By the way, just my 2¢, but my mom's Bosch mixer gets the sides, and they don't need to be scraped down. However, it's noisy in an irritating way and $$. Oh, and has an airtight cover.
Fun fact the reason it looks whiter after you beat your icing is because there's a lot of tiny air bubbles now in it and there reflecting the light more and makes it look whiter.
This is also the reason it gets thicker the more you beat it. You are incorporating more air into it, just like how you beat cream into whipped cream. And why buttercream becomes whiter the longer you beat it.

Tip: if you’re vegan (like me) or you don’t eat eggs, just add 1/4 cup aquafaba instead of meringue powder and your extract of choice and tsp of cream of tarter and whip until it foams up then add your icing sugar until a little fluffy and little stiff then remove and put in air tight container and add water to thin depending on what consistency you’re going for

Hi, I really hope you will respond and help me. I just tried a different recipe although it was similar to your except didn’t whip the merengue and water first. The icing dried hard as a rock. Is that also caused from over beating? I would like the icing to be a little softer.
Hi Grace, I've just started working through Happy Hearts and I am excited to get started. I'm in the UK and meringue powder is difficult to get and expensive. Do you think it would be ok to use Royal Icing Sugar - it's readily available in our supermarkets here. It has icing sugar, dried egg albumen, anti caking agent (tricalcium phosphate) and citric acid in it. The ingredients are not exactly the same. Thanks, Jane

Wait, overmixing causes a crumbly texture? I always thought my texture was off but every recipe I've used so far said to beat it for a really long time. I'll need to try this recipe.
@@thegracefulbaker I've seen recipe instructions that say to mix for up to ten minutes... Maybe there's also differences when using fresh egg whites but still. It never mattered if I used fresh or powdered, my royal icing usually turned matte and crumbly. Oh and idk if you've figured out the mixer situation since this video. But Kenwood definitely offers beaters with silicone flaps on the side. They work reasonably well to reduce the need to scrape the bowl. I'd be surprised if Kitchen Aid didn't have something similar in their line up of aftermarket parts.

Hello I just watched this and I have a bit of confusion, I currently make horse cookies with royal icing do you have to include lemon juice or can it be something else? I usually just use powder sugar and egg whites with peppermint ext for the horses to like the mint. HELP please

Mine was way too lemony and not in a good way. So I’m going to try the alternate vanilla option. I also bought the class. Next batch I will just use the 1/2 cup with no additional tablespoons. I did not like the flavor at all.

Try Meyer lemons. They are lemon/mandarin orange. Not as tart.

When you beat the icing, some air is incorporated that gives it more volume & a lighter color the same way as pulling candy.

Hello I just watched this and I have a bit of confusion, I currently make horse cookies with royal icing do you have to include lemon juice or can it be something else? I usually just use powder sugar and egg whites with peppermint ext for the horses to like the mint. HELP please
Do you think this can be made with aquafaba as a sub for the meringue powder/some of the liquid? [To make a vegan version of the icing]

Mine was way too lemony and not in a good way. So I’m going to try the alternate vanilla option. I also bought the class. Next batch I will just use the 1/2 cup with no additional tablespoons. I did not like the flavor at all.
