How to Make Royal Icing (Plus, Coloring and Consistency Adjustments)

    Royal icing is, hands down, my preferred cookie decorating medium. In this video, I explain its merits vis a vis confectioners' icing (aka glaze) and rolled fondant. I also share my recipe, tips for coloring, and the key consistency adjustments required for various cookie decorating tasks. As they say, "consistency is king in cookie decorating!"

    NOTES ON CREAM OF TARTAR:
    Cream of tartar (aka potassium bitartrate) is a fine white acidic powder that can be found in the spice aisle of grocery stores throughout the United States. Cream of tartar acts as a stabilizer of egg foams and keeps white royal icing whiter longer. I also find that colors tend to set more consistently and stably when cream of tartar is used. However, if you can't find it, you can omit it from my recipe without any very serious complications :), or use double the amount of strained lemon juice or distilled white vinegar instead.
    NOTES ON STORING LEFTOVER ICING:
    First, I prefer to use icing on the day the color is mixed, as, for whatever reason, the color seems to set more stably (without spotting or mottling) if it hasn't sat too long or been stored overnight in the refrigerator. That said, I typically only make as much icing as I plan to use, so there is little waste. HOWEVER, if you end up with lots left over or feel compelled to make your icing in advance, and so must store it, then cover the surface flush with plastic wrap (to keep the icing from crusting) and then foil and store in the fridge. It should be fine there for a few days, though some separation may occur. Simply bring the icing to room temperature and re-beat it before use to restore its original consistency. You may find that the icing has dehydrated a bit, so you may also need to add a touch of water. Some people freeze their icing with success, but for all of the reasons noted above, I do not freeze mine.

    You taught this exactly the way I needed to hear it in order to learn. The tips on how the icing should fall from the spoon and how long it should take for the tracks to disappear... those are the kinds of things I find myself wondering about when I'm trying new techniques. Thank you so much!

    Ingredients:
    2 lbs of powdered sugar
    1/2 teaspoon of cream of tartar
    5 large egg whites
    I would recommend flavoring with vanilla essence if you dont have flavouring

      So I'm a chef. Kinda a chef kinda a student.
      So on Monday I was told i need to make a 100 Halloween themed cookies... for Tuesday. I never made royal icing before or know what the constancy must be. I had to make a quick batch with egg whites and icing sugar. 100 is a lot and they wanted a variety. I almost cried because i work at a 5 star hotel. So now I'm watching royal icing videos so I'll know better next time

    Julie, Thank you so much for being one of the few sugar artists on RUclips who actually gives a recipe for royal icing that uses egg whites. Trying to get other sugar artists to respond with an egg white recipe is like pulling teeth. It is as if there is some deep dark mystery and terror surrounding the use of egg whites! LOL! Albumin powders and meringue powders are pound for pound INSANELY expensive in a lot of areas but most people can find regular eggs or even pasteurized eggs for a fraction of the cost of the powders. I certainly understand that commercial bakers may have to adhere to a different standards due to business health codes but the everyday baker appreciates that you have included a recipe with good old fashioned egg whites. I find your channel quite informative and extremely useful due to clear,concise and complete instructions.

    hello! question: are you, or have you ever been a teacher? i loved this video. and not only because of the fact that i was interested in the content, but because you teach so well. your eloquence and sentence structure added to the amount of detail in one statement is bite-sized in a way, but also very comprehensible. *_LOL._* so... basically... i love that your teaching is like your baking. it's artful. precise. mindful of pitfalls in understanding and perception. so... funny how this realization also convinces me that your baking is delicious!!!

    It's does not taste like egg? I always make my royal icing with the powder one, but it not has that 'glue' feeling, but I'm worry about the taste or an after taste, thank you, you are a goddess 😘

    My mom isn't worried about ids consuming raw egg white which i ring surprising after all THOSE YEARS WE COULDN'T EAT CAKE BATER!!!(hyperventilating)

      Raw egg whites aren't bad, but raw flour is, so it's still not the best idea but I think flour still isn't THAT bad

    Usa Aquafaba (the liquid that chickpeas are soaked in)
    It works the same, cheap, humane, and NO RISK OF SALMONELLA! You can make it your self or buy a can or two of chickpeas (make sure they're salt free) and use the amount she said to use for the egg beaters

      mahoraner niall my husband is allergic to chick peas. I would never have thought to have him ask about a frosted cookie. Thanks for the info.

    Thanks very much for your great tutorial! I'm looking forward to learning as many tricks of trade as possible, as I love cake decorating and everything I do has been through personal experience. Learning to decorate biscuits is going to be a new challenge - hopefully an enjoyable one.

    Wow you teach so well! I made my cookies last night and it was too late for me to start on my icing. I pasteurized my own eggs and im rewatching your helpful videos so i can get it right lol. You also teach the way my culinary teacher did. Super patient and explained everything in a way that anyone can understand. Cant wait to watch your mote advanced videos.
