How to Top-Coat, Outline, and Flood Cookies

    Top-coating a cookie so that it's perfectly smooth and bubble-free is often easier said than done. In this video, I share my tips for achieving consistently smooth top coats, and explain when it makes sense to top-coat versus outline and flood. As extra gifts, I reveal a trick that prevents cratering in small, flooded spaces and step-by-step instructions for the needlepoint technique - essentially outlining and flooding taken to the extreme!

    NOTES ON STORING LEFTOVER ICING:
    First, I prefer to use icing on the day the color is mixed, as, for whatever reason, the color seems to set more stably (without spotting or mottling) if it hasn't sat too long or been stored overnight in the refrigerator. That said, I typically only make as much icing as I plan to use, so there is little waste. HOWEVER, if you end up with lots left over or feel compelled to make your icing in advance, and so must store it, then cover the surface flush with plastic wrap (to keep the icing from crusting) and then foil and store in the fridge. It should be fine there for a few days, though some separation may occur. Simply bring the icing to room temperature and re-beat it before use to restore its original consistency. You may find that the icing has dehydrated a bit, so you may also need to add a touch of water. Some people freeze their icing with success, but for all of the reasons noted above, I do not freeze mine.

    Despite 30 years of baking, I've never made royal icing before, nevermind this sort of decorating. Decided to make 5 dozing for an event, and turned to your videos for help. You're an awesome teacher, and I ended up with some beautiful cookies, so thank you so much!

    I went to RUclips thinking I'd love to make beautiful Christmas cookies I always see pictures of. I've watched your videos and am riveted. I don't really think I have the time to cultivate the talent needed to make these. I do enjoy watching your videos though. Thank you!

      You probably don't have the time to "cultivate the talent", but you might have time to make up 1 or 2 colors and play. I actually used store-bought flat cookies to start. Make a few bags, make a few textures, make a few mistakes and make a big mess. Refrigerate the leftover icing until the next time. Make some cookies for this Christmas and photograph them so you can compare them to the cookies from NEXT Christmas. It is really just dots and lines. Go for it.

    Cooking has always been a passion of mine, though a career in science was pushed on me by my family. Your extensive and immensely helpful videos have inspired me to go after my true passion despite what my family expects of me. So thanks a lot Julia! I was having some real trouble figuring out some of the techniques I see in bake shops and such. I have been in the kitchen making frosting, cookies and piping bags non-stop. I don't think my family is too happy, but they get to eat beautiful and delicious sweets, so it can't be too bad!

      ***** Okay, I'll start with that. Also, do you know if the royal icing used for outlining and flooding will melt or get liquidy if it's hot outside? I was planning on making some and sending them to some friends but it's been hot in the US and I don't want them to melt in the mail.

    I enjoy watching you decorate these cookies. You remind me of myself. I'm a florist and when I'm designing I don't always know what the final arrangement will look like. It just happens!!!! LOL I'm always looking for new ideas to keep my busy mind happy. ( and it keeps me off the streets!!!!heheheh ) You really take the time to give as much information as possible.
    You think i'd be done with baking after Christmas. But I see these cookies as art in sugar. So help the person that tries to eat one!

    I always wanted to know how to decorate my sugar cookies, seen a bunch of videos and came across this one. I'm SO glad I did. You're work is so intricate and beautiful.     My first time making Christmas cookies with royal icing was this year - did 2 batches - first batch the cookies were perfect but not so much the piping/flooding HA! This is a true art form - I am a guitarist of over 30 years and it seems very similar - I am hooked on learning this new art form!

    I've always enjoyed baking etc... and recently decided to try my hand at cookies and royal icing... your videos are amazing, and very informative... you make it look so easy.     Julia, I wish I could spend a whole Saturday (I don't know WHY Saturday??!!) with you, sitting in your kitchen, watching you decorate cookies! I would hope that I could just absorb as much of your technique and knowledge as possible. You are so amazing at teaching us and I can tell that you really hope that we can learn something! I think those European embroidery cookies are so beautiful! Last nite, I was just messing around, practicing piping lines and so forth, to practice. My problem, I'm afraid, is going to be that I don't have a very steady hand anymore! I started piping again after my doctor told me that I have a very rare type of arthritis in my hands. I want to keep them as limber as I can for as long as I can. However, I find that I am pretty shakey and I jerk when I get shooting pains! I am still gonna keep trying, but I'll tell you, your work is so lovely. Thanks so much for your time spent making your wonderful videos for us!! God bless...

      Thank you, my cookies did great, sometimes the dough will stick to the roller. That is the only incident. I did more do
      ugh yesterday and have it in the freezer. Thanks again. Today i will be decorating some cookies.

    I've already applied to chef school. I can't wait for the day i get to learn about this in school and the teacher to ask how i already know about everything xD. I'll be like well Julia taught me.
