmati at the Lebanese store near me and never knew what to do with it! Looks amazing!
It's a great kind of rice if you've never had it before. It goes great with saucy dishes!
@@MiddleEats how do basmati and jasmine rices differ?
I love this guy
Thank you!
Thank you! 😊
Clean rice
- chop brown onions into medium squares omelette style
- tomatoes diced into fine cubes
- optional green chilli into rings
- black limes
- sauté vegetables in 2 tbsp oil and butter each
- melt and add onions, then 3 minced garlic cloves, then add sliced green chillis and diced tomatoes
- 3 small black limes, 2 bay leaves, cloves and cardamom pods,
-1.5 teaspoons salt , 1/2 black pepper, 3/4 teaspoon turmeric, 4 tablespoons lemon juice , 200 ml stock until rice submerged .
- high heat, boil, then low simmer and 20 mins done
This recipe is incredible - many thanks. I made it before with basmati but now I want to try with whole grain brown rice (because that's all we have right now) - any tips or suggestions? The brown rice takes 40 minutes to cook. I am thinking about parcooking it for 20 minutes then adding it to the sauteed vegetables, but that would remove the toasting step. Is the toasting step important in this recipe like in risotto?
Glad to hear you liked it. The toasting step isn't 100% necessary, so if you are parcooking the rice then it will be fine.
Looks great
